SLOW-COOKED RED WINE BEEF STEW



Slow-Cooked Red Wine Beef Stew image

Red wine and beef are such an elemental combination that it's worth mastering the technique for a great stew: Sauté the ingredients quickly to caramelize and reduce, then cook through very slowly (preferably in a low oven, but see our Notes on how to cook in the slow cooker or pressure cooker). You can use any wine you like, since it will be cooked for a long time: the alcohol, acidity and fruitiness that make wine lovely in the glass are not so nice in the bowl; they have to be tamed by simmering. But the tangy, syrupy taste they leave behind is an ideal counterpoint to red meat. Celery is optional because some don't like it, but note that it's not eaten: It just provides a green flavor note alongside the sweet carrots and earthy potatoes.

3 1/2 to 4 pounds well-marbled beef stew meat, preferably chuck, cut into large (2-by-2 1/2-inch) pieces
2 large sprigs fresh thyme
2 bay leaves
About a dozen juniper berries
1/2 bottle red wine (not sweet)
Salt and freshly ground black pepper
4 garlic cloves (1 smashed and peeled, 3 minced)
4 tablespoons vegetable oil
3 stalks celery (optional)
3 large carrots
2 onions
1 large, starchy potato, such as Idaho
3 ounces pancetta (or French ventrèche), diced small (optional)
3 tablespoons olive oil
3 tablespoons tomato paste
Bouquet garni (2 sprigs fresh thyme, 2 sprigs fresh rosemary or parsley, 2 bay leaves, 6 juniper berries, 4 whole cloves, 1 teaspoon dried orange peel, wrapped in cheesecloth and tied)
1/2 bottle red wine
Chicken broth, as needed
3 tablespoons chopped parsley
1 tablespoon chopped fresh thyme leaves (or use additional parsley), for garnish

Steps:

  • Marinate the meat: In a large bowl, combine all the marinade ingredients. Mix well and refrigerate in the bowl or a thick sealable plastic bag for at least 2 hours or up to 1 day.
  • When ready to cook, strain off the marinade and reserve for cooking. Drain meat on paper towels and pat until very dry. Sprinkle with salt and pepper.
  • Place a large, heavy pot with a tight-fitting lid on the stove and rub the bottom with the smashed, peeled clove of garlic, until coated with the garlic's oils. Discard garlic.
  • Add 2 tablespoons vegetable oil, and cook over medium heat until shimmering. Add half the meat and brown gently on both sides while preparing the vegetables. There's no need for a hard crust to form; a little browning is all that's required. When browned, remove meat to paper towels to drain. Repeat with remaining 2 tablespoons oil and meat. Return all the browned, drained meat to the pot.
  • Meanwhile, cut the celery (if using) and carrots into large chunks. Peel and chop the onions. Peel and dice the potato.
  • Heat oven to 250 degrees. In a separate skillet, heat pancetta (if using) and olive oil over low heat. Cook gently until the fat renders. When the pork fat is running, add onions, celery, carrot, onion and minced garlic. (If not using pancetta, simply heat olive oil and add vegetables and garlic.) Cook gently, stirring, until softened and golden, about 10 minutes. Raise the heat, add tomato paste and cook, stirring, until fragrant and sizzling. Add the bouquet garni, reserved marinade and potato. Let bubble fiercely for 5 to 10 minutes, until liquid is thickened and syrupy. Add mixture, once cooked, to the pot with the meat.
  • Pour in the wine and, if needed, enough broth to just cover the ingredients. Stir to combine. Bring to a simmer, cover tightly and bake 4 to 5 hours, until the meat is soft enough to eat with a spoon and the sauce is rich and thick. After 4 hours, if liquid seems thin, uncover pot for the rest of the cooking.
  • When done, let cool slightly, uncovered. Remove and discard celery (if using) and bouquet garni. To thicken the stew, use a fork to mash some of the carrots and potatoes into the liquid; or, remove and purée them, then add back in. Taste and adjust the seasonings with salt and lots of freshly ground pepper.
  • Reheat and serve immediately, or let cool and refrigerate. Serve within 3 days; the flavor will only improve. Garnish each serving with a sprinkling of chopped thyme and parsley.

1 small onion, chopped
2 celery ribs, chopped
1 can kernel corn, drained
1 package hot dog, cut into bite sized pieces
chili powder, to taste
2 cans tomato soup, undiluted

Steps:

  • Cook pasta and drain.
  • Fry onion, celery and wieners, until done.
  • Stir in tomato soup, 1 can of water, and chili powder.
  • Heat until mixture bubbles.
  • Place pasta and corn into a large bowl.
  • Pour hot mixture over top and mix well.
  • My kids love this recipe and it makes a very fast supper.

1 medium onion, diced
2 beef hot dogs (there would be 8 in a 1lb pkg)
1 (10 1/2 ounce) can vegetable soup, condensed
1 (10 1/2 ounce) can water
1/3 cup instant rice
1/4 teaspoon black pepper
1/4 cup fresh parsley, minced

Steps:

  • Preheat oven to 350°F.
  • Dice onion and add to a 2 qt casserole dish that has a lid.
  • Slice weiners into 1/2 inch thick coins and add to onion.
  • Mix soup into weiners & onion.
  • Add water and stir until soup is dissolved.
  • Add rice, black pepper, parsley & stir again.
  • Bake for 10 minutes with lid off.
  • Remove from oven & stir.
  • Bake for an additional 25-35 minutes with lid on.

1/4 cup all-purpose flour
1/4 teaspoon freshly ground pepper
1 pound beef stewing meat, trimmed and cut into inch cubes
5 teaspoons vegetable oil
2 tablespoons red wine vinegar
1 cup red wine
3 1/2 cups beef broth, homemade or low-sodium canned
2 bay leaves
1 medium onion, peeled and chopped
5 medium carrots, peeled and cut into 1/4-inch rounds
2 large baking potatoes, peeled and cut into 3/4-inch cubes
2 teaspoons salt

Steps:

  • Combine the flour and pepper in a bowl, add the beef and toss to coat well. Heat 3 teaspoons of the oil in a large pot. Add the beef a few pieces at a time; do not overcrowd. Cook, turning the pieces until beef is browned on all sides, about 5 minutes per batch; add more oil as needed between batches.
  • Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer.
  • Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.

1/4 cup butter, cubed
1 medium onion, finely chopped
2 tablespoons Worcestershire sauce
2 tablespoons paprika
2 tablespoons chili powder
3 teaspoons ground cumin

1 pound ground beef
1/4 cup water
8 hot dogs
8 hot dog buns, split and warmed

Steps:

  • In a large skillet, heat butter over medium heat. Add onion; cook and stir 3-4 minutes or until tender. Stir in Worcestershire sauce and seasonings. Add beef; cook 6-8 minutes or until no longer pink, breaking into crumbles. Stir in water; bring to a boil. Reduce heat; simmer, uncovered, 30 minutes., In a large skillet, cook hot dogs over medium heat 8-10 minutes or until lightly browned, turning occasionally. This recipe belonged to my husband late cousin. She didn't like to cook and when ever you were invited to dinner this is what she prepared. I think she got this recipe when she was in girl scouts. my husband likes it so I thought I would post it.

2 tablespoon(s) butter, margarine, or bacon fat
2 - green peppers, sliced
2 medium onions
6 medium potatoes
1 pound(s) hot dogs
1 (16 oz.) can(s) cut green beans
3 tablespoon(s) flour
- salt, pepper, mustard, ketchup

Steps:

  • Melt butter in pot over low heat.
  • Peel onions and potatoes and wash peppers.
  • Cut vegetables into small pieces. Put onions and peppers in pot and cook until onions look clear.
  • Put potatoes and 2 cups water in pot. Cover and boil 10 minutes.
  • Cut hot dogs into chunksand put into pot, add green beans (juice too).
  • Mix flour in a little water to make a smooth paste and pour into stew.
  • Add salt and pepper to taste. Cover pot and boil gently for 10 minutes.
  • Flavor with mustard or ketchup. Serves 6.

AUTHENTIC VIENNESE GOULASH (WIENER FIAKERGULASCH)

While goulash originated in Hungary, Vienna made it it's own. Dating back to the Austro-Hungarian Monarchy, goulash became a staple of Austrian and particularly Viennese cuisine and can be found in any gasthaus throughout Austria. The secret to get this beautiful dark color is to saute the onions until very dark before adding the meat. Use hungarian paprika but don't let it burn, it will get bitter. 1 lb onion, diced
1/4 cup oil or 1/4 cup lard
1 tablespoon Hungarian paprika, hot if desired

1 tablespoon caraway seed
1 tablespoon dried marjoram
2 teaspoons flour, for slurry
1 teaspoon salt (to taste)

Steps:

  • Heat oil or lard in a heavy pot. Add onions and garlic and under constant stirring saute until very dark. Add salt.
  • Add meat in batches, brown on all sides before adding next batch.Do not let the meat steam, raise the heat and add oil if necessary.
  • Saute meat until browned on all sides, add paprika, stir until fragrant but watch out so it doesn't burn.
  • Add broth, caraway seeds, majoram and tomato paste and simmer until meat is tender. Depending on the cut, this can take up to 2 hours.If it gets too dry, add some broth.
  • When the meat is tender, make a slurry with the flour and a few ts of water and add little by little, checking on the thickness of the sauce.
  • Simmer until the floury taste is gone and the sauce has the perfect consistency.
  • Enjoy with spaetzle, dumplings or noodles.
