Weight Watchers Calavacitas (Mexican Succotash) 1 Point Per Cup image

A wonderful low point edition to any meal, but we love it with Weight Watchers Tostadas or any other Mexican food.

1 tablespoon vegetable oil
1 cup corn (fresh or frozen)
4 zucchini
1 large tomatoes
1 teaspoon oregano
1/4 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon garlic powder

Steps:

  • In large fry pan heat oil.
  • Add corn and cook until it browns a little. The carmelizing of the corn makes a difference in the taste.
  • Quarter zucchini lengthwise and chop into small pieces.
  • Chop tomato in small pieces.
  • Once corn is nicely browned, add zucchini, tomato and spices.
  • Cover with lid, reduce heat, and cook just until zucchini begins to become tender.
