I love trying to use authentic Australian herbs & spices in dishes. This was found on scentofgreen bananas.

1/3 cup icing sugar, sifted
250 g unsalted butter, softened
1/2 cup rice flour
1 1/2 cups plain flour (all-purpose)
1 tablespoon wattleseed
1 pinch salt

Steps:

  • Beat the sugar and butter together until just combined. in another bowl, sift together the dry ingredients (except the wattle seeds), add the wattle seeds, then mix into the butter and sugar mix until a dough forms.
  • Mold into a log 6cm or 2 1/2 inches in diameter, wrap in cling film and refrigerate at least half an hour.
  • Preheat oven to 180.C (350F). cut the log into thin slices, placed on a greased or lined baking sheet and bake for 15-18 minutes, until golden brown. cool on a wire rack.

3 cups self raising flour
1 1/2 teaspoons salt
60 g butter
30 g ground roasted wattleseed
1 cup milk

Steps:

  • Sift flour and rub in butter. Then add salt and wattle seed.
  • Make a well in the centre and pour in the milk. Stir until combined.
  • Knead for a few minutes and mould into a flat ball.
  • Cut 2 slits in the top, brush with a little milk and bake in a preheated oven (200C) for 30 minutes.

wattleseed and chocolate flavoured mousse. Wattleseed is a native Australian seed from the acacia tree. It has a coffee-like aroma and blends well with chocolate. This really is an easy recipe. This recipe does contain raw eggs. Prep time does not include refrigeration time

125 g dark chocolate
50 g unsalted butter
70 ml orange juice
2 teaspoons roasted and ground wattleseed
2 tablespoons cocoa powder
2 egg yolks
3 teaspoons Cointreau liqueur or 3 teaspoons orange liqueur
100 ml thickened cream
3 egg whites
1 1/2 tablespoons caster sugar
250 ml thickened cream
2 teaspoons roasted and ground wattleseed
1 tablespoon caster sugar (superfine sugar)

Steps:

  • Place chocolate, butter and juice in a microwave suitable bowl. Microwave until just melted.
  • Whisk in the wattleseed and cocoa powder.
  • Add the 2 egg yolks and the liqueur. Set aside to cool.
  • Meanwhile, in another bowl, beat the cream until soft peaks form - set aside.
  • In another bowl, beat the egg whites until soft peaks form, then add the sugar and beat until smooth and glossy.
  • Fold the whites into the chocolate mixture.
  • Next, fold in the cream to the chocolate mixture.
  • Transfer to a large serving bowl or individual bowls, and refrigerate.
  • For the cream:WHixk all ingredients until thick. Refrigerate until ready to serve. The cream is better after a few hours as this will allow the flavours to blend. Serve the cream with the mousse.

  • Mix together the flour and salt, and then form into two equal flour wells. Add the wattle seed into one well, along with the water and oil. Bring it together into a ball, and then knead for 10 minutes before covering with cling wrap. Repeat with the river mint gum and the remaining dough ingredients, and then similarly seal in cling wrap. Leave both to rest for 30 minutes, away from heat and sunlight.
  • Cut each ball of dough in half, and roll them out into long, very thin sausages, no thicker than a pencil. Cover any dough that you’re not working on to prevent it drying out. Chop the sausages into small pea-sized pieces, shape into balls, and then use a cavarola (or gnocchi board), the back of a grater, or the underside of a fork to roll into malloreddus. The technique is to roll each piece away from yourself, providing just enough downwards pressure to imprint the dough as it folds over itself. Transfer to lightly-floured baking-paper lined trays, and refrigerate for up to one week, uncovered.
  • To make the pesto, add all ingredients into the mortar and pestle and pound until mostly smooth with some chunks, or to your desired consistency. For a greener colour, finely chop the leafy ingredients beforehand.
  • Drop the malloreddus into boiling water, and cook for 4-5 minutes or until al dente. Note that the larger you make your pasta, the longer they will take to cook (up to 20 minutes for grape-sized balls). You know they’re ready if still firm but showing no white dough when cut into. Drain, retaining a little of the pasta water, and toss into the pesto. If needed, add a little of the water back in to help the pesto and pasta emulsify. Serve with cracked mountain pepper berries.
