WARM CHICKEN AND CHORIZO SALAD
Steps:
- Heat a nonstick skillet or stove-top grill pan, add the chorizo slices or chunks, and sauté gently on all sides until the juices run and the edges are slightly crisp. Set aside.
- Mix the vinaigrette ingredients together in a small bowl or pitcher. Use some of the mixture to brush the zucchini halves, then add them to the still-hot pan and cook for 5 minutes on each side or until hot and golden.
- Put the chicken into a large salad bowl and add the lettuce leaves and olives. Drizzle over the remaining vinaigrette, then add the chorizo and its juices, and the cilantro or parsley. Toss well, then serve immediately with garlic bread, toasted ciabatta, or warmed focaccia.

- With a sharp knife, make slits in the chicken thighs on both sides. Rub with the olive oil, chipotle paste and juice of 1 lime. Cover and chill for 2 hours or overnight. Bring to room temperature before cooking.
- For the salad, toast the quinoa in a dry frying pan for 2 minutes, then put it in a saucepan and cover with water. Bring to the boil, reduce the heat a little, cover with the lid and cook for 15 minutes. Halve and stone the avocados, cut lengthways into quarters, then peel and slice. Season and squeeze over the juice of 1 lime.
- Heat a griddle pan to really hot, add the chicken and sizzle for 2 minutes, turn over and cook for 2 minutes more. Reduce the heat and cook for 4-5 minutes, turning once, until cooked. Turn off the heat, slice the chicken and keep warm, covered, on the griddle pan. Cut the chorizo into rounds, then sauté in the olive oil in a pan for about 4 minutes.
- Fluff up the quinoa with a fork, season and put into a large flat serving dish. Gently mix in the chorizo, chicken, baby spinach, spring onions, coriander, avocado, the juice of the remaining 2 limes, the white balsamic and the extra virgin olive oil. Dot the tomatoes in among everything else.

- PREPARE ROAST VEGGIES Preheat oven to 190ºC (375ºF) fan bake and line a large oven tray with baking paper. Peel kumara and pumpkin and dice into small 1-2cm (0.5in) cubes. Place on prepared tray, drizzle with oil and season with salt and pepper. Toss to coat, using your hands, then arrange in a single layer. Roast for 30-35 minutes, or until browned around the edges.
- MAKE DRESSING Place oil, vinegar, honey and mustard in a jar. Shake well to combine. Season with salt and pepper to taste.
- PREPARE SALAD Dice avocado. Roughly chop feta. Divide salad greens between individual serving plates.
- COOK CHICKEN AND CHORIZO Dice chicken into 1-2cm (0.5in) cubes and chorizo into small pieces. Season chicken well with salt and pepper. Heat oil in a large non-stick frying pan on medium-high. Add chicken and cook, stirring occasionally, until golden brown and virtually cooked through. Add chorizo and cook for a couple of minutes, until browned.
