BROWNIE PUDDING
My Brownie Pudding is a rich chocolate dessert with a crispy, crackly crust and a dense, spoon-able center. It's like a deep-dish flourless chocolate cake!

- Preheat oven to 325F and butter an 9x12 inch oval baker (2 qt) You can also use an 8x8 baking dish. Make sure you have a larger baking dish or roasting pain handy that your baker will fit into for making a water bath.
- Melt the butter on the stovetop or in the microwave. Set aside, and allow it to cool.
- In a small bowl, mix the cocoa powder, flour, and salt. Whisk or sift it well to get out any lumps in the flour or cocoa powder. Set aside.
- In a stand mixer with the paddle attachment, or with a pair of electric beaters, beat the eggs and the sugar together for 5-10 minutes on medium-high speed. You want the mixture to be very pale yellow and thick. I went for about 7 minutes.
- Turn the mixer speed down to low, and slowly add the vanilla bean paste, and then the cocoa powder mixture.
- Then, in a steady stream, add the melted butter. When everything is just mixed together, turn off the mixer.
- Give the batter one last mix by hand, scraping the sides and bottom of the bowl to make sure everything is well incorporated. Pour the batter into your prepared baking dish.
- Place your water bath pan on your oven rack. Place your baking dish inside it, and then add hot water (from your tap, or heated in a kettle) so that it comes up about halfway up the sides of the brownie baking dish.
- Bake for 1 hour. The edges will be firm, but the center will still be soft, and it's best to under-bake rather than over do it with this cake. Remove from the oven and allow to cool at least partially before serving. Can be served warm, at room temp, or cold, however you like it! It will be the goo-iest and most pudding-like while it's still warm.
BROWNIE FUDGE PUDDING RECIPE BY TASTY

- Preheat the oven to 350˚F (180°C).
- Whisk the brown sugar and butter in a bowl.
- Whisk in the egg and vanilla.
- Fold in the flour, cocoa powder, baking soda, and salt.
- Stir in the chocolate chips.
- Divide the batter between 4 ramekins, or any other oven-proof pots you may have lying around in the kitchen.
- Bake for 15 minutes, or until cooked but still fudgey inside.
- Serve with whipped cream.

BROWNIE PUDDING
Steps:
- Preheat the oven to 325 degrees F. Lightly butter a 2-quart (9 by 12 by 2-inch) oval baking dish. Melt the 1/2 pound of butter and set aside to cool.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs and sugar on medium-high speed for 5 to 10 minutes, until very thick and light yellow. Meanwhile, sift the cocoa powder and flour together and set aside.
- When the egg and sugar mixture is ready, reduce the speed to low and add the vanilla seeds, framboise, if using, and the cocoa powder and flour mixture. Mix only until combined. With mixer still on low, slowly pour in the cooled butter and mix again just until combined.
- Pour the brownie mixture into the prepared dish and place it in a larger baking pan. Add enough of the hottest tap water to the pan to come halfway up the side of the dish and bake for exactly 1 hour. A cake tester inserted 2 inches from the side will come out 3/4 clean. The center will appear very under-baked; this dessert is between a brownie and a pudding.
- Allow to cool and serve with vanilla ice cream.
WARM BROWNIE CUPS
This pudding-like dessert makes a sweet ending to any dinner.

- Heat oven to 350 degrees. Place a baking pan half full of water in oven.
- Bring a saucepan of water to barely simmering. Place chocolate and butter in a heatproof bowl. Place over water and stir until almost melted. Remove bowl from heat and let cool, stirring occasionally.
- Sift together twice all the dry ingredients except sugar. Set aside.
- Beat eggs and vanilla until foamy and light. Add sugar and beat until fluffy. Stir in chocolate-butter mixture. Fold in dry ingredients. Pour into five 8-ounce custard cups, filling each nearly to rim. Place in baking pan; water should come halfway up sides of cups.
- Bake for 30 minutes or until brownies have risen to just above the rim and tops are cracked. They should be firm to the touch. Let cool for 5 minutes, then serve dusted with confectioners' sugar.
WARM WALNUT BROWNIE PUDDING

- For syrup:
- Combine first 4 ingredients in small saucepan. Gradually whisk in 1 2/3 cups warm water and vanilla. Bring to simmer over low heat, whisking often. (Can be made 2 days ahead. Cover and refrigerate. Rewarm over low heat before continuing.)
- For brownie:
- Preheat oven to 325°F. Grease 8 x 8 x 2-inch baking pan with shortening. Whisk first 5 ingredients in large bowl to blend. Mix in buttermilk, butter and vanilla, then walnuts (batter will be thick). Spread in prepared pan. Pour syrup over brownie layer.
- Bake brownie until sauce bubbles around sides and brownie layer has risen almost to top of pan and feels firm to touch, about 40 minutes. Transfer to rack and cool 10 minutes.
- Cut dessert into squares. Serve warm, accompanied by whipped cream.

- Combine the brownie mix, oil, eggs and 1/4 cup water in a medium bowl. mix well about 1 min. divide the batter evenly between the prepared baking dishes

- Preheat the oven to 350°F. Into a bowl sift together the flour, 1/3 cup of the cocoa powder, the baking powder, and the salt. BROWNIE PUDDING
From Company's Coming Chocolate. A good rich self-saucing dessert. This is the best, yummiest, easiest dessert ever. Can be whipped up in under ten minutes. And it uses common ingredients that I always have on hand!

- Mix the flour, sugar, cocoa, baking powder and salt in a medium bowl.
- Add milk, butter vanilla and nuts. Turn into ungreased 2 quart baking dish. Smooth on top.
- Combine brown sugar and 1/4 cup cocoa in a small bowl. Mix well. Sprinkle over top of batter.
- Pour water on top. To avoid making wells in the batter either pour the water slowly, or pour it onto a spoon held over pudding, allowing it to run off gently.
- Bake in 350 degree oven for about 40 minutes. Top will be firm. Batter will rise and there will be a pudding-type sauce at the bottom.
- Serve warm. This is really delicious with ice cream.

- 1. Preheat oven to 350 degrees. Grease a 9-inch square baking dish.
- 2. Combine flour, granulated sugar, baking powder, baking soda, salt and 1/3 cup cocoa in a medium bowl.
