BREAD MACHINE CRANBERRY BREAD (WITH WALNUTS)

- Bread machine settings - 1.5 lb, light color and "basic" bread setting.
- Unplug the bread machine and then remove the bread pan from the bread machine.
- Add the milk & softened butter into the bread pan and then add the other ingredients (except the dried cranberries & chopped walnuts - they are added later).
- Place the bread machine yeast in last and the yeast should not touch the liquid or salt (until the bread machine is turned on and the ingredients start to be mixed together). Some people like to make a small "divot" on top of the flour in order to hold the yeast in one spot before the machine starts.
- Put the bread pan (with ingredients) back into the bread machine, close the bread machine lid and then plug in the bread machine.
- Enter the correct settings (1.5 lb, light color & basic bread) and press the "start" button.
- When the bread machine's first mixing cycle has stopped and before the second (& final) mixing cycle starts, you should add the dried cranberries & chopped walnuts. FYI - See your bread machine manual on when & how to add fruits & nuts when using your bread machine. Always follow the manufacturer instructions for your specific bread machine.
- When the bread machine has finished baking the bread, unplug the bread machine.
- Remove the bread pan from the unplugged bread machine. Use oven mitts when removing the bread machine container (bread pan) as it will be very hot!
- Take the bread out of the bread pan and place the bread on a wire cooling rack. Wear oven mitts.
- After removing the bread, don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle will be very hot coming out of the bread machine. Or wait until the bread is completely cooled and then remove the mixing paddle.

WALNUT AND SULTANA BREAD MACHINE BREAD
This breakfast loaf can be baked overnight in the bread machine. It goes well with coffee. The recipe is based loosly on the Apricot and Almond Loaf in the Panasonic SD255 manual. It requires machine with a nut dispenser.

- Lightly crush the walnuts into sultana sized pieces using a pestle and mortar. If you don't have a pestle and mortar, wrap the walnuts in a tea towel and crush using the base of the walnut oil bottle.
- Insert the kneading blade into the bread pan so that it faces north-south dividing the pan into left and right halves.
- Add the yeast to the far left of the bread pan and cover with the flour. Leave the right of the pan as empty as possible. Add the sugar and milk powder on top of the flour.
- Add the oil to the right of the bread pan.
- Insert the bread pan in the machine.
- Dissolve the salt in the water and add both slowly to the right of the bread pan. The aim is to keep the sugar and milk powder dry.
- Add the sultanas and walnuts to the nut dispenser.
- Set a basic raisin loaf, medium size, medium crust.

SULTANA LOAF

- Preheat the oven to 180C Bake - 355F
- Line a loaf tin with baking paper and set aside
- In a medium sauce pan add the Sultanas (or raisins), butter, baking soda and boiling water, bring to the boil and cook for 3-5 minutes stirring occasionally
- Remove from the heat, pour this sultana mixture into a medium bowl and allow it to cool for 5-10 minutes, feel free to pop this in the refrigerator
- Add to the sultana mixture the sugar, flour, baking powder, cinnamon and salt and stir through
- Then add a well beaten egg, golden syrup and vanilla.
- Combine all of these ingredients together until no flour remains visible.
- Pour this into the prepared loaf tin and bake for one hour. This loaf is cooked when a skewer or knife comes out clean, with only moist crumbs remaining but no batter
- It is ok if the top cracks - see notes above
- Remove from the oven once baked and allow the loaf to cool for 20 minutes before removing from the pan and cooling on a wire rack
- Once cold store in an airtight container for up to 4 days.
- This loaf can also be frozen, either as is or already sliced.
- Serve as is or with butter or margarine.
- Enjoy!

WALNUT BREAD
The affinity of walnuts and whole wheat plays out well in this fairly simple loaf. I ramped up the walnut component by mixing in toasted pieces, including ground nuts along with the flour and even adding some walnut oil to the dough. Making this bread is straightforward enough for the home cook to master, and using a mere pinch of yeast will give the dough a nice rise. This dough would also welcome raisins, olives or pieces of figs along with the walnuts. I have found that the best way to introduce ingredients like these is to knead them in after the first rise.

- Toast walnuts in an oven or under the broiler. Set aside to cool.
- Place yeast in a large mixing bowl. Mix salt into 2 cups (473 milliliters) lukewarm water. Stir into yeast. Stir in maple syrup and 2 tablespoons oil.
- Measure 1 cup of the toasted walnuts, place in a food processor with 2 tablespoons of the whole-wheat flour and process until finely ground. Add to bowl along with remaining whole-wheat flour. Stir with a wooden spoon.
- Add bread flour 1/2 cup at a time until dough forms and leaves the sides of the bowl. (At this point you're better off mixing with your hands.) Turn dough out onto a floured work surface. Continue adding bread flour, kneading as you go, until you have a dough that's a bit on the soft side, only slightly sticky and easy to handle.
- Clean out your bowl, coat it with 1 tablespoon oil, and place dough back into the bowl, turning it so it's oiled all over. Cover with a cloth and set aside to rise until doubled, about 1 1/2 hours.
- Punch the dough down, add remaining toasted walnuts and lightly knead them into the dough. Dust a spacious baking sheet with cornmeal. Divide the dough in half, shape into 2 balls and place on the baking sheet. Cover loosely and let rise for an hour.
- Place the oven rack in the lowest position and heat oven to 450 degrees. Slash the tops of the breads with a razor or a lame (a baker's blade). Do not be tentative about this step; your slashes should be a good half-inch deep, done with a firm, even hand.
- Place the baking sheet in the oven. Throw a handful of ice cubes on the floor of the oven to create steam. Bake 20 minutes. By this time the breads should be a nice honey-brown. Brush them with remaining 1 tablespoon oil, reduce heat to 350 degrees, add more ice cubes and bake about 25 minutes longer, until the breads are well browned and sound hollow when tapped. Allow to cool at least 1 hour before cutting.
