GARLIC PARMESAN PULL-APART ROLLS
Steps:
- Let the dough rise again: Let the dough rise once more, covered, about 45 minutes to 1 hour, until the rolls double in size. To check if the dough has proofed, press your fingertip into the dough gently to make an indent-the indent should slowly fill back up halfway. If the dent does not fill back up, the dough is under proofed and needs more time.

EASY PULL-APART GARLIC ROLLS
These Easy Pull-Apart Garlic Rolls are quick, a perfect way to use up leftover dinner rolls, and are a fabulous alternative to traditional garlic bread.

- Preheat oven to 350 degrees F. Line a 9x13-inch baking pan with a large piece of aluminum foil so that there is at six inches of overhang on both sides.
- Cut a cross-hatch pattern into the tops of the dinner rolls, about 1-inch apart, stopping about ½-inch from the bottom of the roll so that you do not cut the entire way through. Place the rolls into the prepared pan (it's okay if you have to smush them in there!)
- In a small bowl, mix together the melted butter, garlic, salt and parsley. Pry open the slits and drizzle some of the melted butter mixture in between, trying to divide it evenly between all of the rolls; then, sprinkle the Parmesan cheese into all of the slits.
- Pull the foil overhangs up and seal it closed. Bake for 15 minutes, then open the foil and bake for an additional 5 minutes, until the tops of the rolls are lightly browned and the Parmesan cheese has melted. Serve immediately.

WALL STREET GARLIC ROLLS
My husband used to be addicted to the garlic rolls from a local pizza parlor. When we moved an hour away, I had to come up with my own version to keep him happy. Whatever dough you choose to use can be varied. Some grocery stores and pizza parlors sell uncooked dough for $1-$2. I've also asked the bakery at our local Albertson's for a loaf of frozen french bread dough. They will sell it for the same price as the already baked ones. We use Buck Gardner brand Garlic Parmesan Seasoning which can be purchased online, but I'm sure there are other brands at the grocery store. Prep time includes time for dough to rise.

Steps:
- Thaw dough and let rise at room temperature, about 2-3 hours depending on the temperature.
- In small dish mix oil, garlic and garlic salt together. Let flavors blend while dough is rising.
- Tear off golf ball sized pieces of dough and brush with garlic-oil mixture.
- Sprinkle each piece with garlic parmesan seasoning.
- Bake at 350 degrees for 15-20 minutes.
- Place hot rolls in bowl and drizzle melted butter over top. Sprinkle with parmesan cheese and toss to coat. Serve warm.

- Combine 1-1/2 cups flour, undissolved yeast, sugar, salt and garlic powder in a large mixer bowl. Heat water, milk and butter until very warm (120 degrees F to 130 degrees F). Add to dry ingredients and beat for 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough additional flour to make a soft dough.
- Cover and let dough rest 10 minutes in bowl.
- Portion dough evenly into 12 to 15 greased muffin cups (2-1/2 x 1-1/4 inches).
- Tip: Use an ice cream scoop to make portioning easier. Cover; let rise in warm, draft free place until doubled in bulk, about 35 minutes.
- Combine egg white with 1 tablespoon water. Carefully brush tops of rolls with egg mixture; sprinkle with cheese. Bake at 375 degrees F for 15 to 18 minutes, or until lightly browned on top. Remove from pans and cool on wire rack.
