I make this delicious caramel all the time for hubby. He's gotta have it on his ice cream. Easy, just make sure you don't burn the sugar on the first step! Recipe can easily be doubled. Enjoy!

Number Of Ingredients 5

1 cup(s) sugar
6 tablespoon(s) butter
1/2 cup(s) heavy cream
1/2 teaspoon(s) vanilla extract
Pinch - sea salt

Steps:

  • In a heavy bottom 2 quart sauce pan, add sugar. Cook over medium high heat and when sugar starts melting, start whisking sugar. You will notice some lumping up of sugar, just keep whisking until sugar becomes an amber color. Be very careful not to burn.
  • Add butter and whisk until melted and combined, it will bubble up some.
  • Turn off burner and whisk in the cream, thoroughly. Stir in 1/2 tsp vanilla and salt. Cool for 10 - 15 minutes, then pour into a hair or lidded container. Refrigerate, will keep for 3 weeks.
  • Delicious over ice cream or cheesecake!

1/4 cup all-purpose flour
3 tablespoons sugar
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon kosher salt
2 tablespoons heavy cream
2 tablespoons vegetable oil
2 (heaping) tablespoons 3-Ingredient Microwave Caramel Sauce or storebought caramel sauce, divided
Vanilla ice cream (optional; for serving)
1 teaspoon coarsely chopped roasted, salted peanuts
Special Equipment
A 12-ounce microwave-safe mug (preferably thin-walled) or deep bowl

Steps:

  • Mix flour, sugar, cocoa powder, baking powder, and salt in mug. Add cream, oil, and 3 Tbsp. water and mix until smooth. Using a spoon, make a well in the center; spoon half of the caramel sauce into well. Microwave on high 60 seconds. Carefully remove from microwave. Top with ice cream (if desired), peanuts, and remaining caramel sauce. Serve immediately.

Number Of Ingredients 6

3/4 cup heavy whipping cream
1/2 cup (3 1/2 ounces) granulated sugar
2 tablespoons water
1 teaspoon honey
4 tablespoons (2 ounces, 1/2 stick) unsalted butter, softened
1/2 teaspoon pure vanilla extract

Steps:

  • Bring the cream to a boil in a 1-quart saucepan over medium heat.
  • Cook the sugar, water, and honey in a 3-quart heavy-duty saucepan over high heat until the mixture comes to a boil. Brush around the inside of the pan with a damp pastry brush at the point where the sugar syrup meets the sides of the pan. Do this twice during the cooking process to prevent the sugar from crystallizing.
  • Cook the mixture over high heat, without stirring, until it turns amber colored, 6-8 minutes. Lower the heat to medium and slowly add the hot cream to the sugar mixture while stirring constantly. The cream will bubble and foam. Continue stirring to make sure there are no lumps. Remove the saucepan from the heat and stir in the butter until it is completely melted. Then stir in the vanilla.
  • Transfer the caramel sauce to a bowl, cover tightly with plastic wrap, cool slightly, and serve warm.

1 (.25 ounce) package active dry yeast
¾ cup buttermilk
¼ cup vegetable oil
2 ½ cups all-purpose flour
½ teaspoon salt
¼ teaspoon baking soda
1 ½ cups brown sugar, divided
10 tablespoons butter, melted and divided
1 teaspoon ground cinnamon
2 tablespoons molasses

Steps:

  • Mix water and yeast together in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Whisk buttermilk and oil into the yeast mixture. Stir in flour, salt, and baking soda until dough comes together.
  • Turn dough out onto a floured work surface; knead until smooth and elastic, about 10 minutes. Let dough rest for 15 minutes.
  • Whisk 3/4 cup brown sugar, 4 tablespoons melted butter, and cinnamon together in a bowl.
  • Roll dough out into a 12-inch long rectangle about 1/4-inch thick. Spread cinnamon mixture evenly on top. Roll up lengthwise into a log; cut into 1-inch slices using a serrated knife.
  • Whisk remaining 3/4 cup brown sugar, 6 tablespoons melted butter, and molasses together in a small bowl. Pour into a greased 9x13-inch baking pan. Arrange dough slices on top. Cover and let rise at room temperature for 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake in the preheated oven until golden brown on top, 20 to 25 minutes.

Making homemade caramel sauce is daunting for many cooks, but there's no reason to be intimidated. It's simple to prepare and takes only 15 minutes.

1 cup sugar
¼ teaspoon salt
⅓ cup water
1 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • Combine the sugar and salt in a 3- to 3½-quart stainless steel saucepan and pour the water over them. Place the pan over medium to medium-high heat, stirring gently with a wooden spoon. As soon as the mixture comes to a boil, stop stirring.
  • Cook the mixture for 5 to 6 minutes, gently swirling the pan to "stir" the caramel so it colors evenly. As soon as the mixture turns a medium amber color, remove the saucepan from the heat and add the cream all at once. Stir well, and don't be concerned if it clumps up at first; it will smooth out.
  • Put the saucepan back over medium-low heat and boil, stirring virtually nonstop, until the caramel reaches 220 to 225°F (104 to 107°C) on a candy thermometer. Remove from the heat and stir in the vanilla. Cool briefly, then transfer to heatproof jars to store. Cool to room temperature before refrigerating. It will keep for at least several weeks. To reheat, microwave the jar in 5- to 10-second intervals, stirring in between, until pourable.

2 cups semisweet chocolate chips
1 cup chopped pecans
1 jar (12 ounces) caramel ice cream topping

Steps:

  • Preheat oven to 350°. In a large bowl, combine 2 cups flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. Set half aside for topping. , Press the remaining crumb mixture into a greased 13x9-in. baking pan. Bake for 15 minutes. Sprinkle with the chocolate chips and pecans. , Whisk caramel topping and remaining flour until smooth; drizzle over top. Sprinkle with the reserved crumb mixture. Bake for 18-20 minutes or until golden brown. Cool on a wire rack for 2 hours before cutting.

This caramel is very rich and gooey. It can be thinned with a little water to make a sauce for ice cream or it can be used as-is for a gooey candy filling. Great with apples too! Recipe can be doubled. Because the sugar can turn from caramel to burned rather quickly it is best to have all ingredients measured before starting.

1/4 cup sugar
1/4 cup brown sugar
3 tablespoons butter
1 tablespoon cream
1/2 cup corn syrup
1 tablespoon vanilla extract
1/4 teaspoon salt

Steps:

  • Heat 1/4 cup sugar in a stainless saucepan on medium heat, do not stir until sugar begins to melt.
  • Once sugar begins to melt, stir it until it has completely melted and begins to turn golden brown.
  • When sugar has started to turn caramel colored, remove pan from heat and immediately add butter and brown sugar and quickly stir together.
  • Once the butter and brown sugar are completely melded with the caramel (add gentle heat if needed to incorporate brown sugar), add the vanilla, corn syrup, cream and salt.
  • Stir together well.
  • The caramel will thicken as it cools.
  • If a thinner caramel is required, add water one tablespoon at a time until the desired thickness is reached; if a thicker caramel is needed, reduce the amount of corn syrup used.
