CHICKEN TORTILLA CASSEROLE

The best healthy chicken tortilla casserole from scratch! This easy layered casserole is loaded with cheese, veggies, and juicy chicken.

1 1/2 pounds boneless skinless chicken breasts*
2 teaspoons extra-virgin olive oil
1 large onion (chopped)
1 medium green bell pepper (cored and chopped)
1 medium red bell pepper (cored and chopped)
1 medium jalapeno (cored and diced)
2 cloves garlic
2 teaspoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 can tomato sauce ((28 ounces))
1 1/2 cups chicken stock
3 tablespoons jalapeno hot sauce (such as Tabasco, plus additional for serving)
18 (6-inch) corn tortillas
2 cups freshly grated Monterey Jack cheese ((8 ounces))
Optional for serving: (salsa, sliced avocados, lime juice, plain Greek yogurt (or sour cream), chopped fresh cilantro)

Steps:

  • Preheat the oven to 375 degrees F. Coat a 9x13-inch casserole dish with baking spray.
  • If needed, cook and shred chicken according to these easy steps.
  • Heat the olive oil in a large, deep skillet over medium-high, then add the onion, green bell pepper, red bell pepper, and jalapeno. Saute until the veggies are tender, about 10 minutes.
  • Add the garlic, cumin, oregano, salt, and pepper and cook until fragrant, about 30 seconds.
  • Add the tomato sauce, chicken stock, and jalapeno hot sauce, then stir to combine. Let the sauce simmer for 12 minutes.
  • To assemble the casserole, spread a thin layer of the sauce on the bottom of the prepared baking dish. Arrange 6 tortillas on top to cover the sauce, overlapping as needed.
  • Top with 1/3 of the chicken and 1/2 cup of cheese.
  • Spread 1/3 of the remaining sauce over the top, then repeat the process twice more.
  • Finish by sprinkling the last 1/2 cup of the cheese over the top then cover the pan with foil.
  • Bake for 35 minutes. Remove the foil, return the pan to the oven, then bake for 10 additional minutes, until the casserole is hot and bubbly and the cheese is melted. Let rest 5 minutes. Serve hot with desired toppings.

This is a different turn on the routine chicken casserole. I cut it out of the newspaper in the 70s.Sorry Im close to giveing my age. Well it is a good recipe and my family will attest to that. Hope you enjoy.

6 chicken breast halves, skinless and boneless
1 pkg dozen corn tortillas
1 can(s) cream of chicken soup
1 can(s) cream of mushroom soup
1/2 c milk
1 medium onions, chopped
1-------7 oz can of ortega green chilis
2 Tbsp chicken broth
1 lb grated cheddar cheese
1 can(s) green or black olives

Steps:

  • 1. Bake chicken under foil for 1 hour. Mix soups, chilis,milk,onion, and chicken broth in large bowl.Cut chicken into bite size pieces. Take 9x13 bakeing dish and layer tortillas to cover bottom, then lay chicken, then sauce,then cheese. repeat layers ending with tortillas. Then add grated cheese. Bake 350 degrees for 30 minutes. Add Olives if you like them.

6 chicken breasts, cooked,deboned and broken up
1 package corn tortilla (frozen)
1 cup sliced black olives
1 (7 ounce) can green chili salsa
1 lb sharp cheddar cheese, shredded
1 cup milk
2 cans cream of mushroom soup
1 can cream of chicken soup

Steps:

  • In buttered casserole dish, form layers of chicken, torn pieces of tortilla (uncooked), cheese, chillies, and olives.
  • Save some cheese and olives for the top.
  • Mix milk and soups together and pour over the layers.
  • Bake at 350 for 45 minutes, uncovered for most of the baking time.
  • Cover with foil if the top becomes too brown.

1 can (4.5 oz) chopped green chiles
1 container (8 oz) fat-free sour cream
1/2 cup fat-free (skim) milk
2 1/2 cups shredded cooked chicken breast
8 yellow corn tortillas (6 or 7 inch), torn into bite-size pieces
1 medium green bell pepper, chopped (1 cup)
1 large tomato, chopped (1 cup)
1 1/2 cups shredded sharp Cheddar cheese or Mexican cheese blend (6 oz)

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. In large bowl, mix soup, chiles, sour cream and milk until blended. Stir in chicken, tortillas and bell pepper. Stir in tomato and 1 cup of the cheese. Spoon and spread mixture in baking dish.

2 tablespoons chicken broth or 2 tablespoons water
2 (6 ounce) cartons plain yogurt
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 (10 3/4 ounce) can condensed cream of chicken soup
1 (8 ounce) jar green chili salsa
1 medium onion, finely chopped
12 corn tortillas, cut into 1 inch strips
4 cups cut-up cooked chicken
4 cups shredded cheddar cheese (16 oz)
spanish stuffed olives, sliced

Steps:

  • Heat oven to 350.
  • Butter rectangular baking dish, 13 x 9 inches; spoon broth into dish.
  • Mix yogurt, soups, salsa and onion.
  • Layer 1/3 of the tortillas strips, 1 1/3 cups of the chicken, about 1 1/3 cups of the soup mixture and 1 1/3 cups of the cheese in dish; repeat 2 times.
  • Bake uncovered 40 minutes. Let stand 10 to 15 minutes before serving.
  • Garnish with olives.

1 lb Velveeta cheese, cubed (medium size)
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of onion soup
1 (4 ounce) jar mushrooms
1 (6 ounce) jar picante sauce (small size)
4 chicken breasts, cooked, chopped
tortilla chips, crushed

Steps:

  • Melt cheese in large saucepan over low heat.
  • Add soups, mushrooms, picante sauce and chicken, mixing well.
  • Lien baking dish with chips.
  • Spoon cheese mixture over chips.
  • Top with additional chips.
  • Bake at 350 degrees for 20 to 25 minutes or until bubbly.
  • OAMC DIRECTIONS:.
  • To freeze: Assemble as directed through step 2. Allow to cool and place in freezer bags. Seal, pushing out as much air as possible. Label and freeze.
  • To serve: Allow to thaw in fridge. Finish assembly and bake as directed.
