SPICED WINTER FRUIT SALAD



Spiced Winter Fruit Salad image

2 grapefruits
2 navel oranges
1 cup red grapes, halved
1 pomegranate, peeled and broken into pips
2 bananas
14 cup honey
1/4 cup water
1/2 vanilla bean, split and scraped
3 coin-size pieces fresh peeled ginger
1 cinnamon stick
1 star anise (optional)

Steps:

  • For the fruit: Cut the grapefruits and oranges into segments over a large bowl, and squeeze the remaining juice from the inner membrane. Gently toss the segments with the grapes and pomegranate pips and grapes. Peel, slice, and toss in the bananas.
  • For the syrup: Stir together the honey, water, vanilla bean pod and seeds, ginger, cinnamon, and star anise, if using, in a small saucepan. Bring the mixture to a simmer, and then pour over the fruit. Remove the star anise, set aside for about 1 hour for the flavors to come together. Serve.

2 tablespoons extra-virgin olive oil
2 pears, sliced
2 small shallots, minced
6 tablespoons sherry vinegar
4 teaspoons Dijon mustard
3 cups shredded cooked turkey or chicken (12 ounces; see Tip)
1 large head radicchio, thinly sliced
1 large fennel bulb, cored and thinly sliced
2 large carrots, cut into matchsticks
2 tablespoons chopped walnuts, toasted (see Tip)
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
12 large butterhead or Boston lettuce leaves
1/2 cup crumbled Gorgonzola or goat cheese

Steps:

  • Sauteed radicchio, fennel and carrots are topped with chicken, walnuts and Gorgonzola in this warm and hearty main-dish salad. Serve with crusty whole-grain baguette.;
  • Heat oil in a Dutch oven over medium heat. Add pears and cook, stirring occasionally, until they start to brown, about 2 minutes. Transfer to a bowl with a slotted spoon.
  • Whisk shallots, vinegar and mustard in a small bowl; add to the pan and cook, stirring constantly, for 30 seconds. Add turkey (or chicken), radicchio, fennel, carrots and walnuts. Cook, stirring occasionally, until just wilted, about 3 minutes. Return the pears to the pan and season with salt and pepper.
  • Divide lettuce leaves among 4 plates. Top with the warm salad and sprinkle with cheese. Serves 2 Variation: Halve the ingredients and prepare the recipe in a large nonstick skillet instead of a Dutch oven.

600g good-quality ready-to-eat dried fruit (such as prunes, pears, apricots, figs cranberries)
3 tbsp clear honey
1 vanilla pod , split lengthways
1 Earl Grey tea bag
1 tbsp fresh lemon juice
mascarpone or Greek yogurt, to serve

Steps:

  • Tip the fruits and 700ml/11⁄4 pints cold water into a large saucepan. Add the honey and vanilla, scraping the seeds from the pod into the pan. Bring to the boil. Stir well, lower the heat and simmer for 10 minutes until slightly syrupy.
  • Take the pan off the heat and stir in the tea bag. Leave to infuse for 10 minutes.
  • Discard the tea bag and vanilla pod, tip the fruits and liquid into a non-metallic bowl and pour over the lemon juice. Stir, then leave to cool. Cover and chill until ready to serve.

1 (20 ounce) can pineapple chunks, in natural juices
1 (3 1/2 ounce) box cook and serve vanilla pudding
4 cups mixed fresh fruit (apples, bananas, grapes, kiwi etc.)
3/4 cup chopped pecans or 3/4 cup walnuts
1/3 cup coconut
4 ounces maraschino cherries, optional for garnish
whipped topping (optional)

Steps:

  • Drain pineapple, reserving juice & set pineapple aside. In saucepan, combine pineapple juice and pudding mix. Cook over medium heat until thickened. Cool.
  • Combine pineapple and other fruits, nuts and coconut in large salad bowl. Add dressing and stir to coat.
  • Chill until ready to serve. Garnish with cherries and whipped topping if desired.
