Salmon Melts image

This recipe celebrates canned wild salmon and the comforting classic of the melt. Bright and tangy, creamy salmon salad sits on top of toasted English muffins, and is topped with white cheddar cheese and slow-roasted tomatoes.

2 small ripe tomatoes
Kosher salt and freshly ground pepper
1/4 cup extra-virgin olive oil
8 small thyme sprigs (or 4 large sprigs, cut in half)
2 6-ounce cans wild salmon, drained, skin and bones discarded
1 small shallot, minced
2 stalks celery, finely chopped
2 tablespoons mayonnaise
2 tablespoons sour cream
1 tablespoon Dijon mustard
Juice of 1/2 lemon
2 scallions, thinly sliced
4 whole-wheat English muffins, split and toasted
8 small slices white cheddar cheese

Steps:

  • Preheat the oven to 375˚ F. Cut the tomatoes into 8 slices, 1/4 to 1/3 inch thick. Place in a shallow baking dish or on a small sheet pan. Season the tomato slices with salt and pepper, drizzle with the olive oil and put a thyme sprig on top of each. Bake until very tender and lightly browned around the edges, 30 to 35 minutes. Discard the thyme and set the tomatoes aside; keep the oven on.
  • Meanwhile, combine the salmon, shallot, celery, mayonnaise, sour cream, mustard, lemon juice and all but 2 tablespoons of the scallion greens in a medium bowl. Flake the salmon and stir until combined. Season lightly with salt and pepper. Refrigerate until ready to use.
  • Arrange the toasted English muffin halves on a foil- or parchment-lined baking sheet. Top with the salmon mixture (about a heaping 1/4 cup per muffin half). Top each with a slice of cheese and a roasted tomato slice and bake until the cheese is just melted, 3 to 5 minutes. Top with the reserved scallion greens.

I recently came up with this as part of trying to find dishes that had big taste in smaller portions. I live in AK and have a large amount of high grade smoked salmon products right here at my front door. I love smoked salmon but wanted to incorporate into more than chowder or over green salad. This is my spin on the usual Patty Melt.

2 slices jewish rye bread
1 -2 slice swiss cheese
1 slice onion (yellow,vidalia,red)
1/4-1/2 cup smoked salmon, flaked. i use alaska sausage co.smoked salmon but you can use whatever is available to you
1 -2 tablespoon butter, softended or 1 -2 tablespoon margarine

Steps:

  • Heat skillet or griddle to med-high heat.
  • Spread butter on one side of each slice of bread.
  • Lay one slice of bread butter side down in the heated skillet/griddle.
  • Quickly assemble the flaked salmon onto the bread, lay swiss cheese on top of that (this will help hold the salmon together once melted), then the onion, and finally place the other slice of bread of top butter side up.
  • Once the bread has begun to brown nicely and crisp underneath flip to brown and crisp the other side.

Salmon With Smoked Salmon Butter image

Any salmon, especially the deep red wild sockeye, will benefit from a generous dollop of this smoked salmon butter. The smoky-velvet taste lends a robust character, so little other embellishment is needed. Make it in advance and keep in the freezer, and you have an uncommonly elegant dinner in no time. The butter will lift a fillet of arctic char, butterflied trout, seasonal shad or other white-fleshed fish.

1 ounce smoked salmon, preferably sockeye
6 tablespoons unsalted butter at room temperature
1 teaspoon lemon zest
1 tablespoon minced fresh dill
1 tablespoon extra-virgin olive oil
1 1/2 pounds salmon fillet with skin, in 4 equal pieces
Salt and ground black pepper

Steps:

  • Use a knife to mince smoked salmon. Place in a small bowl. Add butter and, with a fork, mash together until well combined. Add lemon zest and dill and mash in. Scoop butter onto a work surface, form into a cylinder about 2 inches in diameter, wrap in plastic and freeze. Have 4 dinner plates warming.
  • Heat a large heavy skillet, preferably cast iron, on medium-high. Add oil and brush to coat entire surface. Pat fish dry and place fillets, skin side down, in pan. Increase heat to high and cook about 3 minutes, until skin has browned. Turn the fillets and sear on high until flesh side has browned and is cooked to desired degree of doneness, another 2 to 3 minutes for medium to medium-rare.
  • While fish cooks, remove butter from freezer and slice into 4 patties. When fish is done, place a fillet, skin side down, on each dinner plate. Dust surface of fish with salt and pepper, place a portion of smoked salmon butter on top of each fillet and serve.

8-10 oz. smoked salmon, flaked
1 large stalk of celery finely diced
1 cup of cooked rice
1/3 cup chopped green onion
1/3 cup mayonnaise
1 T Dijon mustard
1 egg
1/2 t lemon pepper (or 1 t lemon juice)
olive oil (for brushing)
bread crumbs (for coating)

Steps:

  • Blend together the salmon, celery, rice, green onion, mayo, mustard, egg, and lemon pepper. Shape into four-inch patties. Brush one side of each patty with olive oil and lay in a bowl of breadcrumbs. Brush top side with oil and flip over and press lightly into the breadcrumbs. Arrange patties on a flat pan. Refrigerate a few hours or overnight. Heat oven to 400º. Bake for 10 minutes (at sea level; 12 minutes at 4000 feet or higher). Turn the patties over and cook for another 10-12 minutes.
