This is the chili recipe I use on a regular basis - I just tweak it to include whatever vegetables I have on hand. It makes for a great dinner to come home to on cold, wintery nights.

2 (15 ounce) cans whole tomatoes
3 tablespoons tomato paste
1 (340 g) package soy crumbles (I use Yves)
1/2 cup frozen corn
5 mushrooms, sliced
1 green pepper, chopped
1 red pepper, chopped
1 jalapeno pepper, minced
1/2 cooking onion, chopped
1 tablespoon chili powder
1 teaspoon cayenne pepper
coarse salt
fresh coarse ground black pepper

Steps:

  • Put everything in a Crock pot or slow cooker.
  • Cook on low 4-6 hours.
  • This is a very flexible recipe - you can easily vary the vegetables and spiciness according to your own personal preferences.

1 (15 ounce) can kidney beans
1 (15 ounce) can chickpeas
1 (15 ounce) can pinto beans
1 (26 ounce) box pomi tomatoes (2 cans chopped tomatoes can be substituted)
1 (15 ounce) can corn
1 1/2 cups green peppers, chopped
2 stalks celery, chopped
2 garlic cloves, chopped
1 tablespoon chili powder
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon basil
1/2 teaspoon cumin
1/2 teaspoon bay leaf
30 ounces water

Steps:

  • Place all ingredients into crock pot and cook on low for 8 hours.

1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can garbanzo beans, rinsed and drained
1 (16 ounce) can vegetarian baked beans
1 (14.5 ounce) can chopped tomatoes in puree
1 (15 ounce) can whole kernel corn, drained
1 onion, chopped
1 green bell pepper, chopped
2 stalks celery, chopped
2 cloves garlic, chopped
1 tablespoon chili powder, or to taste
1 tablespoon dried parsley
1 tablespoon dried oregano
1 tablespoon dried basil

Steps:

  • In a slow cooker, combine black bean soup, kidney beans, garbanzo beans, baked beans, tomatoes, corn, onion, bell pepper and celery. Season with garlic, chili powder, parsley, oregano and basil. Cook for at least two hours on High.
