Veal and Green Bean Stew image

This is a recipe from a 1956 Culinary Arts Institute German cookbook. Times are estimated. Recommend serving with a big spoon of mashed potatoes on top.

1 1/2 lbs boneless veal shoulder
3 1/2 cups water, cold
1 1/2 teaspoons salt
1 teaspoon msg
1 1/2 lbs fresh green beans
1 chicken bouillon cube
1/2 cup water, very hot
3 tablespoons butter
1/4 cup all-purpose flour
1 tablespoon sugar
1 1/2 teaspoons salt
1 teaspoon msg
2 tablespoons vinegar
2 tablespoons minced fresh parsley
1/4 teaspoon savory
1/8 teaspoon pepper

Steps:

  • Cut veal into 1-in. cubes. Put into pot with cold water, salt and 1 teaspoon monosodium glutamate. Cover and bring to slow boil. Reduce heat and simmer 1 hour.
  • Meanwhile, wash, cut off and discard ends from green beans and cut into 1-in. pieces.
  • Add beans to sauce pot, cover loosely and cook 25 minute longer, or until beans are tender.
  • Dissolve bouillon cube in 1/2 cup very hot water. Set aside.
  • Remove pot from heat and drain stock from meat and beans, RESERVING the stock. Return the veal and beans to pot and set aside.
  • Heat butter in a small saucepan. Blend in flour, sugar, salt and 1 teaspoon monosodium glutamate. Heat until mixture bubbles. Remove from heat. Add gradually, stirring in, the reserved stock, chicken broth and vinegar. Cook rapidly, stirring constantly, until sauce thickens. Cook 1 or 2 minute longer. Blend in the parsley, savory and pepper.
  • Add to pot with veal and green beans. Heat about 10 minute or until meat is thoroughly heated.

4 pounds veal shoulder cut into 1 inch cubes, patted dry
1/4 cup vegetable oil
3 tablespoons butter
2 carrots, finely cubed
1 large onion, thinly sliced
1 stalk celery finely minced
2 cloves minced garlic
1/2 cup dry white wine
Beef broth or veal stock
Bouquet garni: parsley, bay leaf and peppercorns
1 tablespoon or so of beurre manie, (paste made in equal proportions of butter and flour)

Steps:

  • Preheat the oven to 325 degrees.
  • In an oven proof casserole, heat, until very hot, half of the oil. In small batches brown the veal cubes on all sides. When one batch is done, add more oil if you need to and continue to brown until all the veal is done. Discard the fat in the casserole and replace it with the butter. Add the carrot, onion and celery, cover and simmer 5 minutes or until onions are translucent. Add the white wine and boil down for a minute or until alcohol has evaporated. Return the veal cubes to the casserole with garlic and add just enough broth to barely cover the veal. Bring the liquid to a boil, add the bouquet garni, put a buttered piece of parchment or brown paper on top of the meat, then a lid on the casserole and set in the oven. Cook for 1 1/4 to 1 1/2 hours or until the meat is tender.
  • Remove casserole from the oven and strain the contents through a sieve and the liquid into another saucepan; discard bouquet garni. Divide solids into 2 batches. Degrease the liquid and boil it down until reduced to 3 cups. Remove 1 1/2 cups of the liquid and add it to half of the meat. Return the other half of the veal to the remaining liquid. Season with salt and pepper. Thicken with beurre manie if you wish. Serve with rice, polenta or potatoes; garnish with parsley.

2 lbs fresh green beans
1 -1 1/2 lb cubed lamb
2 chopped onions
3 tablespoons butter
3 teaspoons salt
1/2 teaspoon pepper
1/2 teaspoon allspice
1 (28 ounce) can whole tomatoes or 3 large ripe fresh tomatoes, chopped
2 cups water

Steps:

  • Clip stem ends off green beans.
  • Cut in half and rinse in cold water.
  • Brown lamb cubes and onions in butter, or a little water.
  • Add green beans and saute for 10 minutes.
  • Add salt, spices, chopped tomatoes and water.
  • Cover and simmer on low heat for 55 minutes, or until done.
  • Serve with rice pilaf with sauteed pine nuts.

1/2 lb fresh green beans or 1/2 lb frozen green beans
2 (15 ounce) cans stewed or diced tomatoes
1 onion
2 cloves garlic
2 green peppers

Steps:

  • Chop the pepper, onion, and garlic and sauté them in olive oil.
  • Add the seasonings (as much as you like).
  • Cube the eggplant into about 1 cubes and add them to the onion/pepper/garlic mixture.
  • Cook them while you take the ends off of the green.

  • Simmer, stirring occasionally, until the beans.

2 medium onions, chopped
2 tablespoons olive oil
2 pounds boneless veal shoulder, trimmed and cut into 2-inch chunks
salt and freshly ground black pepper
2 teaspoons fresh rosemary
1 clove garlic, finely chopped
2 tablespoons tomato paste
1/2 cup dry white wine
3 medium potatoes, peeled and cut into wedges
12 ounces green beans, trimmed and cut into 1-inch lengths

Steps:

  • 1 In a large pot, cook the onions in the oil over medium heat, stirring frequently, until tender and golden, about 10 minutes. Add the veal pieces to the pot. Cook until lightly browned, about 15 minutes. 2 Sprinkle with salt and pepper. Add the rosemary and garlic. Stir in the tomato paste. Add the wine and simmer until most of the liquid evaporates, about 3 minutes. 3 Add the potatoes to the pot. Sprinkle with salt and pepper to taste. Add 2 cups water and bring the mixture to a simmer. 4 Lower the heat. Cover the pot and cook, stirring occasionally, 1 hour or until the veal is tender when pierced with a fork. 5 Add the green beans to the pot and simmer 10 minutes more or until all of the meat and vegetables are tender. My aunt gave me this delicious recipe years ago, and it's still my favorite veal dish! This tomato and white wine sauce keeps the meat tender and moist during cooking. Serve over buttered noodles. Hope you enjoy it as much as our family does.

4 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
2 pounds veal, trimmed and cubed
1 (8 ounce) can tomato sauce
½ cup white wine
salt and pepper to taste

Steps:

  • In a large pot, heat oil over medium heat. Add onions and garlic; cook and stir until onion is tender.
  • Add meat to the pot, and brown evenly.
  • Stir in tomato sauce and white wine. Season with salt and pepper to taste. Bring to a boil, reduce heat to low, cover and simmer for 1 1/2 hours, or until tender.

2 lbs fresh green beans or 2 (16 ounce) packages frozen green beans
1 -1 1/2 lb lamb stew meat (or beef stew)
1 large chopped onion
3 -4 garlic cloves (crushed or minced fine)
2 cups water
1/4 cup olive oil or 1/4 cup vegetable oil
3 large ripe chopped fresh tomatoes or 1 (28 ounce) can diced tomatoes
3 teaspoons salt
1/2 teaspoon black pepper
1/2 teaspoon allspice

Steps:

  • Wash green beans and trim off stems. Cut in half and rinse in cold water.
  • Saute lamb meat stew, onions, garlic, salt and spices in olive oil or vegetable oil(stirring occasionally) until meat is brown.
  • Add 2 cups of water, green beans, chopped tomatoes or 28 oz. can of diced tomatoes. and cook on medium heat for about 10 minutes. cover and simmer on low heat for around 45 minutes or until green beans are tender.
  • This meal is best when served hot with plain rice.
