Spice Rubbed Grilled Duck Breast with Grilled Peach and Goat Cheese Salad image

Provided by Bobby Flay

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 15

2 cups orange juice
1 pint blackberries
1 tablespoon dry mustard
1 tablespoon sweet paprika
1 teaspoon chili de arbol
1/2 teaspoon ground cinnamon
1/2 teaspoons five-spice powder
1/2 teaspoon ground coriander
4 duck breasts, scored
Salt and freshly ground black pepper
Canola oil
Ripe peaches, halved and pitted
8 ounces goat cheese, cut into pieces, softened
2 cups baby arugula
1/2 cup coarsely chopped pecans, toasted

Steps:

  • Heat grill to medium. Put orange juice in a medium saucepan and cook until reduced by half. Add the blackberries and cook for 2 minutes. Strain the mixture into a bowl. Place the blackberries in another bowl and set aside.
  • Mix together all the spices and rub the skin side of the duck with some of the rub. Season breasts with salt and drizzle with oil. Grill, rub side down until a crust forms, 3 to 4 minutes. Turn the breasts over and continue cooking to medium doneness, brushing with some of the orange-blackberry glaze every minute or so. Transfer to a large platter.
  • Brush the cut side of the peaches with oil and season with salt and pepper. Grill the peaches, cut side down until slightly charred about 2 minutes. Turn over and grill for another minute. Arrange cut side up around the duck, or on another platter. Spoon some goat cheese into the peach hollows, scatter the arugula and pecans over, and then some of the cooked blackberries. Serve the remaining berries with the duck and peaches, if desired.

VANILLA SPICE-RUBBED GRILLED PEACHES WITH FRESH GOAT CHEESE

Vanilla Spice-Rubbed Grilled Peaches With Fresh Goat Cheese image

These are like little warm peach pies--without the crust! You can serve the peaches with vanilla ice cream instead of the goat cheese. Adapted from a recipe by chef Tom Douglas by way of the Chicago Tribune.

Time 25m

Yield 4 serving(s)

Number Of Ingredients 7

1/4 cup sugar
1/4 vanilla bean, halved lengthwise
1/2 teaspoon fresh ground pepper
1/4 teaspoon ground cinnamon
2 peaches (or nectarines)
1 tablespoon olive oil
2 ounces soft fresh goat cheese (1/4 cup)

Steps:

  • Prepare a grill for medium direct heat.
  • For the rub, put the sugar in a small bowl. Scrape the seeds from the vanilla bean into the sugar using the tip of a sharp paring knife (tuck the bean into a bowl of sugar for vanilla sugar).
  • Mix the vanilla seeds with the sugar, using the tips of your fingers to break up clumps. Stir in the pepper and cinnamon.
  • Cut the peaches in half; remove the pits. Brush the cut sides lightly with oil; sprinkle generously with the spice rub (you will not use all the spice rub -- reserve the remaining for another use).
  • Place the peaches, cut sides up, on a lightly oiled grill; grill until the peaches are starting to soften and the skin side is marked by the grill, about 3 minutes.
  • Turn; grill until the sugar is nicely golden and caramelized, about 2 minutes (move to a cooler part of the grill if they are browning too quickly).
  • Turn the peaches cut-side up again; place 1 tablespoon of the goat cheese in the center of each.
  • Grill peaches until goat cheese is warmed and just beginning to melt, about 1 minute. Transfer to a platter.
  • Sprinkle the goat cheese with a little more of the spice rub.
  • Serve hot.

GRILLED PEACHES

Grilled Peaches image

Provided by Natalie Clark

Categories     Summer

Time 10m

Number Of Ingredients 2

2-3 peaches, sliced in two and pitted
2 tablespoons olive (not extra virgin) or vegetable oil, for coating

Steps:

  • Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

  • In a small saucepan, pour in the honey, sliced chile and crushed red pepper. Turn the flame to medium and when it reaches a gentle simmer, remove from the heat and allow to steep for about 10 minutes. I served this right away, so I left the peppers in it for good looks. If you’d like to serve this the next day, you can strain the honey and store it in an airtight container in the fridge.
  • Preheat your grill. You can also do this using a grill pan over the stove. To a medium bowl, add the peaches and toss with the olive oil. When the grill or grill pan are preheated, add the sliced peaches and cook on each side for about 1 minute. Remove and transfer back to the bowl. Sprinkle with a few pinches of salt.
  • In a food processor, add the goat cheese and heavy cream. Pulse until very smooth, scraping down the sides as necessary. If the goat cheese is not room temperature it may need to come to room temperature to get super smooth. When the goat cheese is smooth, transfer to a piping bag OR if not using right away, you can transfer it to a air tight container and store in the fridge. (You may need to give it a good stir if it’s chilled.)

  • CINNAMON-SUGAR-BUTTER MIXTURE: In a small bowl, add the butter and melt. In another small bowl, stir together the cinnamon, light brown sugar, and salt. Stir until combined, and set aside.
  • GRILL PEACHES: Meanwhile, preheat a grill or grill pan to medium-high heat (about 400-450 degrees F.) Generously oil the grill (I drench a roll-up paper towel in vegetable oil and, holding it with tongs, rub it over the grill grates. Don't skip this step.). (Grill pan: brush 1 tablespoon oil over the pan) Halve the peaches and remove the pits. Lightly brush the cut sides and the skins with oil. Grill peaches until tender and lightly charred, but still slightly firm (you don't want them overly soft/mushy), about 6-10 minutes total (Note 1), flipping halfway through. Top each with a few brushes of the melted butter and then sprinkle on the cinnamon-sugar mixture.
  • GRAHAM CRACKER CRUMBLE: Preheat oven to 350 degrees F. Spray an 8x8-inch pan with cooking spray or line with parchment paper and set aside. Crush the graham crackers into crumbs (using a blender or food processor, or crush in a bag using a rolling pin); add to a bowl. Add the brown sugar, white sugar, melted butter, cinnamon, salt, and vanilla to the bowl. Stir until combined. Pour mixture into the prepared pan and spread evenly into one layer. Bake for 7 to 10 minutes or until lightly browned. Allow to cool.
  • ASSEMBLE: Place grilled and sugared peach halves on plates and top each slice with a large scoop of vanilla bean ice cream. Add the crumble on top and enjoy immediately. Garnish if desired with fresh mint leaves.
