Spiced Vanilla Pear Tart with Almond Whipped Cream image

1 package (14 oz) ready-made pie crust, or homemade
For the Filing:
1 cup sour cream
3/4 half and half
1 package (4 oz) instant vanilla pudding
2 Tbsp pure maple syrup
4 medium-sized Comice pears
1/3 cup light brown sugar
1/4 tsp. ground ginger
1/4 tsp. ground cinnamon
1/8 tsp. ground cloves
1/3 cup pecans, chopped
For the Almond Whipped Cream:
1 cup heavy whipping cream
1 1/2 tsp. almond extract
1 Tbsp. confectioners sugar

Steps:

  • Press pie crust firmly and up the sides of a 10-inch tart baking pan or a 9 inch pie plate. Line crust with parchment paper or aluminum foil and add pie weight or dried beans. Bake for 8 minutes. Remove parchment paper and pie weights. Bake for another 6 minutes. Remove from oven and allow to cool completely while you prepare the filling. Peel, core and chop 3 medium-sized Comice pears, set aside. Combine 1 cup sour cream and 3/4 cup half and half in a large bowl; beat until smooth. Whisk in pudding mix. Add 2 Tbsp. maple syrup, continuing to beat. Gently fold in the chopped pears. Pour the pudding mixture into prepared pie crust. Cover; refrigerate several hours (at least 3) or overnight. Just before serving, preheat broiler. Peel the final pear, and cut into thin slices. Arrange in a pattern in the center of the pudding mixture. Combine 1/3 cup brown sugar, 1/4 tsp. ginger, 1/4 tsp. cinnamon and 1/8 tsp. cloves in a small bowl. Sprinkle evenly over pears. Rim the edges of the tart with the 1/3 cup of chopped pecans. Broil 4 to 6 minutes or just until the sugar is melted and begins to crystalize, watching carefully not to burn the sugar. Prepare the whipped topping: Add 1 cup heavy cream, 1 1/2 tsp. almond extract and 1 Tbsp confectioners sugar to the bowl of a stand mixer and beat on low. Gradually increase the speed until soft peaks begin to form. Serve the pear tart immediately with a dollop of whipped cream and a sprig of mint, if desired. TIP: To easily peel pears, submerge the pears in a large pot of boiling water for about 10-15 seconds then place into a large bowl of ice cold water. Using your fingers, gently rub the pear skin from each pear.

Steps:

  • Preheat oven to 425°. Beat butter, sugar and cinnamon until crumbly. Beat in flour and walnuts. Press onto bottom and up sides of a 9-in. fluted tart pan with a removable bottom coated with cooking spray., For filling, beat cream cheese and 1/4 cup sugar until smooth. Beat in egg and vanilla. 2 cups flour
Pinch salt
1/3 cup light brown sugar, firmly packed
11 tablespoons cold butter (do not use margarine)
2 egg yolks, lightly beaten with a fork
10 to 12 seckle pears or 6-7 bosc pears, peeled, cut in quarters and then into 2 or 3 lengthwise slices
2 tablespoons lemon juice
1/2 cup currants
1/2 teaspoon ground ginger
1 teaspoon cinnamon
1/3 to 1/2 cup white sugar, depending on the sweetness of the pears
2 tablespoons butter
4 tablespoons sugar

Steps:

  • Place the currants in a small saucepan. Cover with water and bring to a boil. Allow them to boil for a minute and turn off the heat. Let them soak for about 5 minutes. Drain thoroughly and set aside. Preheat the oven to 375 degrees F. Combine flour, salt, and sugar, and cut in butter with a dough blender or 2 knives until it resembles a coarse meal. You can also use a food processor. Stir in egg yolks. Knead this mixture until smooth. This takes quite a bit of kneading (you might want to use 2 hands). Press the dough out on the bottom and sides of an 8 or 9-inch springform pan. Neatly finish the rim. In a large bowl, gently combine the pear slices with the lemon juice, spices, sugar, and currants. Carefully arrange the fruits in the crust. Dot with butter, sprinkle with sugar. Bake for about 30 to 40 minutes, or until the crust is golden. Cool and serve.

1 sheet frozen puff pastry - thawed, unfolded, and lightly rolled
2 Bartlett pears, halved and cored
2 d'Anjou pears, halved and cored
1 red pear, halved and cored
2 tablespoons white sugar
½ lemon, juiced
½ (8 ounce) package cream cheese, softened
½ cup confectioners' sugar
½ teaspoon vanilla extract
1 tablespoon turbinado sugar

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Fit puff pastry into a 10-inch square tart pan with removable sides.
  • Place a pear half, cut-side down, onto a work surface. Place a chopstick above and below the pear half, so the pear is framed on the top and bottom. Thinly slice the pear half lengthwise, stopping when the knife hits the chopstick and leaving the bottom 1/4 inch of the pear intact. Repeat with the remaining pear halves.
  • Place hasselbacked pears in a bowl; add white sugar and lemon juice and gently toss to coat. Let hasselbacked pears stand for 5 minutes.
  • Mix cream cheese, confectioners' sugar, and vanilla extract together in a bowl; spread over puff pastry. Arrange hasselbacked pears over cream cheese layer, cutting some of the halves into quarters if needed to fit them in. Slightly fan out each pear and drizzle any accumulated juices from the pear bowl over pears. Sprinkle turbinado sugar over tart.
  • Bake in the preheated oven until crust is puffed and lightly browned and juices are bubbling, about 35 minutes. Cool tart for 15 minutes before slicing.

1 sheet refrigerated pie pastry
4 cups thinly sliced peeled fresh pears
1/4 cup dried cherries
1 teaspoon vanilla extract
4 tablespoons sugar, divided
4 teaspoons cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 cup chopped walnuts
1 large egg white
1 tablespoon water

Steps:

  • On a lightly floured surface, roll out pastry into a 14-in. circle. Transfer to a parchment-lined baking sheet; set aside., In a large bowl, combine the pears, cherries and vanilla. Combine 3 tablespoons sugar, cornstarch, cinnamon and ginger; sprinkle over pear mixture and stir gently to combine. Spoon over pastry to within 2 in. of edges; sprinkle with walnuts. Fold edges of pastry over filling, leaving center uncovered., Beat egg white and water; brush over folded pastry. Sprinkle with remaining sugar. 1/3 cup butter, melted
1/4 cup apricot jam
1 (796 ml) can pear halves, well drained
1 can eagle brand sweetened condensed milk (regular or low-fat)
1 egg
1 1/2 cups whipping cream, unwhipped
1/2 teaspoon vanilla extract
1 pinch cinnamon

Steps:

  • Mix biscuits crumbs with butter until well moistened. Spread mixtue onto bottom and sides of a 9-inch tart pan or pie dish. Refrigerate 10 minutes.
  • Spread jam over chilled crust. Arrange pear halves over jM layer to cover surface completely.
  • Whisk together Eagle brand, egg, whipping cream, vanilla and cinnamon; pour over pears.

Gently spiced poached pears, vanilla pastry cream and flaky puff pastry are the stars of this sophisticated dessert that was created for the 2019 NYT Food Festival by Rachel Gaylord, the pastry chef at La Mercerie in New York. Ideally, this delicate tart should be eaten the day it's made, so if you're planning to serve this at a dinner party, make all of the components in advance and assemble the tart just before your guests arrive. Leftovers, if you have any, should be stored in the refrigerator and brought to room temperature before serving. The pastry will have lost some of its flakiness, but it will still be delicious. (This adaptation mercifully calls for store-bought puff pastry, but if you're feeling ambitious, you can make your own.)

1 1/4 cups/250 grams granulated sugar
1 1/2 teaspoons vanilla extract
4 to 6 star anise pods
2 semi-ripe Bartlett pears, peeled, cut in half lengthwise and seeded
1 sheet store-bought puff pastry (about 8.5 ounces)
1 egg, beaten
1 cup/240 milliliters whole milk
1/2 teaspoon vanilla extract
1/4 cup/60 grams granulated sugar
3 tablespoons/25 grams cornstarch
4 egg yolks, at room temperature
2 tablespoons/25 grams unsalted butter, softened
1/2 cup pear purée or applesauce
1/4 cup/50 grams granulated sugar
1/2 cup/50 grams toasted sliced almonds, for garnish (see Tip)

Steps:

  • Poach the pears: Combine 2 cups/480 milliliters water, sugar, vanilla extract and star anise pods in a medium saucepan over medium heat. Bring to a simmer, then reduce the heat to low. Place the pears in the poaching liquid and cover with a lid. Keep just below a simmer and cook until the pears are tender, about 40 minutes depending on the ripeness of the pears. Remove the pears from the liquid to a plate and cool completely. Slice each pear half crosswise into 1/2-inch-thick slices. Set aside.
  • While the pears poach and cool, make the pastry: Trim a sheet of puff pastry to one 4 1/2-by-12 inch rectangle. From the remaining puff pastry, cut two 1-by-12-inch strips. Transfer rectangle and strips to a sheet pan lined with parchment paper.
  • Using a pastry brush, brush the beaten egg in a thin 1-inch strip along both long edges of the puff pastry, then place the strips of puff pastry on top. (You should have a rectangle of puff pastry with a puff pastry border down each of the long sides.) Use the back of a chef's knife or the tines of a fork to gently press the strips of puff pastry into the rectangle. Prick the pastry all over with a fork, then refrigerate for 15 minutes. Meanwhile, heat the oven to 325 degrees.
  • Brush the puff pastry all over with egg wash, then line the center with parchment and fill with baking weights or dried beans. Bake for 20 minutes, turning halfway through. Remove the parchment and baking weights. Bake until golden brown, about 3 more minutes. As soon as you pull it out of the oven, trim the edges with a knife so the layers line up, if necessary. If the center has puffed up, gently prick with a fork or toothpick to release air. Allow to cool completely.
  • While the pastry bakes and cools, make the pastry cream: Combine the milk, vanilla extract, and half the sugar (using 2 tablespoons/30 grams) in a pot. Bring to a simmer over medium-low. In a separate bowl, whisk together the remaining 2 tablespoons/30 grams sugar and the cornstarch, then whisk in the yolks. Whisking the eggs and cornstarch continuously, carefully add 1/4 cup of the hot milk mixture to the egg yolks, and whisk well to combine. Now, whisking the hot milk mixture in the pot continuously, add the egg yolks and cornstarch mixture to the pot. Continue whisking until it thickens. (It happens fast!) Immediately remove from the heat and whisk in the softened butter until smooth. Transfer to a bowl and cover with plastic wrap directly on the surface of the pastry cream. Allow to cool to room temperature.
  • While pastry cream cools, make the glaze: Combine the pear purée, sugar and 2 tablespoons water in a medium saucepan and bring to a simmer until slightly reduced and glossy, about 3 minutes. Strain and chill.
  • Transfer the puff pastry to a serving platter. Spread about 1 1/2 cups pastry cream down the center of the pastry shell. Place the sliced pear halves over the pastry cream in alternating directions. Brush each pear with a thick layer of pear glaze. Garnish any areas between the pears with toasted almonds. Dust the whole tart with confectioners' sugar just before serving.

Steps:

  • Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet; toast in oven until light golden and fragrant, 7 to 10 minutes. Let cool completely, then finely grind in a food processor. Set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 1 minute. Add almonds, egg, cream, and extract; beat until well combined, about 2 minutes.
  • Using a small offset spatula, spread filling in cooled tart shell. Arrange pear slices, overlapping them slightly, on top of filling. Generously sprinkle with sugar; place tart on a baking sheet. Bake until filling is slightly puffed and golden brown, about 35 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature with creme anglaise on the side.

  • Melt butter in small saucepan over low heat. Scrape in seeds from vanilla bean; add bean. Add cinnamon, star anise, and cloves. Increase heat to medium; cook until butter is golden (watch to avoid burning), 3 to 4 minutes. Remove vanilla bean and spices from butter; discard.
  • Whisk sugar, egg, and coarse salt in medium bowl. Whisk in flour. Gradually whisk browned butter into egg mixture. DO AHEAD Pears and filling can be made 6 hours ahead. Cover separately; let stand at room temperature. Whisk filling before using.
