I found this on the internet a couple of years ago when our apple tree was very abundant. I am not sure where it came from but it is good. The tree is loaded again this year so I expect to be making it again soon. Cook time is chill time.

- Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener. This is the original Waldorf Salad recipe which I clipped out of the newspaper several years ago. My mother made this salad often--it must have been a favorite of hers also.
