AIRPORT BOB'S GREEN BEANS

Steps:
- Fry the bacon in a large skillet over medium heat until done, but not quite crisp, about 9 minutes. Drain off grease and add butter and brown sugar. Cook and stir over medium heat until sugar has dissolved; remove from the heat and set aside.
- Place the green beans into a pot and fill with about 1 inch of water. Bring to a boil then cover, and steam over medium heat until cooked through, about 5 minutes. Drain off water and stir in the sugar and bacon mixture. Serve immediately.

UNCLE GREG'S GREEN BEAN CASSEROLE

- 1. Heat oven to 400 degrees. FOR THE TOPPING: Pulse bread, butter, and salt in a food processor until coarsely ground.
- 2. Combine bread mixture and onions in bowl; set aside.
- 3. FOR THE CASSEROLE: Melt butter in large skillet over medium heat.
- 4. Add mushrooms, salt, and pepper and cook until mushrooms release their liquid, about 5 minutes.
- 5. Increase heat to medium-high and cook until liquid has evaporated (about 5 minutes).
- 6. Add garlic and thyme and cook until fragrant, about 30 seconds.
- 7. Stir in flour and cook until golden, about 1 minute.
- 8. Slowly whisk in wine, broth, and cream; bring to boil. Reduce heat to medium and simmer, stirring occasionally, until sauce is thickened, about 10 minutes.
- 9. Toss green beans with corn starch in a large bowl.
- 10. Transfer to 13x9-inch greased baking pan. Pour warm mushroom mixture evenly over beans.
- 11. Cover pan with foil. Bake until sauce is bubbling and beans are tender; about 40 to 45 minutes. Stir beans thoroughly after 25 minutes.
- 12. Remove foil and spread topping mixture over beans. Bake until golden brown, about 8 minutes. Serve.
UNCLE BOB'S BOURBON BAKED BEANS
My Great Uncle Bob loved to show off in the kitchen. He really was an excellent cook and his closely guarded recipes were handed around within the family after his passing. He had written on the food stained piece of paper that the baking soda kept the skins soft and tender. So...since I've had his recipe, I've never cooked dried beans without following his advice. Prep time does not include soaking time.

- Soak beans overnight. Drain and rinse. Turn into a large pot with tight fitting lid and cover with water; bring to boil then immediately reduce to simmer. Add two slices bacon, quartered onion and cook for 2 hours. About ½ hour before beans are tender (at 1½ hours), add 1 Tbsp. salt and ½ tsp baking soda. Stir until foaming subsides. The baking soda will rise up and threaten to overflow the pot. Continue to simmer another ½ hour. Drain and reserve liquid.
- Heat oven to 325º F. Set out a 9" x 13" baking dish. (For large gatherings, I use the disposable aluminum pans.)
- Cut each remaining slice of bacon in half or quarters; set aside.
- In sauce pan, combine ketchup, bbq sauce, maple syrup, bourbon, dark brown sugar, yellow mustard, Worcestershire sauce, black pepper and 2 cups of the cooking liquid drained from beans. Over medium heat, bring to a low boil and cook, stirring, until well combined.
- Pour beans in a 9"x 13" baking dish. Pour sauce mixture over beans, distribute chopped onion evenly over the top, and lay on remaining slices of bacon, each strip cut into halves or quarters. Cover with foil, folding one corner back to vent and bake at 325° for 1½ hours. Add more cooking liquid as necessary to keep beans from drying out.
- Remove foil and continue baking approx. 30 minutes or until bacon is brown and excess liquid has been cooked out.
UNCLE BOB'S CHILI
I got this recipe from my Uncle Bob, who would bring this to Christmas every year! If you don't like spicy chili, use half regular chili beans and chili mix instead of hot!

- Cook bacon, sausage, and hamburger; drain and add onion, green peppers and celery. Stir and cook over medium heat for about 5 minutes.
- Add chili mixes, tomatoes, and tomato sauce-stir.
- Add beans and sugar; stir.
- Bring to a simmer and cook for 2-3 hours!
- The servings listed below are just an estimate, this recipe makes a lot so you can freeze some for a later date!
