Steps:
- Saute meat cubes in shortening until brown on all sides.
- Add pepper, paprika, bay leaf, salt, beef broth, red wine, onion, and carrots.
- Cover and simmer until meat is tender, about 2 hours.
- Add whole onions and potatoes; cover and simmer for an additional 15 minutes, or until the vegetables are barely tender.
- Mix butter and flour into a paste.
- Drop into simmering stew.
- Cook, stirring, until stew bubbles and thickens.
- Serve with rice or polenta.

UNCLE BILL'S MOOSE STEW
I adopted this recipe from a North American Hunting Club magazine a few years ago. My hubby is a big deer hunter. We love when hunting season gets here because this recipe becomes a weekly treat. This is an easy recipe, that is very filling. I usually fix a pan of cornbread to go with it.

Steps:
- In a dutch oven or large stockpot, heat oil, sear meat.
- Reduce heat to med, add potatoes & onion, cook until potatoes are fork tender & onion becomes translucent.
- Add all the canned ingredients & the bay leaves. Stir well.
- Reduce heat to low, cook for one hour.
- Remove bay leaves before serving.
- **Note: This can be converted to a crockpot recipe, sear the meat as directed in step 1 and then combine all ingredients in a crockpot. Let it cook on low for 6-8 hours or high for 3-4.

UNCLE BILL'S NUGGET POTATOES WITH PHILADELPHIA CREAM CHEESE
The nugget potatoes are in full swing and I have been experimenting making these lovely potatoes for a different taste and flavor. This is a very easy recipe to make.

Steps:
- In a large saucepan or cooking pot, add potatoes and mint leaves, cover with water and bring to boil.
- Reduce heat, cover and cook for about 8 minutes or until potatoes are just tender; Do not overcook.
- Drain well, discard mint leaves, and place potatoes in a large mixing bowl and keep warm.
- Meanwhile, in a microwave safe dish, add cream cheese, milk, red pepper, dill weed, basil, salt and pepper and microwave on HIGH (full power) for 50 to 60 seconds or until cream cheese is melted, stirring at half time.
- Remove from microwave and pour mixture over potatoes and mix well to coat.
- Serve while hot.

UNCLE BILL'S BULGARIAN STEW
My Uncle Bill was the best cook ever! Well, that's what I though while growing up anyways. He used to make what HE called a "Bulgarian stew", and being he was from Bulgaria maybe it truly was. One thing it is for sure is delicious. This is perfect for a cold day and goes great with baked potatoes and his "Bulgarian Salad". Also, make sure you have some fresh Italian or French bread to sop up the juice in the bottom of the bowl...MMMMM good!

Steps:
- Add olive oil, pork, peppers and onions in a large pot and stir fry until pork is done, stirring frequently.
- Add tomato sauce and 2 cans of water (approximately 3-4 cups).
- Add all spices, lemon juice, and bouillon cube and stir.
- Bring to a boil.
- Add green beans and northern beans and stir.
- Lower heat to low, cover with lid and simmer for 2 hours stirring often in between.
