NO-BAKE FUDGE COOKIES

This recipe is from a Church library book "Mud Pie Annie" (by Sue Buchanan and Dana Shafer) that my daughter checked out. We made this recipe together as a treat for daddy who was at work.

Number Of Ingredients 8

2 cups sugar
1/2 cup milk
1/4 teaspoon salt
1/3 cup cocoa
1/4 lb margarine
1 teaspoon vanilla
1/2 cup peanut butter
3 cups oatmeal (instant)

Steps:

  • Mix first 6 ingredients in a sauce pan and cook until it boils.
  • Boil for 1-3 minutes.
  • Remove from heat and add peanut butter and oatmeal. Drop by teaspoonfuls on to wax paper.
  • Chill until set.

These are super yummy and super easy! The combination of the chocolate, coconut, and oats is wonderful. No baking required! These also freeze well.

3 cups quick cooking oats
1 cup sweetened flaked coconut
2 cups white sugar
½ cup unsweetened cocoa powder
½ cup milk
½ cup margarine

Steps:

  • Line a baking sheet with waxed paper.
  • Mix oats and coconut in a large bowl until thoroughly combined.
  • Stir sugar, cocoa powder, milk, and margarine together in a saucepan over medium heat until the mixture is smooth. Bring to a boil and cook for 2 minutes, stirring constantly. Pour over the oats and coconut and quickly mix to coat. Drop by tablespoon onto prepared baking sheet; let cookies cool and harden. Store in an airtight container.

1 cup sugar
2 tablespoons baking cocoa
1/4 cup butter, cubed
1/4 cup milk
1 cup quick-cooking oats
1/4 cup sweetened shredded coconut
2 tablespoons peanut butter
1/2 teaspoon vanilla extract

Steps:

  • In a large saucepan, combine sugar and cocoa; add butter and milk. Cook and stir over medium heat until mixture comes to a boil; boil for 1 minute. Remove from the heat; stir in oats, coconut, peanut butter and vanilla. , Let stand until the mixture mounds when dropped by tablespoonfuls onto waxed paper. Cool until set.

What could be better than an indulgent dessert made from ingredients you have sitting in your pantry and that never needs to go into the oven? These cookies take just minutes of work; most of the time is spent waiting for them to harden into the rich, nutty, chocolaty delights that they are.

2 cups sugar
1/2 cup milk
1 stick (8 tablespoons) unsalted butter
1/4 cup unsweetened cocoa powder
3 cups old-fashioned rolled oats
1 cup smooth peanut butter
1 tablespoon pure vanilla extract
Large pinch kosher salt

Steps:

  • Line a baking sheet with wax paper or parchment.
  • Bring the sugar, milk, butter and cocoa to a boil in a medium saucepan over medium heat, stirring occasionally, then let boil for 1 minute. Remove from the heat. Add the oats, peanut butter, vanilla and salt, and stir to combine.
  • Drop teaspoonfuls of the mixture onto the prepared baking sheet, and let sit at room temperature until cooled and hardened, about 30 minutes. Refrigerate in an airtight container for up to 3 days.

2 cups white sugar
1/2 cup unsweetened cocoa
1/2 cup milk
1/2 cup margarine
1 teaspoon vanilla
3 cups rolled oats (preferably old-fashioned, not quick oats)
1 cup coconut (can reduce or even omit if desired)
1 cup raisins

Steps:

  • Combine sugar, cocoa, milk, margarine and vanilla in a pot.
  • Bring to a boil.
  • Boil for 3 minutes.
  • Stir in oats, coconut and raisins.
  • Drop by spoonfuls onto cookie sheet (may want to put waxed paper first).
  • Freeze.
  • After they're completely frozen, you may want to remove them from the pan and put them in a tupperware container.

This recipe was in my grandmas old recipe file, and I thought it sounded good, and pretty easy too, so I thought I would share it with everyone

1 package powdered sugar
3 ounces cream cheese, room temperature
1/2 cup cocoa
1/2 cup butter, at room temperature
1 teaspoon vanilla
1 cup chopped nuts

Steps:

  • cream together and mix well, powdered sugar, cream cheese,and butter.
  • Then add cocoa, vanilla and nuts.
  • Mix together with hands.
  • Roll into long rolls and put in refrigerator overnight.
  • Cut into pieces.

A very uninspired name, that's for sure, but I bet you'll remember them anyway once you've tried them! A recipe from 'The Mennonite Treasury of Recipes,' this is still a favourite among every Mennonite family that I know! My mom never wanted to make these for me as a kid, I guess because they're terribly sweet (and you know how bad sugar is for kids!!), but now that I don't live under my parents' roof anymore, I can make them as often as I want. Problem is, between my husband, daughters and I, even a double batch doesn't last very long!! I usually do use a little less sugar because mom was right, they are quite sweet. Freezes really well -- if they make it to the freezer! (Yield is approximate; depends how big you make your cookies.)
