1 (10 ounce) can diced tomatoes with green chilies
2 (8 ounce) packages cream cheese

Steps:

  • Brown sausage in skillet and drain.
  • Heat tomatoes in saucepan and add cream cheese.
  • Stir until cheese melts.
  • Add sausage.
  • Mix well.
  • Serve with tortilla chips or corn chips.

1 lb hot ground sausage
1 can(s) rotel tomatoes (10 oz)
2 pkg cream cheese (8 oz each)

Steps:

  • 1. Brown sausage and drain well.
  • 2. Heat tomatoes in saucepan and add cream cheese. Stir over low heat until cheese melts. Add sausage and mix well.
  • 3. Serve with your favorite chips (Fritos or tortilla chips)

Drain some low-fat yogurt overnight to make this yummy cucumber dressing. This is a delicious topping for grilled chicken or meat. It's also a great dip for veggies and pita chips.

1 (16 ounce) container low-fat plain yogurt
1 cucumber, peeled, seeded, and grated
1 clove garlic, minced
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh mint
1 tablespoon fresh lemon juice
salt and pepper to taste

Steps:

  • Line a colander with two layers of cheesecloth and place it over a medium bowl. Place the yogurt on the cheesecloth and cover the colander with plastic wrap. Allow yogurt to drain overnight.
  • Lay grated cucumber on a plate lined with paper towel; allow to drain 1 to 2 hours.
  • Combine the drained yogurt, cucumber, garlic, parsley, mint, lemon juice, salt, and pepper in a bowl. Refrigerate for at least 2 hours before serving.

  • Grab an English cucumber (the skin on these is extra tasty and the seeds are minimal) and, using a box grater or food processor, shred the cucumber until you have about 1/4 cup packed in your measuring cup.
  • Press out the extra moisture with a paper towel and feel free to grab a knife and chop the shreds into smaller pieces to help it blend seamlessly into your yogurt.
  • To make impossibly-thick yogurt all you have to do is strain it! My favorite method is pretty no-fuss, no-muss and involves topping a large bowl [or a pot!] with a mesh strainer and several layers of cheesecloth. Typically the cheesecloth comes in a giant roll so just fold it over itself a bunch of times, slap it in the sieve, and pour in your yogurt.
