ITALIAN MAC-N-CHEESE

- Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
- In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
- Preheat broiler to high.
- To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
- Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.

Steps:
- Preheat oven to 350 degrees.
- Remove casings, if present, from sausage.
- In a skillet cook crumbled sausage; drain.
- In a very large bowl combine sausage, cooked pasta, cream cheese, bread cubes, olives and mozzarella cheese.
- Set aside.
- In a medium saucepan melt butter over medium heat, Stir in flour, sage, thyme, salt and cayenne pepper.
- Add milk all at once.
- Cook and stir until slightly thickened and bubbly.
- Pour sauce over pasta mixture.
- Stir gently.
- Tranfer mixture to a 2-quart casserole.
- Bake, covered, for 35 minutes.
- Uncover; top with tomato slices and Cheese of choice.
- Bake uncovered for 15 minutes more or until heated through.
- Let stand 15 minutes before serving, Sprinkle with fresh thyme, if desired.

- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the tomatoes, water, soup mix, Italian seasoning and, if desired, pepper flakes. Bring to a boil. Stir in macaroni. - Preheat oven to 350°F
- Bring one large pot of water to a rolling boil.
- Add whole box of shells and a pinch of salt to boiling water, cover and switch to low heat.
- Spray oven safe dish with cooking spray.
- Put milk, one bag of cheese,a few dashes of pepper, the butter and a pinch of salt in the dish; mix well.
- When noodles are still firm, but partially cooked drain them and add them to the bowl of milk and other mixed ingredients.
- Stir together coating noodles in cheese mixture.
- Cook for 20 minutes.
- Add second bag of cheese and stir.
- Top with breadcrumbs and cook for 15 more minutes or until golden brown at the edges.

- Bring a large pot of salted water to boil. Cook the pasta in the water until pasta is al dente, according to package directions. Gather the rest of your ingredients (even the spices) and make sure they are measured and on hand. Once the pasta has finished cooking, reserve about 1 cup of the pasta water. Drain the pasta and set aside.
- Meanwhile, reserve 2 tablespoons of oil from the jar of sun-dried tomatoes, then drain away the remaining oil. Pat the tomatoes dry, then roughly chop and set aside.
- Heat a large skillet over medium-high heat. Add the olive oil. Once it is hot, add the chicken pieces. Sprinkle with ¼ teaspoon salt and ¼ teaspoon pepper. Saute until the chicken is golden on the outside and fully cooked through on the inside, about 5 minutes. Remove to a plate and set aside.
- To the skillet, add the reserved sun-dried tomato oil and the butter. Once the butter melts, add the sun-dried tomatoes and remaining ½ teaspoon salt. Sprinkle the flour over the top, then cook and stir for 1 minute, until the white bits of flour disappear. The pan will seem dry.

- Season chicken with salt, pepper, paprika, dried parsley and 2 teaspoons of the oil. Heat the remaining oil in a large (30cm or 12-inch) pot or pan over medium-high heat. Add the chicken and sear on both sides until golden brown, cooked through and no longer pink in the middle. Transfer chicken to a warm plate, tent with foil and set aside.
