PAN FRIED COD

Pan Fried Cod image

Simple pan fried cod with butter and lemon. This light and healthy dinner comes together in minutes. One of the best easy ways to cook fish!

Provided by Erin Clarke / Well Plated

Categories     Main Course

Time 15m

Number Of Ingredients 7

2 6-ounce cod fillets (or halibut, bass, salmon, or a similar firm-bodied fish)
1/2 teaspoon kosher salt
¼ teaspoon ground black pepper
2 tablespoons canola oil (or grapeseed oil. Do not use olive oil, as it will burn.)
1 tablespoon unsalted butter
2 tablespoons chopped herbs of choice* (parsley, basil, dill, and thyme are all delicious)
1 small lemon (cut into wedges)

Steps:

  • Pat the cod fillets very dry. Season both sides with salt and pepper.
  • Heat the oil a 10-inch or similar cast-iron or heavy-bottom skillet over medium-high heat. Once the oil is hot and shiny (but not yet smoking), gently lower the fish into the oil, moving away from your body with your motion in case the oil splatters. Lower the heat to medium.
  • Let the fish cook undisturbed on the first side for 2 to 3 minutes, until the underside is nicely golden.
  • Gently flip the cod over. A flexible, thin metal spatula (such as a fish spatula) works best. The cod might stick a bit at first, but work gently and firmly and you'll get it. Place the butter in the pan. With a spoon, spread the pat around the fish. Tilt the pan away from you so that the butter pools, then baste the fish with the butter a few times.
  • Continue cooking on the other side until the fish is opaque, flakes easily with a fork, and reaches 145 degrees F on an instant read thermometer, about 2 additional minutes.
  • Sprinkle with fresh herbs and squeeze the lemon over the top. Enjoy immediately, with an extra squeeze of lemon if desired.

COD WITH BROWN BUTTER LEMON SAUCE

Cod With Brown Butter Lemon Sauce image

Provided by Geoffrey Zakarian

Categories     main-dish

Time 40m

Yield 2 servings

Number Of Ingredients 9

2 lemons
12 tablespoons unsalted butter
1 slice brioche bread, crusts removed and diced into 1/4-inch pieces (about 1/2 cup)
2 cod fillets, about 1/2-inch thick
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
2 tablespoons capers
2 tablespoons white wine
1/4 cup fresh parsley, finely chopped

Steps:

  • Cut the peels from the lemons, revealing the flesh. Cut the segments free from the membranes, then dice and place in a bowl. Squeeze any remaining juice from the membranes into the bowl. Set aside.
  • Heat a large nonstick pan over medium-high heat. Add 4 tablespoons butter and begin to cook, stirring, until the butter begins to brown. Add the brioche, then reduce the heat to medium-low and cook, continually tossing and swirling the brioche until evenly toasted, about 4 minutes. Remove the croutons to a plate and let cool. Wipe out the pan.
  • Sprinkle the fish with salt and pepper. Heat the same pan over medium-high heat. Add 4 tablespoons butter and the oil and begin to cook over the heat, stirring. Add the fish and cook, 2 to 3 minutes. Flip the fish and continue to cook, basting occasionally with the butter from the pan, another 2 to 3 minutes. Remove the fish to a plate. Wipe out the pan.
  • Turn the pan to medium heat and add the remaining 4 tablespoons butter. Let melt, then add the capers and cook for 1 to 2 minutes. Continue to cook until the butter browns, then add the wine, lemon juice and segments and parsley. Swirl together. Spoon the sauce over the fish and garnish with the croutons.

This lemon butter baked cod recipe is tender and flaky, with the best lemon butter sauce! Learn how to bake cod fish with just 5 simple ingredients and 20 minutes.

Provided by Maya Krampf

Categories     Main Course

Time 20m

Number Of Ingredients 7

8 4-oz Cod fillets ((preferably thawed))
1/4 cup Unsalted butter
1 medium Lemon ((juiced and zested; see notes*))
1/2 tsp Garlic powder
3/4 tsp Sea salt
1/4 tsp Black pepper
1 tbsp Fresh parsley ((chopped))

Steps:

  • Preheat the oven to 400 degrees F (204 degrees C). You can bake the cod fillets from frozen or thaw them first in a bowl of cold water. (I prefer thawing if you have time, as it makes it easier to brush on the butter without solidifying.)

TURMERIC LEMON BUTTER BASTED COD

Turmeric Lemon Butter Basted Cod image

Turmeric is popping up in recipes a lot these days. Jennifer's cod recipe is a great use for it. The combination of lemon and butter is always amazing. But add the earthy flavor of turmeric and it takes this cod to a whole new level of yumminess. Basting the fish while it cooks enables it to soak up all the flavor and prevents the fish from drying out. Once done, the cod is perfectly flaky.

Categories     Seafood

Number Of Ingredients 6

2 pieces cod or other mild white fish (6 oz each)
3 tablespoon(s) butter
1 tablespoon(s) freshly squeezed lemon juice
1 teaspoon(s) turmeric salt
freshly ground pepper, to taste
sub for turmeric salt: 1/2 tsp kosher salt + 1 tsp turmeric

Steps:

  • Rinse fish and pat dry with a paper towel.
  • Sprinkle turmeric salt and pepper on fish. Flip and do the same on the other side.
  • Over medium heat, melt the butter in a saucepan large enough to hold both pieces of fish.
  • Add lemon juice to the butter when melted.
  • When the pan is hot, add both pieces of fish. Tip the pan a little to puddle up some of the butter.
  • Baste both pieces of fish with the butter.
  • Cook undisturbed for 2-3 minutes, depending on the thickness of the fish. You want some nice browning on the fish.
  • Baste once more and turn fish to the other side.
  • Tip the pan and baste the fish several times with the butter. Cook another few minutes until the desired doneness, basting every 30 seconds or so. Flip fish one more time, baste several times with butter.
  • Plate. Garnish with parsley, if desired.

CURRIED BUTTER-BAKED COD WITH CAULIFLOWER & CHICKPEAS

Curried butter-baked cod with cauliflower & chickpeas image

Deliver big flavours with this aromatic cod traybake. Serve from the dish with spiced spinach alongside

Provided by Barney Desmazery

Categories     Dinner

Time 1h10m

Number Of Ingredients 14

1 large cauliflower, cut into florets
1 tsp cumin seeds
1 tsp ground turmeric
2 tbsp sunflower oil
4 garlic cloves
large piece of ginger, peeled
1 red chilli, sliced
1 tbsp curry powder of your choice (we used madras)
2 x 400g cans chickpeas, drained, rinsed and patted dry
100g butter, softened
500-600g chunky white fish (such as cod, hake or pollock), cut into 4 equal chunks
400g spinach
handful of coriander, leaves picked and roughly chopped
large pinch of garam masala

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Toss the cauliflower in a large, shallow roasting tin with the cumin seeds, turmeric, some seasoning and half the oil until the cauliflower is coated and bright yellow. Roast for 15 mins, tossing a few times, until starting to char.
  • Meanwhile, peel the garlic, then put in a small food processor with the ginger, half the red chilli, the curry powder and some seasoning. Blitz to a paste. Stir the chickpeas, half the spice paste and most of the remaining oil through the cauliflower. Roast for 20 mins more, stirring once or twice.
  • While the cauliflower and chickpeas are roasting, mix the softened butter with the rest of the spice paste, and spread half all over the fish. When the cauliflower and chickpeas are ready, remove the pan from the oven and make four gaps in the mixture. Nestle the fish in the gaps, and dot all but 1 tbsp of the remaining spiced butter over the veg. Roast for 10-15 mins more.
  • Heat the remaining oil in a large pan over a high heat until very hot, then cook the spinach for 3-4 mins until wilted. Add the reserved 1 tbsp spiced butter and continue to cook for 1-2 mins more. Set aside until the fish is just cooked through, then sprinkle the coriander, garam masala and remaining red chilli over the traybake. Serve the traybake in the middle of the table with the spinach in a bowl alongside for everyone to help themselves.
