CHICKEN SPINACH BURGERS



Chicken spinach burgers image

Chicken spinach burgers have just 5 ingredients and are super juicy and flavorful!

1 lb. lean ground chicken (about 90% lean)
1/2 cup chopped fresh spinach
1/2 cup shredded mozzarella cheese
1 tablespoon pesto
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
For cooking: 1 tablespoon canola oil
For serving: Whole wheat burger buns, desired toppings (see notes)

Steps:

  • Add ground chicken, chopped spinach, mozzarella cheese, pesto, garlic, salt and black pepper to a medium bowl.
  • Using a fork and then your hands, mix until just combined.
  • Divide mixture into 4 equal parts and form burger patties that are about 1/2 inch thick.
  • Heat a large non-stick pan over medium-high heat and add canola oil.
  • Add burgers to pan and cook over medium-high heat for 5-6 minutes, then flip and continue cooking until done, about 5-6 minutes more. Keep an eye on your temperature and reduce the heat if they are starting to burn. If you are adding sliced cheese to your burgers, you can do that when you flip them, so it melts as they finish cooking.
  • Let rest for a few minutes before serving. Then add desired toppings and enjoy!

1 lb ground chicken
1/2 bag(s) baby spinach, washed
1/2 onion, diced
2 clove fresh garlic, minced
2 tsp ground cumin
1 tsp onion powder
1 tsp kosher salt
freshly ground pepper to taste
2-3 Tbsp good quality olive oil
4 hamburger buns or sandwich rolls
wax paper

Steps:

  • 1. Heat a skillet with a little olive oil over medium heat and add diced onion. Cook 4-5 minutes or until just getting soft. Add garlic, stir and cook about 1 minute. Add spinach and cook until wilted. Remove from heat and let cool.
  • 2. Tear two pieces of wax paper and place them on the counter. Make them wide enough to hold two patties each. Add spices to the ground chicken and mix well.
  • 3. When the spinach mixture is cool enough to handle, add it to the chicken and mix until incorporated. It's sticky! Divide into four portions.
  • 4. Place one portion of the chicken mixture on the wax paper and form into a patty, pressing to about 3/4 inch thick. Repeat with each of the other portions.
  • 5. Reheat your skillet and add 2 tablespoons olive oil. Place one patty into the skillet by turning over the wax paper and gently placing the patty. Don't hold it too high over the skillet or it will splatter. Repeat with the second, third and fourth patties. Cook in batches if necessary. Cook 4 minutes each side. Dress buns per preference (mayo, pesto, avacado, tomato, red onion), top each with a chicken patty and serve.

  • In a large bowl, combine the stuffing mix, broth, Italian seasoning, salt, pepper and half of the spinach (save remaining spinach for another use). Crumble turkey over mixture and mix well. Shape into four 3/4-in.-thick patties., Grill, uncovered, over medium-hot heat or broil 3-4 in. from the heat for 3-4 minutes on each side or until a thermometer reads 165° and juices run clear. If you plan on putting these on a grill, you should place them in the freezer for about an hour or so. They are very soft. I've also made these into little meatball appetizers and served my cucumber yogurt dressing (below) as a dip - Delicious!

1 lb ground turkey, 7% fat
2 cups fresh spinach, chopped (or use frozen chopped, but sqeeze it dry)
1 small onion, minced
1/2 cup portabella mushroom, diced
1/4 cup romano cheese
2 tablespoons provolone cheese, grated
1 large egg white, beaten
2 tablespoons roasted red peppers, diced
1 jalapeno pepper, diced
2 large garlic cloves, grated
1/2 teaspoon salt
1/4 teaspoon black pepper, ground

Steps:

  • Microwave spinach with a little water to soften, drain well and cool.
  • In a large bowl, mix ingredients from spinach to ground pepper. Add ground turkey, mix lightly with your hands - but don't over mix.
  • Cover and place bowl into refrigerator for about an hour, to blend flavors.
  • Remove and make turkey patties.
  • Heat a griddle or large skillet on medium heat.
  • Spray with a cooking spray.
  • Place turkey patties on griddle and cook for 3-5 minutes on each side.
  • If turkey patties begin to stick, add a little more cooking spray. Be careful not to overcook.
  • When patties are done - serve them on your favorite wheat bun with lettuce, tomato and cucumber yogurt dressing (below).
  • Enjoy!
  • Cucumber and yogurt dressing. - 2/3 cup nonfat plain yogurt (I prefer a Greek yogurt), 1/2 cup English cucumber - peeled and chopped, 2 tablespoons sliced green onion, 2 tablespoons 1% milk, 2 tablespoons fresh lime juice, 1 tablespoons light mayonnaise, 3/4 teaspoons kosher salt, 2 lg. cloves minced garlic, Pinch sugar (splenda). Combine all ingredients and chill 24 hours for flavors to blend.

1/4 cup chopped parsley
1 1/2 cups roughly chopped spinach
1/2 onion, finely diced
1 garlic clove, minced
1 teaspoon garlic powder
1 teaspoon dried basil
2 teaspoons dried thyme
salt, to taste
pepper, to taste

Steps:

  • Preheat the bbq on high.
  • Cut 5 squares of wax paper to make it easier to place the burgers on the grill.
  • In a large bowl, combine all of the spices then add the ground chicken mixing just until blended. Be careful not to over mix.
  • Divide the meat into 5 balls. Place the balls on the wax paper then lightly flatten and shape.
