This is a hearty stew of white beans, chicken and sausage. This recipe was developed for a 3 quart crock pot. If you use a larger one, you will need to double the ingredients. Serve with cornbread, green onion fans and a side salad.

1 (15 ounce) can white beans, undrained
1/2 cup vegetable juice or 1/2 cup tomato juice
2 medium carrots, scrubbed, sliced into 1/2 inch thick slices
2 celery ribs, cut into fourths
1 medium onion, chopped
2 garlic cloves, minced
2 bay leaves
1 teaspoon basil, crushed
1 teaspoon oregano, crushed
2 -3 frozen boneless skinless chicken thighs
8 ounces smoked turkey or 8 ounces chicken sausage
salt and pepper, to taste

Steps:

  • Combine the beans, tomato juice, carrots, celery, garlic, bay leaves, and spices.
  • Cut the sausages in half lengthwise and slice, stir into beans.
  • Place the frozen chicken thighs on top of the bean mixture.
  • Cover; cook on low-heat for 8 to 10 hours.
  • Remove bay leaves, stir, adjust seasonings as desired and serve.

2 teaspoons olive oil
12 ounces Italian turkey sausage, cut into 1 chunks (3 sausages)
12 ounces boneless skinless chicken breasts, cut into bite-sized pieces
1 (14 1/2 ounce) can chicken broth
2 tablespoons tomato paste
2 garlic cloves, mashed
5 -6 red potatoes, cubed (unpeeled)
10 ounces white mushrooms, quartered
2 stalks celery, finely chopped
2 chicken bouillon cubes
1 teaspoon pepper
3/4 teaspoon salt (or to taste)
2 teaspoons rosemary
1 head cauliflower, cored & cut into bite-sized pieces (about 4 cups)
1 tablespoon Worcestershire sauce
1/2 teaspoon Tabasco sauce (4 shakes)

Steps:

  • In a skillet, warm oil over medium heat, and sauté meat until browned and thoroughly cooked.
  • Drain off fat and set aside.
  • In the crock pot, whisk together the broth and tomato paste.
  • Add all remaining ingredients and meat to the crock pot and stir.
  • Cover and cook until meat and veggies are tender (6-8 hours on LOW or 3-4 hours on HIGH).
  • Stir well before serving.

1 tablespoon vegetable oil
1 onion, chopped
1 stalk celery, chopped
2 cloves garlic, very finely chopped
Two 28-ounce cans low-sodium diced tomatoes
One 15-ounce can low-sodium tomato sauce
One 2-pound roast or BBQ chicken, meat coarsely shredded (skin and bones discarded)
1 pound chopped or pulled BBQ pork
Scraped kernels from 4 ears fresh sweet corn (about 2 cups) or 2 cups frozen corn, defrosted
1 1/2 cups frozen butterbeans, defrosted
2 Idaho potatoes, peeled and cut into 1/2-inch cubes
Coarse kosher salt and freshly ground black pepper

Steps:

  • To prepare in a slow cooker: Heat the oil in a skillet over medium heat. Add the onions and celery and cook until the onions are soft and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Transfer to a slow cooker. Add the diced tomatoes and tomato sauce. Fill the tomato sauce can with water and add to the cooker, as well. Add the chicken, pork, corn, butterbeans and potatoes. Season with salt and pepper. Turn the cooker on high and cook for 4 hours, or cook on low for 8 hours. Taste and adjust for seasoning with salt and pepper.
  • To prepare on the stove: Heat the oil in a large heavy-duty pot over medium heat. Add the onions and celery and cook until the onions are soft and translucent, 3 to 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds. Add the diced tomatoes and tomato sauce. Fill the tomato sauce can with water and add to the pot, as well. Add the chicken, pork, corn, butterbeans and potatoes. Season with salt and pepper. Bring to a boil over high heat. Reduce the heat to simmer and cook uncovered, stirring often, until the potatoes and butterbeans are tender and the mixture is thick, about 45 minutes. Taste and adjust for seasoning with salt and pepper.

I like to serve my stew with good crusty sourdough bread, and then take the leftoveres to reheat at work for lunch!

3 boneless skinless chicken breasts, cut into 1-inch cubes
1 large onion, rough chopped into a 1-inch dice
3 large carrots, peeled and cut into 1-inch chunks
1 cup thickly sliced mushroom
2 celery ribs, including leaves, thickly sliced
10 baby red potatoes, quartered
1 cup frozen corn
2 garlic cloves, peeled and slightly smashed (left whole)
1 teaspoon thyme
1 teaspoon rosemary
1 teaspoon celery seed
1/2 teaspoon fresh ground pepper
2 bay leaves
4 cups chicken stock

Steps:

  • Combine all ingredients in the slow cooker and stir well.
  • Cover and cook on low 6-8 hours until chicken is done and vegetables are tender.
  • As you serve the stew, fish out the bay leaves and garlic cloves.

¼ cup white wine
6 cubes chicken bouillon
¼ cup dried onion flakes
½ teaspoon lemon pepper seasoning

¼ teaspoon dried thyme leaves
3 pounds turkey thigh meat, cubed

Steps:

  • Pour tomatoes and wine into slow cooker. Stir in bouillon cubes, onion flakes, lemon pepper, Italian seasoning, garlic powder, and thyme; add turkey.
  • Cover and cook on Low for 8 to 10 hours until the turkey meat pulls apart easily.

  • Preheat a large skillet with 2 tablespoons of oil. Over high heat, brown chicken breast cubes until lightly lightly golden brown. Remove the chicken and set aside. You may want to do this step in two or three batches, adding one tablespoon of oil each batch.
  • Add one more tablespoon of oil to the skillet. Cook chopped onions and garlic, constantly stirring, until golden brown. Remove the onions and set aside.
  • Add another tablespoon of oil to the skillet and cook sliced carrots and celery over high heat, constantly stirring, for about 2 minutes.
  • Toss chicken breasts, carrots, celery, onion, garlic, sweet peppers, and potatoes into the slow cooker. Add 3 tablespoons all-purpose flour to hot chicken stock and stir well to disperse the flour in the chicken stock. Pour the chicken stock into the pot. Cook on the lowest setting for about 6 hours. Add 1 teaspoon kosher salt, 1/2 teaspoon ground black pepper, one tablespoon of chopped scallions and one tablespoon of chopped dill 20 minutes before the stew is done and stir. Taste and add more salt if necessary.

  • Heat 1 tablespoon of oil in a large skillet set over medium-high heat. Cook the sausages until the are brown on all sides, about 1-2 minutes per side. They shouldn't be fully cooked at this point since they will continue to cook in the slow cooker. Transfer the sausages to a plate and set aside. Once they have cooled for a few minutes, slice them into bite-size pieces.
  • Pour off all but 1 tablespoon of the fat from the pan and add the onions. If you don't have enough fat in the pan add some olive oil instead. Cook the onions for 5-8 minutes, stirring often, until they start to soften and brown lightly. Stir in the garlic, tomato paste, thyme, and red pepper flakes. After about 1 minute and the onions are coated with the tomato paste, stir in the flour and cook, stirring, for another minute. Whisk in the wine, scraping up the brown bits from the bottom of the pan. Gradually whisk in 1 cup of the broth until no lumps of flour remain. Transfer the mixture to the slow cooker.
  • Stir the remaining 2 cups of broth into the onion mixture along with the bay leaves, beans, and sliced sausage. Cover and cook for 6-8 hours on low or 3-4 hours on high.
