TURKEY-WALNUT MEATLOAF
From 12 Best Foods Cookbook by Dana Jacobi, with a few tweaks from me. She says "Cooking ground turkey breast with a lavish amount of chopped raw vegetables plus finely ground walnuts instead of the usual bread filler produces a beautifully flavorful and moist meat loaf."

Steps:
- Preheat the oven to 350.
- Place the turkey, garlic, onion, carrot, celery, and parsley in a mixing bowl.
- Pulse the walnuts in a food processor until they are finely ground.
- Add nuts, egg, thyme, salt, and pepper to the bowl. Mix well.
- Pack the mixture firmly into a loaf pan. Spread the tomatoes over the top, and lay the bay leaves on top of the tomatoes. Arrange the bacon to cover the bay leaves.
- Bake 50 minutes, or until a thermometer registers 160^ and the loaf has pulled away from the edges of the pan.
- Cool 20 minutes and remove the bay leaves before serving.

MEATLOAF (GROUND TURKEY)
Our family New Years resolution is to eat healthier foods. I made this wonderful, flavorful turkey meatloaf for dinner--I couldn't find a recipe that really sounded good so I built off my classic meatloaf recipe. My non-veggie eating husband (well, he does eat anything potato and anything corn) loved it and my four year gobbled hers down and asked for more! I really hope that you enjoy this meatloaf as much as we did! **It is a large recipe because I always make extra so that my husband has something for lunch the next day at work.**

- Preheat oven to 350.
- Drain peas and rinse well with cold water. Put in food processor (or you can use a medium sized bowl and a fork to mash) with one tsp olive oil and blend until pureed. Also, mince carrots and onions and toast the bread. When making the bread crumbs, make sure the bread is completely cooled. I place it in a ziploc and rub it with my hands to crumble it.
- Combine turkey, 2 tbsp olive oil, egg whites and milk (I use my stand mixer), mixing until it is well blended.
- Add garlic powder, basil, thyme, and pepper blend well.
- Slowly add the carrots and onion, making sure that they mix throughout the meat mixture.
- Add the pureed peas, blend well.
- Slowly add in the bread crumbs and make sure that they are blended throughout.
- Spoon meat mixture into 8x8 glass pan.
- Bake for 45 minutes.
- Prepare the topping while it is baking: mix ketchup, mustard powder and brown sugar together in a bowl and set aside.
- Once the meatloaf has cooked for 45 minutes, remove it from the oven and drain any fat that may have come off the meat (I had very, very little). Cover the top with the ketchup mixture and place back in the oven for another 10 minutes.

TURKEY-SPINACH MEATLOAF

- Place garlic cloves in small saucepan, add enough olive oil to cover them, and place over very low heat. Cook about 40 minutes, until garlic is tender but not browned. Drain garlic, and reserve oil. While garlic cooks, remove and discard stems and heavy leaf ribs from spinach.
- Place onion in nonstick sauté pan over low heat. Cook until translucent, about 2 minutes. Add spinach leaves and salt, and stir until spinach wilts. Line a small baking sheet with several thicknesses of paper towel, and spread spinach mixture on towel and refrigerate to cool.
- Heat oven to 375 degrees. In a mixing bowl or bowl of an electric mixer combine turkey, thyme, pepper, cayenne and cooked garlic cloves; mix well.
- Remove spinach from refrigerator, and chop. Add to mixing bowl, and mix well by hand or on low speed by machine. Form into loaf shape.
- Heat a heavy skillet, preferably oven-proof. Add a little of the garlic oil and sear loaf top and bottom until lightly browned. Sides can be seared but only if you have a very large spatula to turn loaf easily. Place skillet in oven or transfer loaf to shallow baking dish, then place in oven. Bake about 50 minutes, until a thermometer registers 160 degrees. Remove from oven and serve, or refrigerate and serve cold. Reserve remaining garlic oil for another use.

- Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
- Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
- Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
- When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.
