CRANBERRY TURKEY MEATBALLS
Healthy cranberry turkey meatballs with apples, sage, and a homemade cranberry-orange sauce. A perfect Thanksgiving or Christmas appetizer!

Steps:
- Place a rack in the center of your oven and preheat the oven to 425 degrees F. Place an ovenproof baking rack on top of a large, rimmed baking sheet, then lightly coat with cooking spray. Set aside.
- In a large mixing bowl, combine the turkey, breadcrumbs, olive oil, egg, apple, sage, garlic powder, onion powder, salt, and pepper. With your hands or two forks, lightly mix to combine, being careful not to compact the meat.
- Roll the mixture into 1 1/2 to 2-inch balls, using a small scoop to help portion as desired.
- Arrange the meatballs on top of the prepared baking rack. Bake in the oven for 12-14 minutes, just until cooked through.
- Meanwhile, prepare the sauce. In a saucepan large enough to hold the meatballs, combine the cranberries, applesauce, maple syrup, orange zest, and orange juice. Heat over medium to warm through.
- Add the cooked meatballs to the sauce, then spoon the sauce over gently to coat. Transfer to a serving platter to enjoy immediately or place in a slow cooker set to the lowest heat to keep warm. Garnish with fresh parsley as desired and serve.

- In a large saucepan on medium heat, combine cranberry sauce, barbecue sauce, allspice and orange rind, whisking to blend. Stir in cubed turkey. Heat and put in a serving dish.

SLOW-COOKED TURKEY BREASTS WITH CRANBERRY SAUCE

- Place turkey breasts in a 5-qt. slow cooker. In a bowl, mix cranberry sauce, 1/2 cup water and soup mix. Pour half over turkey. Cook, covered, on low until a thermometer reads 165°, 4-6 hours. Remove turkey. Transfer cooking juices and remaining cranberry mixture to a large saucepan., When meat is cool enough to handle, shred with 2 forks. Return to slow cooker; keep warm. Meanwhile, bring cooking juices and cranberry mixture to a boil. Mix cornstarch and remaining water until smooth; gradually stir into cranberry mixture. Cook and stir until thickened, about 2 minutes. Serve with turkey.

- Combine sour cream, lemon juice, horseradish and salt in nonmetal bowl; blend well. Add uncooked turkey breast pieces. Toss to coat. Cover; marinate in refrigerator 2-24 hours. In shallow pan, combine bread crumbs and ground walnuts. Remove turkey from marinade. Roll in crumbs. Place on greased 10x15-inch pan. Drizzle melted margarine over turkey. Bake at 350° for 35 minutes or until golden brown. Serve warm or cold with Cranberry Dip. Cranberry Dip: Mix all ingredients.
