CLASSIC ITALIAN TURKEY MEATBALLS

1 cup plain breadcrumbs
1/2 cup finely grated Parmesan, plus more for serving
1/4 cup chopped fresh basil
1/4 cup chopped fresh Italian parsley
1/4 cup whole milk, at room temperature
1 tablespoon ketchup, optional
1 tablespoon tomato paste
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 large eggs, at room temperature
2 cloves garlic, minced
1 small onion, finely chopped
1 pound ground dark turkey meat
1 pound spicy Italian turkey sausage links, casings removed
Extra-virgin olive oil, for drizzling
1/4 cup extra-virgin olive oil
3 large cloves garlic, smashed and peeled
1 large onion, finely chopped 1 teaspoon kosher salt, plus more to season
1/2 teaspoon freshly ground black pepper, plus more to season
3/4 cup chopped fresh basil
2 teaspoons finely ground fennel seeds
2 teaspoons dried oregano
Two 28-ounce cans crushed tomatoes
1/2 cup low-sodium chicken broth, optional

Steps:

  • Preheat the oven to 400 degrees F.
  • For the meatballs: In a large bowl, combine the breadcrumbs, Parmesan, basil, parsley, milk, ketchup if using, tomato paste, salt, pepper, eggs, garlic and onions. Using a wooden spoon, stir to blend. Add the ground turkey and sausage meat. Using fingers, gently mix all the ingredients until thoroughly combined.
  • Using a 1-ounce cookie scoop or a small ice cream scoop, form the meat mixture into 1 1/2-inch balls (22 to 24 meatballs). Place the meatballs on a heavy nonstick baking sheet, spacing apart. Drizzle with olive oil and bake until cooked through, 15 minutes.
  • For the tomato sauce: Heat the olive oil in a large deep skillet with 2-inch-high sides over medium-high heat. Add the garlic, onions, salt and pepper. Cook for 5 to 6 minutes. Add 1/2 cup of the basil, the fennel, oregano and crushed tomatoes. Bring to a simmer. Cook over medium heat until the sauce thickens slightly, stirring occasionally, 15 to 20 minutes. Stir in the remaining 1/4 cup basil. Adjust the seasoning with more salt and pepper if desired.
  • Add the meatballs to the tomato sauce and simmer until the meatballs are heated through, about 10 minutes. Thin the sauce with chicken stock, 1/4 cup at a time, if needed.
  • Serve with grated Parmesan alongside.

Pasta or 1 package broccoli slaw

Steps:

  • Preheat oven to 400 degrees and line a cookie sheet with foil and lightly spray with non-stick cooking spray. Set aside.
  • Cook sauce first to let flavors blend as long as possible. In a large deep skillet over medium high heat warm the olive oil. Add the onions, garlic salt and pepper and cook until onion is limp and fragrant. Add 1/2 cup of the basil, fennel, oregano tomatoes brining to a simmer. Cook over medium heat stirring occasionally while preparing meatballs. Stir in remaining basil and wine (optional) when adding meatballs.
  • For the meatballs, in a large bowl blend together the breadcrumbs, parmesan cheese, basil, parsley, milk, tomato paste, salt, pepper, eggs, garlic and onions. Add the turkey meat and sausage gently mixing into the breadcrumb mix with your fingers until combined. Form the meat mixture into 1 1/2-inch balls (approximately 24). Place meatballs on prepared baking sheet and drizzle olive oil on top. Bake until cooked for 12-15 minutes. Once cooked add to sauce.
  • Serve with spaghetti noodles or for a carb-free option, steam or stir-fried broccoli slaw.

The meat mixture is softer than you might expect, thanks to the addition of ricotta, but sacrificing a perfectly round shape is worth it. You'll make these turkey meatballs so often you just might forget about your beef meatball recipe.

2 tablespoons canola oil
3/4 cup finely ground fresh breadcrumbs (from 3 to 4 slices white bread, crusts removed)

1 pound ground turkey (93/7 ratio)
1/2 cup whole milk ricotta cheese
2 tablespoons grated Parmesan
1 clove garlic, grated
1/4 cup packed parsley leaves, finely chopped (about 2 tablespoons chopped)
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper
1 large egg, lightly beaten

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
  • Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
  • Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.

It's tough to go wrong with spaghetti and meatballs, but I'm always up for a variation. This recipe from Ina Garten eschews the common beef for turkey instead. But while that's usually a terrible idea (because the way to go wrong with meatballs is to make them tough and dry), she keeps them interesting (and juicy) by adding in Italian sausage and finely chopped prosciutto.

1 1/2 cups (1-inch diced) crustless cubes of rustic bread, pulsed into breadcrumbs
1/3 cup whole milk
1 pound ground turkey
1/4 pound sweet Italian pork sausage, casings removed
2 ounces thinly sliced prosciutto, finely chopped
1/2 cup freshly grated aged Asiago cheese, plus more for serving
1/4 cup minced fresh parsley
1/2 teaspoon dried oregano
1/2 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
1 1/2 tablespoons good olive oil, plus extra for brushing the meatballs
1 egg, lightly beaten
4 cups marinara sauce
1 pound dried spaghetti

Steps:

  • Preheat the oven to 400 degrees Fahrenheit. Line a sheet pan with parchment paper. In a small bowl, combine the breadcrumbs and milk and let stand for 5 minutes.
  • In a large mixing bowl, combine the turkey, sausage, prosciutto, bread mixture, Asiago, parsley, oregano, red pepper flakes, 1/2 teaspoon salt, and 3/4 teaspoon pepper. Combine lightly, taking care not to over mix, then add the olive oil and egg and stir lightly to form the mixture.
  • Shape into 2-inch round meatballs and spread out on the sheet pan. Brush with olive oil and bake until tops are brown and meatballs are cooked though, 35-40 minutes.
  • Meanwhile, bring the marina sauce to a simmer. Add the cooked meatballs and bring to a simmer.
  • Cook the pasta in salted water until al dente, then divide amongst bowls. Top with meatballs and marinara sauce. Serve with more grated cheese.
