This turkey salad with grapes makes a delicious luncheon salad, and it is wonderful in sandwiches. Add toasted pecans for extra flavor and crunch.

1 cup seedless red grapes (sliced)
1 cup celery (diced)
1/2 cup green onions (chopped)
Optional: 3/4 cup pecans (coarsely broken or chopped)
3 to 4 cups cooked turkey (diced)
Optional: 1 tablespoon fresh parsley (chopped)
1 teaspoon ​​lemon juice
3/4 to 1 cup ​ mayonnaise
1/8 teaspoon black pepper (freshly ground)
Salt, to taste

Steps:

  • Gather the ingredients.
  • In a bowl, combine the sliced grapes, celery, green onion, pecans (if using), turkey, and parsley (if using). Toss to blend ingredients.
  • In another bowl, combine the ​lemon juice, 3/4 cup of the mayonnaise, and pepper; blend well.
  • Stir the mayonnaise mixture into the turkey mixture until blended, adding more mayonnaise if needed. Add salt, to taste.
  • Serve in sandwiches or on greens or romaine lettuce leaves for a lighter lunch salad.

2 bone-in turkey breast (5 to 6 pounds each)
3 cups uncooked tricolor spiral pasta
2 celery ribs, diced
6 green onions, chopped
1/2 cup diced green pepper
1-1/2 cups mayonnaise
3/4 cup packed brown sugar
1 tablespoon cider vinegar
1-1/2 teaspoons salt
1-1/2 teaspoons lemon juice
2 cups salted cashew halves

Steps:

  • Grill turkey, covered, over medium heat for 25-30 minutes on each side or until a thermometer reads 170°. Cool slightly. Cover and refrigerate until cool. Meanwhile, cook pasta according to package directions; drain and rinse in cold water., Remove skin from turkey; chop turkey and place in a large bowl. add the pasta, celery, onions and green pepper. In a small bowl, combine the mayonnaise, brown sugar, vinegar, salt and lemon juice; pour over pasta mixture and toss to coat. , Cover and refrigerate for at least 2 hours. Just before serving, stir in cashews.

2 cups cooked turkey, cut into bite-sized chunks, or more to taste
⅓ cup mayonnaise
1 tablespoon mayonnaise
3 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1 medium head Romaine lettuce, cut into bite-sized pieces
1 cup mixed salad greens
3 stalks celery, sliced
1 small red onion, finely sliced
¾ cup halved seedless red grapes
6 tablespoons olive oil
4 tablespoons red wine vinegar
1 pinch white sugar
salt and ground black pepper to taste
½ cup shelled salted peanuts, or more to taste

Steps:

  • Mix cooked turkey, 1/3 cup plus 1 tablespoon mayonnaise, mustard, and red wine vinegar together in a bowl and set aside.
  • Mix Romaine lettuce, salad greens, celery, red onion, grapes, olive oil, vinegar, sugar, salt, and pepper together in a large pretty serving bowl and toss to blend.
  • Make a depression in the center of the lettuce mixture in the serving bowl. Mound the chicken mixture in the center and sprinkle with peanuts.

1 1/2 lbs. California seedless grapes
1 quart celery, sliced
1 cup cashew pieces, roasted, salted
1/2 cup green onions, sliced
1/2 cup fresh parsley, chopped
1 1/2 cups mayonnaise
1/2 cup medium dry sherry
1/8 cup lemon juice
1/16 cup sugar
1/2 teaspoon salt
1 teaspoon pepper

Steps:

  • Mix together turkey, grapes, celery, cashews, onions and parsley. Add remaining ingredients and toss well. Serve with additional cashews as garnish.
  • If possible, add dressing at the last minute to keep the celery and cashews crunchy.

2 stalks celery, sliced
1/2 cup celery leaves, coarsely chopped, plus more whole leaves for garnish
1 crisp apple, such as Gala or Macintosh, cored and chopped
1 cup red seedless grapes, halved
1/2 cup pecans, toasted, and coarsely chopped
1/2 cup non-fat yogurt
2 tablespoons mayonnaise
1 teaspoon honey
1/4 teaspoon salt, plus more as needed
1 small celery root, peeled and cut into matchsticks
Freshly ground black pepper

Steps:

  • In a large bowl, gently toss the turkey, celery, celery leaves, apple, grapes, and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, and 1/4 teaspoon salt until well combined. Put the celery root in a small bowl, add 2 tablespoons of the dressing, and toss to coat completely. Add the remaining dressing to the turkey mixture, season with salt and pepper, and toss gently to evenly dress the salad.
  • To serve, spread the celery root evenly onto a serving platter, top with the dressed salad, garnish with celery leaves and serve immediately.

Olive oil

Steps:

Serve this turkey, grape and walnut salad for lunch. It provides protein, carbs and beneficial fats, and makes enough to serve two people over two days

450g baby potatoes
150g pot bio yogurt
1 tsp English mustard powder
1 lime, zested and juiced
1 red onion, finely chopped
400g pack turkey mini breast fillets
1 tsp rapeseed or olive oil
1 Romaine lettuce heart (200g), thickly sliced
1⁄2 x 85g pack watercress
2 green peppers, deseeded and diced
2 avocados, halved and sliced
150g black or red seedless grapes, halved
40g walnuts, broken into pieces

Steps:

  • Boil the potatoes for 12-15 mins until tender, then drain and leave to cool a little. Cut the potatoes into thick slices. Mix together the yogurt, mustard and lime zest. Toss the potatoes with 4 tbsp of the dressing and 3 tbsp of the onion.
  • Put the turkey in a medium bowl and toss with the oil, then cook in a non-stick frying pan over a medium heat for 10 mins, turning at least once until the turkey is cooked through.
  • When you're ready to serve, mix half the lettuce, watercress, half of the remaining onion and 1 of the peppers in a bowl. Top with half the potatoes, and slice and pile on half the turkey. Toss the avocado with a good squeeze of lime, then scatter half on top with half the grapes and half the walnuts. Spoon over half of the remaining dressing.
  • If packing this into lunchboxes, do the same with the remaining ingredients in the lunchboxes, but in reverse, so the green salad is at the top. Keep the dressing in a pot separately, to drizzle over just before eating. Will keep chilled for two days.

1 ½ cups mayonnaise
1 cup sour cream
1 tablespoon minced celery root

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 to 10 minutes, or until tender. Drain, and run under cold water to cool. Drain again, and transfer to a large bowl.
