SLOW-COOKER TURKEY PESTO LASAGNA
My cheesy, noodle-y lasagna makes any slow-cooker skeptic a believer. It's easy to prep while my kids nap, and dinner's ready when their dad walks in the door at night. We bring more pesto and marinara to the table for our resident sauce lovers. -Blair Lonergan, Rochelle, VA

- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on bottom and up sides of a greased 5-qt. slow cooker. Coat strips with cooking spray., In a large skillet, cook turkey and onion over medium heat 6-8 minutes or until turkey is no longer pink, breaking up turkey into crumbles; drain. Stir in Italian seasoning and salt., In a small bowl, mix 1 cup mozzarella cheese, ricotta cheese and pesto. In prepared slow cooker, layer a third of each of the following: marinara sauce, noodles (breaking noodles if necessary to fit), turkey mixture and cheese mixture. Repeat layers twice. Sprinkle with remaining mozzarella cheese., Cook, covered, on low until noodles are tender, 3-4 hours. Turn off slow cooker; remove insert. Let stand, uncovered, 30 minutes before serving. Using foil strips, remove lasagna to a platter. Serve with Parmesan cheese.

TURKEY PESTO LASAGNA (OAMC)
Pesto adds a kick to the creamy mozzarella - a perfect topping for this dish. To freeze: complete the dish up to the end of step 4. Cool completely, then freeze in the dish covered with plastic wrap and foil. Bake from frozen at 325F for 30 mins then increase the temp to 400F for another 30 mins until the centre of the dish has reached boiling point for 10 mins.

Steps:
- Heat the oven to 400°F Heat a deep non stick pan and stir fry the ground turkey for a few mins until lightly colored. Remove to a plate.
- Add the oil, cook the onion for 5 mins then return the ground turkey to the pan with the lemon zest, oregano, tomatoes and vinegar. Season and cook for 10 minutes.
- Soak the lasagna noodles in boililng water until soft. Layer the sheets of lasagna in an oven proof dish with the turkey sauce, half the mozzarella and half the pesto.
- Pour the cream over the top, and cover with the remaining mozzarella slices and pesto.
- Bake for 15-20 minutes Serve with a green salad.

TURKEY LASAGNA
Steps:
- Preheat the oven to 400 degrees F.
- Heat the olive oil in a large (10 to 12-inch) skillet. Add the onion and cook for 5 minutes over medium-low heat, until translucent. Add the garlic and cook for 1 more minute. Add the sausage and cook over medium-low heat, breaking it up with a fork, for 8 to 10 minutes, or until no longer pink. Add the tomatoes, tomato paste, 2 tablespoons of the parsley, the basil, 1 1/2 teaspoons of the salt, and 1/2 teaspoon pepper. Simmer, uncovered, over medium-low heat, for 15 to 20 minutes, until thickened.
- Meanwhile, fill a large bowl with the hottest tap water. Add the noodles and allow them to sit in the water for 20 minutes. Drain.
- In a medium bowl, combine the ricotta, goat cheese, 1 cup of Parmesan, the egg, the remaining 2 tablespoons of parsley, remaining 1/2 teaspoon salt, and 1/4 teaspoon pepper. Set aside.
- Ladle 1/3 of the sauce into a 9 by 12 by 2-inch rectangular baking dish, spreading the sauce over the bottom of the dish. Then add the layers as follows: half the pasta, half the mozzarella, half the ricotta, and one 1/3 of the sauce. Add the rest of the pasta, mozzarella, ricotta, and finally, sauce. Sprinkle with 1/4 cup of Parmesan. Bake for 30 minutes, until the sauce is bubbling.
EASY PESTO LASAGNE

- Heat oven to 180C/160C fan/gas 4. Place the pesto, half the mascarpone and 250ml water (or vegetable stock if you have some) in a pan. Heat and mix until smooth and bubbling. Add the spinach and peas and cook for a few more mins until the spinach has wilted and the peas thawed. Add the herbs and season.
- Place a third of the pesto mixture into a baking dish roughly 18 x 25cm. Top with 4 lasagne sheets, then repeat with 2 more layers of sauce and lasagne sheets, finishing with a layer of pasta. Mix enough milk into the remaining mascarpone to make a white sauce consistency, season, then pour over the top. Sprinkle with the Parmesan and pine nuts. Bake for 35-40 mins until golden brown on top and bubbling around the edges. Scatter over the reserved basil leaves and serve with a green salad, if you like.

LASAGNA WITH PESTO BECHAMEL AND TURKEY BOLOGNESE
A light and lively pasta dish which my twin sister and I who share a passion for cooking developed. It takes a bit of prep work but is well worth the effort. Leftovers if there are any can be very successfully frozen. We developed this recipe using a basic lasagna recipe taught to us by our old family friend from Bologna and lightened it up a bit and added a bit of zip.

Steps:
- Bolognese Pasta Sauce: In food processor or blender, puree onion, celery, carrot, and garlic.
- Cover bottom of heavy saucepan with olive oil, saute veggies in hot oil approximately 15 min.
- Add turkey and saute until done; season with S&P.
- Pour in white wine and deglaze until wine evaporates; pour in can of paste and stir in 4 cans of water.
- Add fresh parsley and simmer partially covered until thickened, approximately 1 hour.
- Pesto: Place all ingredients in blender or food processor and puree until smooth.
- Set aside.
- Bechamel: Melt butter in small saucepan, stir in flour and cook 5 minutes until mixture just starts to color.
- Pour in milk, S&P, and stir until thickened, approximately 10 minutes.
- Stir 1 cup pesto sauce into Bechamel.
- Assemble lasagna: (the secret is to apply thin layers of sauce), in a baking dish approximately 11 X 13 place: 1st layer: Bolognese sauce, 2nd layer: lasagna sheets, 3rd layer: Bechamel/pesto sauce, 4th layer: Bolognese sauce, 5th layer: parmesan cheese, Repeat layers 2 through 5 until baking pan is filled.
- Bake at 375 degrees for approximately 50 to 60 minutes covered with aluminum foil.
- NOTES: An option would be to layer with spinach, broccoli, zucchini, cauliflower, or any single or combination of vegetables along with the Bolognese meat sauce or a simple marinara sauce.
