Turkey Pastrami and Pasta Salad image

This recipe comes from the National Turkey Federation (who would think there is such a thing!) Cooking time is actually chilling time.

3/4 lb turkey pastrami, cut into 1/2 inch cubes
8 ounces rotini pasta, cooked and drained
1 (14 ounce) can artichoke hearts, drained and cut into quarters
1 cup carrot, chopped
1/2 cup chopped onion
1/2 cup chopped celery
1 (4 ounce) can black olives, drained and sliced
3 tablespoons olive oil
3 tablespoons white wine vinegar
1 1/2 teaspoons garlic, minced
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • In large bowl, combine pastrami, rotini, artichoke, carrots, onion, celery and olives.
  • In small bowl, combine oil, vinegar, garlic, salt and pepper.
  • Toss together with pastrami mixture and refrigerate for 1 hour before serving.

Smoked Turkey Pasta Salad with Cheddar and Hardboiled Eggs image

Toss penne with smoked turkey, sharp Cheddar, hard-boiled eggs and a creamy lemon dressing.

Number Of Ingredients 10

Kosher salt and freshly ground black pepper
1/3 cup mayonnaise
3 tablespoons sour cream
1 1/2 tablespoons fresh lemon juice
8 ounces dried penne
1 cup shredded sharp Cheddar
1 cup diced smoked turkey
2 hardboiled eggs, chopped
1/2 cup shredded carrots
1/4 cup thinly sliced celery

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk the mayonnaise, sour cream, lemon juice, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool. Add to the bowl with the dressing.
  • Add the Cheddar, turkey, eggs, carrots and celery to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

  • In large bowl, combine pastrami, rotini, artichoke, carrots, onion, celery and olives. In small bowl, combine oil, vinegar, garlic, salt and pepper. Toss together with pastrami mixture and refrigerate for 1 hour. Serve on lettuce leaves.

This is a dish I almost always make when I have leftover turkey. It's inexpensive, delicious and easy to prepare. Plus, my family loves it!

2 cups uncooked spiral pasta
1 cup chopped cooked turkey
1 cup chopped celery
1 medium red onion, chopped
1 medium green pepper, chopped
1 package (1 ounce) ranch dressing mix
1 cup sour cream
1 cup Miracle Whip
1 teaspoon garlic salt
1/2 cup slivered almonds
1 teaspoon paprika
Green pepper rings and tomato slices, optional

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a 2-1/2-qt. salad bowl. Add turkey, celery, onion and green pepper; toss to combine. , Combine dressing mix, sour cream, Miracle Whip and garlic salt. Add to pasta mixture and mix well. Sprinkle with almonds and paprika. Garnish with pepper rings and tomato slices if desired.
