Delicious side dish that I especially like to make with beef on special occasions. If you prefer, sauté mushrooms in olive oil instead of butter.

- Heat oven to 350°F.
- Sauté mushrooms in 1 to 2 tablespoons of butter.
- Dissolve beef cubes in hot water.
- Melt 4 tablespoons butter and blend with flour.
- Add cream, salt and pepper, and beef broth.
- Top with mixture of bread crumbs and cheese.
- Bake in buttered casserole for 30 minutes at 350°F.

My daughter fixed this for dinner for my DH and I when we returned home from a trip. She served it with garlic mashed potatoes but rice or noodles would be good also. Fast and delicious.

Steps:
- Heat the butter in a deep frying or sauté pan until sizzling, then add the mushrooms and fry for 4-5 mins until softened. Sprinkle over the flour and stir until a paste forms. Cook for a few more minutes.
- Splash in the wine or sherry and let it bubble for a minute, then stir in the stock and bring to the boil. Reduce the heat to a simmer and stir in the cream. Season, then stir in the turkey. Simmer until the turkey is heated through, then remove from the heat and stir in the parsley, if using. Serve with pasta, mash or rice.

TURKEY SANDWICH SUPREME
I don't remember wher I got this recipe, but I really like it. I have also used leftover turkey in place of the deli turkey slices.

Steps:
- Preheat oven to 350°.
- Slice off top of loaf of bread; set aside. Carefully hollow out loaf within 1 inch of sides and bottom (reserve removed bread for other use).
- Brush inside and inside of top of bread with dressing. Line bottom of shell with turkey. Toss together 1/2 cup of cheese, spinach, onion and tomatoes. Spoon over meat. Sprinkle with remaining cheese.
- Replace top. Wrap loaf in foil. Bake 1 hour; cool 10 minutes.
- Remove from foil and slice into wedges. Can be served hot or cold.
