EASY GROUND TURKEY LO MEIN



Easy Ground Turkey Lo Mein image

This lo mein can be on the table in no time and is packed with flavor without having to use those fancy sauces. The excess liquid will be soaked up by the noodles. Top with sriracha sauce to taste (optional).

1 (8 ounce) package dried lo mein noodles
4 teaspoons toasted sesame oil, divided
1 pound lean ground turkey
1 cup diced onion
1 ½ tablespoons minced garlic
1 (15 ounce) can low-sodium chicken broth
1 (8 ounce) can water chestnuts, drained and sliced
¼ cup low-sodium soy sauce
1 envelope onion soup mix
3 cups chopped celery, 1/4-inch pieces
1 cup sugar snap peas
¼ cup diced red bell pepper
1 (12 ounce) package fresh mung bean sprouts
1 pinch red pepper flakes

Steps:

  • Bring a large pot of water to a boil; cook noodles, stirring occasionally, until tender, about 6 minutes. Drain and toss with 1 teaspoon sesame oil.
  • Heat remaining sesame oil in a large saucepan over medium heat. Add turkey, onion, and garlic to the hot oil. Cook, stirring occasionally, until ground turkey is no longer pink, about 5 minutes. Drain excess grease and return to the pan.
  • Pour in chicken broth, water chestnuts, soy sauce, and onion soup mix. Stir until well combined. Add celery, snap peas, and bell pepper. Cook and stir until slightly softened, 3 to 5 minutes.
  • Add noodles and bean sprouts to the pan. Stir to combine and serve immediately, topped with red pepper flakes.

1 pound lean ground turkey
2 medium carrots, thinly sliced
1 medium onion, chopped
1/2 teaspoon garlic powder
2 packages (3 ounces each) chicken ramen noodles
1-1/2 cups water
6 cups shredded cabbage
1 cup frozen peas, thawed
1/4 cup reduced-sodium soy sauce

Steps:

  • In a large skillet, cook and crumble turkey with carrots, onion and garlic powder over medium-high heat meat is until no longer pink, 5-7 minutes., Break up noodles and add to skillet; stir in contents of seasoning packets and water. Bring to a boil. Reduce heat; simmer, covered, 3-5 minutes. Add remaining ingredients; cook and stir until cabbage is crisp-tender, 1-3 minutes.

8 ounces uncooked linguine
2 pounds turkey breast tenderloins, cut into 1/4-inch strips
2 tablespoons canola oil, divided
1-2/3 cups julienned sweet red, yellow and/or green peppers
1/3 cup chopped onion
1/2 pound sliced fresh mushrooms
2/3 cup stir-fry sauce

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet or wok, stir-fry turkey in batches in 1 tablespoon hot oil for 5-6 minutes or until no longer pink. Remove and keep warm., In the same pan, stir-fry peppers and onion in remaining oil for 4-5 minutes or until crisp-tender. Add mushrooms; stir-fry for 3-4 minutes or until vegetables are tender. Add turkey and stir-fry sauce; cook and stir for 2-3 minutes or until heated through. Drain linguine; add to turkey mixture and toss to coat.

I thought I would start out with one of my simple recipes. Here is an easy skillet meal to help use up all that leftover holiday turkey we all have. Of course, you can substitute chicken or pork also.

1 cup coarsely chopped onion
1 tablespoon vegetable oil or 1 tablespoon peanut oil
1 cup diagonally sliced celery
1 -2 clove garlic, minced
2 cups diced cooked turkey
1 (14 ounce) can Chinese vegetables, drained
1 cup chicken broth
1/2 cup frozen peas
2 tablespoons cornstarch
2 tablespoons cold water
1 -2 tablespoon oyster sauce
1 tablespoon soy sauce

Steps:

  • In a large skillet, cook onion in oil over medium heat about 5 minutes.
  • Add celery and garlic and cook 5 minutes more.
  • Add turkey, mixed vegetables, broth and peas; cover and cook 5 minutes.
  • Mix remaining ingredients together and add to skillet.
  • Turn heat up to medium high.
  • Cook, stirring constantly 2 to 3 minutes until sauce is boiling and thickened.
  • Serve over chow mein noodles with rice and additional soy sauce if desired.

6 dried black (shiitake) mushrooms
1/2 pound fully cooked smoked 97% fat-free turkey breast, cut into 1/2-inch cubes (1 1/2 cups)

1 package (about 7 ounces) fresh stir-fry noodles with soy sauce-flavored sauce
3/4 cup water
1 tablespoon oyster sauce
2 medium green onions, chopped (2 tablespoons)

Steps:

  • Soak mushrooms in hot water about 20 minutes or until soft; drain. Rinse with warm water; drain. Squeeze out excess moisture. Remove and discard stems, cut caps into thin strips.
  • Spray nonstick wok or 12-inch skillet with cooking spray; heat over medium-high heat. Add turkey; stir-fry about 1 minute or until brown. Add mushrooms, peas, contents of sauce packet from noodles, water and oyster sauce; stir until well mixed.
  • Rinse noodles under hot water to separate; drain. Add noodles to wok; stir-fry about 2 minutes or until heated through. Sprinkle with onions.

For either of these noodle options, you will need to boil and drain them before adding them to a stir-fry. If you’re lucky enough to find them, get the cooked, oiled lo mein noodles that are now readily available from Asian grocery stores. These don’t require pre-cooking, and can be added directly to the wok for stir-frying.
  • In a wok over high heat, add a couple tablespoons of oil to the wok, and add the garlic. After 10 seconds, add the cabbage and carrots. Stir-fry on high heat for a minute and add the wine in a circle around the perimeter of the wok.
  • Add the cooked noodles and the leftover turkey to the wok and mix well from the bottom up for about 30 seconds. If the noodles aren't coming apart, add about ¼ cup water to loosen them up a bit.
  • Add the soy sauce, dark soy sauce, sesame oil, and sugar. Stir-fry for 30 seconds, and add the scallions. Stir-fry for one more minute and serve.
