GRILLED TURKEY WITH SLAW



Grilled Turkey With Slaw image

1 tablespoon pickling spice
Kosher salt
1 1/2 pounds skinless, boneless turkey breast
2 tablespoons Worcestershire sauce
1 tablespoon extra-virgin olive oil
1/3 cup mayonnaise
1/4 cup ketchup
4 cups shredded coleslaw mix
4 multigrain dinner rolls

Steps:

  • Preheat a grill to medium. Put the pickling spice and 2 teaspoons salt in a spice grinder and pulse to coarsely grind. (Or pile on a cutting board and crush with the bottom of a small skillet.) Put the turkey in a large bowl and rub all over with the spice mixture. Add the Worcestershire sauce and olive oil and turn the meat to coat on all sides. Let sit 10 minutes at room temperature.
  • Meanwhile, whisk the mayonnaise and ketchup in another large bowl. Add the coleslaw mix and toss to coat.
  • Put the turkey on the grill, cover and cook until marked, about 5 minutes per side. Uncover, turn the meat and continue grilling until cooked through, about 5 more minutes per side. (A thermometer inserted into the thickest part should register 155 degrees F.)
  • Remove the turkey from the grill and let rest 5 minutes before slicing. Serve with the slaw and rolls.

5 fresh turkey bratwurst
5 bratwurst or hoagie buns, split
5 teaspoons honey mustard
1 1/4 cups sweet cabbage salad (from deli)

Steps:

  • Heat gas or charcoal grill. Place bratwurst on grill over medium heat. Cover grill; cook 6 to 8 minutes, turning occasionally, until bratwurst are no longer pink in center. During last 1 to 2 minutes of cooking time, place buns, cut sides down, on grill; cook until lightly toasted.
  • Spread 1 teaspoon mustard on each bun bottom. Top each with bratwurst and 1/4 cup cabbage salad; cover with bun tops.

1 (19 7/8 ounce) package bratwursts
1 large onion, halved and thinly sliced
1 (10 ounce) packaged shredded angel hair coleslaw mix
2 teaspoons caraway seeds
2 cups apple cider
1/2 cup thousand island dressing
2 tablespoons deli mustard with grated horseradish
1 tablespoon honey
vegetable oil cooking spray
hot dog buns or hoagie roll

Steps:

  • Pierce each brat with a fork, and place in a large saucepan. Top with onion and coleslaw mix; sprinkle with caraway seeds. Pour apple cider over cabbage mixture; bring to a boil. Cover, reduce heat to medium, and cook 20 minutes or until cabbage is tender. Remove brats, and set aside.
  • Drain cabbage mixture well, reserving 2 tablespoons cooking liquid. Discard remaining cooking liquid. Combine cabbage mixture, reserved cooking liquid, and Thousand Island dressing in a large bowl; toss to coat. Cover and chill.
  • Combine mustard and honey in a small bowl; set aside. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add brats to pan; cook about 6 minutes or until golden brown on all sides, turning often and basting with honey mixture. For grown up servings, place 1 brat in a bun with 1/3 cup slaw. For plain servings, server brats in bun without the slaw.

1 teaspoon agave syrup
1 tablespoon olive oil
1 tablespoon sesame oil
1 pound ground turkey
½ teaspoon salt
½ tablespoon ground black pepper
1 (8 ounce) package coleslaw mix
½ red bell pepper, diced
2 green onions, chopped, or more to taste
2 cloves garlic, minced
1 tablespoon sesame seeds

Steps:

  • Mix chipotle hot sauce, rice vinegar, soy sauce, ginger, and agave syrup together in a small bowl to make sauce.
  • Heat olive oil and sesame oil in a wok or large skillet over medium heat. Add ground turkey; cook, stirring to break up clumps, until juices run clear, about 6 minutes. Season with salt and pepper. Transfer to a bowl, reserving juices in the wok.
  • Combine coleslaw mix, red bell pepper, green onions, and garlic in the wok; cook and stir over medium heat until slaw is slightly wilted, 1 to 2 minutes. Add sauce; mix to combine, about 1 minute. Return turkey to the wok and stir until heated through, 2 to 3 minutes.
  • Sprinkle sesame seeds over slaw before serving.
