GROUND TURKEY SOUP WITH BEANS & SPINACH (20 MINUTES!)

Steps:
- Heat the oil in a large pot over medium-high heat. Brown the turkey with the onions, garlic, red pepper flakes,and pepper until the turkey is cooked through and then onions are translucent (about 7 minutes).
- Add the oregano, basil, tomatoes (with liquid), and beans. Stir to combine.
- Reduce heat to medium-low, add spinach and cover for about 2 minutes or until spinach is wilted. Stir to combine.
- Add broth, stir, and increase heat to medium. Continue to cook until heated through - about 5 minutes.
- Remove from heat, stir in Parmesan and serve.

Steps:
- Place white beans into a large container and cover with water; let soak 8 hours to overnight.
- Drain beans, reserving 2 cups soaking water.
- Heat oil in a large pot over medium heat. Add onion and carrots; cook and stir until tender, about 6 minutes. Stir in spinach; cook until wilted, about 2 minutes. Add beans, reserved soaking water, broth, garlic, and bay leaf. Simmer, covered, until beans are tender, about 1 hour.
- Discard bay leaf. Pour half the soup into a blender. Cover and hold lid down with a potholder; puree until smooth. Stir pureed soup back into the pot. Season with parsley, salt, and black pepper.

TURKEY SPINACH SOUP
I started out with a recipe for making Black Bean & Turkey Chili, but what I ended up with was an Italian style turkey spinach soup. I had a container of spinach that needed to be used (no one here really likes it in salads, except me) and this is what I came up with. Sure tasted good on a cold winter evening. This is also WW friendly at 3 points per serving (1 1/2 cups).

This is an adaptation of a white chicken chili recipe I read but didn't have the ingredients for. It's become something totally different, and my husband really loves it. Serving number based on a hungry husband. If using dried beans, soak overnight and pre-cook. Best served with warm, crusty bread. Mmmmm...

Steps:
- Saute onions in oil in a cast iron dutch oven, or any other pot, over medium heat until soft, about 5 minutes.
- Add turkey and cook, stirring and breaking up clumps, until browned.
- Add salt, pepper, cumin, garlic, basil (or whatever other dried herbs you have on hand), and red pepper flakes (I like it spicy, with plenty of garlic, but how much is totally up to you), and stir. Then, add flour and mix in thoroughly.
- Add chicken broth and stir, scraping up and bits that might've gotten stuck to the bottom of the pan.
- Add beans and spinach. The spinach won't fit at first (as it needs to cook down a bit), but just keep mixing it in to the rest of the hot ingredients until it's wilted.
- Once everything is thoroughly mixed, bring to a boil, then turn it down to simmer for about 30-45 minutes, stirring occasionally.
- Remove from heat and serve hot, with grated cheese for sprinkling and crusty bread, if you have some around. Yum!
