Tuna Melts With Avocado image

A tuna melt is protein-packed with flaked, white tuna and ripe avocado. These two ingredients go together wonderfully in this light recipe. The secret: quartered cherry tomatoes and shallots tossed together in lemon juice and layered upon Sargento® Ultra Thin® Swiss Cheese Slices toasted until melted between slices of crispy French bread. 2 1/2 tbsp. olive oil
2 tbsp. thinly sliced shallots
1 tbsp. Dijon mustard
1/4 tsp. black pepper
1/8 tsp. salt
1 (6 oz.) can solid white tuna in water, drained and flaked
1 1/2 tbsp. fresh lemon juice
1 ripe avocado
1 cup cherry tomatoes, quartered
8 slices Sargento® Ultra Thin® Swiss Cheese Slices
2 (6 oz.) pieces French bread, halved lengthwise and toasted

Steps:

  • Preheat broiler to high.
  • Combine first 6 ingredients in a medium bowl, stirring well to coat. Place juice in a small bowl. Peel, seed, and chop avocado. Add avocado to juice; toss. Add avocado mixture and tomatoes to tuna mixture; toss well to combine. Place cheese evenly over cut sides of bread, and broil for 3 minutes or until cheese is bubbly. Place 1 bread slice, cheese side up, on each of 4 plates, and divide tuna mixture evenly among bread slices.

3 (5 oz.) cans albacore tuna in water, drained
1 large ripe avocado, pitted
1 Tbsp. red onion, finely chopped
1-2 Tbsp. fresh parsley, finely chopped
2 Tbsp. mayonnaise
1 Tbsp. Dijon mustard
2 Tbsp. fresh lemon juice
6-8 slices crusty bakery style whole-grain bread
1-2 medium tomatoes, sliced
1 cup mild cheddar cheese, freshly grated
Kosher salt and black pepper, to taste

Steps:

  • Preheat the oven to 400 degrees F. Place bread slices on a parchment lined baking sheet and toast for 13-15 minutes until golden crisp, flipping halfway.
  • While the bread is toasting, add drained tuna and avocado to a bowl and mash with a fork breaking up any large chunks.
  • Add onion, parsley, mayonnaise, mustard, and lemon juice. Season with salt and pepper, to taste. Mix to combine.
  • Top each toast with tuna mixture, slice of tomato, and cheese. Broil for 3-4 minutes or until cheese has melted. Serve immediately.

4 slices whole grain bread
15 ounces white chunk albacore tuna ((3 cans))
3 1/2 tablespoons mayonnaise ((can use light, if desired))
1/4 teaspoon dried dill
1/4 teaspoon onion flakes
1/4 teaspoon garlic powder
1/4 teaspoon paprika
1 avocado ((peeled and sliced))
1 large tomato ((sliced))
4 sliced muenster cheese

Steps:

  • Lightly toast each slice of bread.
  • While the bread is toasting, make the tuna salad by combining the tuna, mayonnaise, dill, onion flakes, garlic powder, and paprika in a medium bowl.
  • Place the toasted bread on a baking sheet. Distribute the avocado slices among the 4 pieces of bread.
  • Place the tomato slices on top of the avocado.
  • Distribute the tuna salad on top of the tomato.
  • Place a slice of cheese on top of the tuna.
  • Place the baking sheet under the broiler on high for 3-4 minutes until the sandwich is hot and the cheese is melted.

2 (6 ounce) cans solid white tuna packed in water, drained and flaked
2 tablespoons finely chopped celery
1/2 cup mayonnaise (Hellman's)
2 teaspoons fresh lemon juice
4 slices rye bread
2 teaspoons unsalted butter
1 avocado, peeled, pit removed, thinly sliced, and lightly salted
1 cup shredded sharp cheddar cheese

Steps:

  • Place the chopped red onion in a small strainer; place strainer in a bowl of ice water; let sit for 10 minutes; drain onion and pat dry.
  • In a bowl, mix together the onion, tuna, celery, mayo, and lemon juice.
  • Season to taste with salt and pepper.
  • Preheat the broiler; lightly toast the bread, and spread each slice with butter.

2 scallions, finely chopped
1 small red onion, minced
1 small fresh jalapeno pepper, seeded and finely chopped
1 celery, finely chopped
1 small fuji apple, peeled, cored, and chopped
1 slightly firm avocado, pitted, peeled, and finely chopped
kosher salt
fresh ground black pepper
3 tablespoons extra virgin olive oil
2 teaspoons finely chopped cilantro
1 tablespoon fresh lime juice
1 teaspoon Dijon mustard
1 tablespoon white wine vinegar
1/2 teaspoon kosher salt
fresh ground black pepper
8 slices multigrain bread
1 tomatoes, cut into 1/2-inch slices
4 -6 slices swiss cheese
4 pickle spears
lime tortilla chips

Steps:

  • In a bowl, mix the tuna, scallions, onion, jalapeno, celery, and apple.
  • Add in the avocado and toss lightly, then season to taste with salt and pepper; set aside.
  • In a small bowl, whisk together the oil, cilantro, lime juice, mustard, vinegar, salt and pepper to taste.
  • Pour the dressing over the tuna mixture; toss to mix.
