An easy vegan chocolate cake recipe, made with basic ingredients and perfect for any occasion.

2 cups spelt or white flour
3/4 cup cocoa powder
1 tsp baking soda
1 tsp salt
1 cup mini chocolate chips, (optional)
1 1/2 cup sugar, (or xylitol for sugar free)
1/2 cup applesauce, (banana, or yogurt of choice)
1/2 cup oil, (almond butter, or allergy-friendly sub)
1 1/2 tbsp pure vanilla extract
1 1/2 cup water

Steps:

  • Preheat the oven to 350 F. Grease two 8-inch pans. Set aside. Stir together the flour, cocoa powder, baking soda, salt, optional chips, and sweetener in a bowl. If using almond butter, gently warm it until soft and easily stir-able. In a new bowl, whisk the oil or nut butter, applesauce or yogurt, water, and vanilla. Pour wet into dry and stir until just combined (don't over-mix). Pour into the pans.Bake on the center rack for 25 minutes or until batter has risen and a toothpick inserted into the center of the cakes comes out mostly clean. (I like to take them out when still a little undercooked, let cool, then set in the fridge overnight. This prevents overcooking, and the cakes firm up nicely as they sit.) If you can wait, I highly recommend not tasting until the next day... this cake is so much richer and sweeter after sitting for a day! When ready to frost, go around the sides with a knife, then invert each cake onto a large plate. Frost separately, then place one cake on top of the other if a double-layer cake is desired. Make our easy vegan chocolate sponge for a special occasion using dairy substitutes. It's finished with luscious 'buttercream' and seasonal fruits

150g dairy-free spread, plus extra for the tins
300ml dairy-free milk, we used oat milk
1 tbsp cider vinegar
300g self-raising flour
200g golden caster sugar
4 tbsp cocoa powder
1 tsp bicarbonate of soda
½ tsp vanilla extract
100g dairy-free dark chocolate
200g dairy-free spread
400g icing sugar
5 tbsp cocoa powder
1 tbsp dairy-free milk, such as oat milk
handful of fresh, seasonal fruits such as cherries, blackberries or figs

Steps:

  • Heat oven to 190C/170C fan/gas 5. Grease the base and sides of 2 x 20cm sandwich tins with dairy-free spread, then line the bases with baking parchment.
  • Put the dairy-free milk in a jug and add the vinegar - it will split but don't worry. Put all of the other cake ingredients into a large bowl, pour over the milk mixture and beat well until smooth. Divide the mixture between the prepared tins and bake for 25-30 mins or until a skewer inserted into the middle of the cakes comes out cleanly. Leave to cool in the tins for 10mins then turn out onto wire racks to cool completely.
  • To make the buttercream, put the chocolate into a heatproof bowl and melt in the microwave, stirring every 30 seconds. Leave the melted chocolate to cool for 5 minutes. Beat the dairy-free spread and icing sugar together with a wooden spoon then sift in the cocoa powder with a pinch of salt. Pour in the melted chocolate and dairy-free milk and keep mixing until smooth.
  • Sandwich the two cooled sponges together with half of the buttercream then pile the rest on top and down the sides. Decorate with the fresh fruit.

1/3 cup unsweetened cocoa powder

1 cup sugar
1/2 cup vegetable oil
1 cup cold water or 1 cup chilled brewed coffee
2 teaspoons vanilla extract
2 tablespoons cider vinegar
2 ounces unsweetened chocolate
1/4 cup peanut butter
3 -4 tablespoons water
1 teaspoon vanilla
1 cup confectioners' sugar

Steps:

  • Preheat oven to 375.
  • Oil an 8" square or round pan and dust with sifted cocoa.
  • Sift flour, cocoa, soda, salt and sugar.
  • In another bowl mix oil, water and vanilla.
  • Pour liquid into dry and mix till smooth.
  • Add vinegar and stir briefly.
  • Without wasting time, pour batter into pan and bake 25-30 minutes.
  • For frosting: melt chocolate in heavy pan on medium heat.
  • Beat together peanut butter, water& vanilla.
  • Beat in sugar then add melted chocolate.
  • Beat till smooth.
  • Spread on cooled cake.

It's official: the best vegan chocolate cake is also the easiest chocolate cake in the world, no dairy or stand mixer required!

Yield Makes one 8-or 9-inch layer cake or 24 cupcakes

Number Of Ingredients 9

2¼ cups organic all-purpose flour
2 cups organic cane sugar
1 cup organic unsweetened cocoa powder
2 teaspoons baking soda
½ teaspoon kosher salt
1 tablespoon organic vanilla extract
⅔ cup organic canola oil
2 teaspoons organic white vinegar
2 cups cold water

Steps:

  • Preheat the oven to 350°F. Butter and flour two 8- or 9-inch round cake pans, or place liners in 2 muffin pans for 24 cupcakes. Set aside.
  • In a large bowl, sift the dry ingredients together. Set aside.
  • In a medium bowl, mix the vanilla extract, oil, vinegar, and cold water.
  • Slowly whisk the wet ingredients into the dry ingredients, being careful not to overmix. The mixture will be quite wet, but this is okay.
  • Pour the batter into the prepared pans and bake until a tester inserted in the center comes out clean, about 30 minutes. For cupcakes, the baking time is 24 to 26 minutes.
  • Cool in the pans for 10 minutes, then invert onto a wire rack to cool.
