1 mango, peeled and chopped
1/2 onion, chopped fine
1/2 red bell pepper, chopped fine
1/2 orange bell pepper, chopped fine
1 large jalapeno, seeded, deveined, and minced
2 cloves garlic, minced
1/2 tomato, chopped
2 limes, juiced
3/4 cup minced cilantro leaves
1 tablespoon salt

Steps:

  • Toss and serve with chips or as an accompaniment to pork, chicken, or fish.

1 mango, peeled, and chopped
2 plum tomatoes, seeded and chopped
1/4 red onion, finely chopped
1 jalapeno, seeded and diced
3 tablespoon finely chopped fresh cilantro
1 clove garlic, chopped
Juice of 1 lime
Kosher salt

Steps:

  • Add the pineapple, mango, tomatoes, red onion, cilantro, garlic, lime juice, and salt to a bowl. Cover and let chill for at least 1 hour before serving so the flavors can marry together.

1 pineapple, cleaned and small diced
2 red onions, small diced
1 bunch green onions, chopped
2 limes, juiced
2 tablespoons kosher salt
1/4 teaspoon cayenne pepper

Steps:

  • Place the papaya, pineapple, red onions, green onions, lime juice, salt and cayenne pepper into a large bowl and mix well. Put in refrigerator until ready to use.

2 ounces cranberry-raspberry concentrate
4 ounces orange juice
2 ounces pink lemonade concentrate
1-ounce white vinegar
3 ounces seedless green grapes, cut in halves
2 nectarines, pitted and sliced
2 oranges, cut in sections
12 leaves fresh basil

Steps:

  • In a saucepan heat the cranberry-raspberry concentrate, orange juice, pink lemonade concentrate and the white vinegar. Finish the sauce by poaching the fruit in the sauce for 2 or 3 minutes until fruit is soft but not overcooked. Add salt and pepper to taste and garnish with fresh basil.

2 cups pineapple chunks (fresh pineapple is best but you can use canned)
1 tomatoes, seeded and chopped
1/2 red onion, chopped
1/2 sweet red pepper, chopped
1 red chili, seeds removed and chopped finely
1 avocado (I like the salsa without the avocado) (optional)
2 tablespoons cilantro, chopped
1/2 teaspoon lime peel, shredded finely
2 tablespoons lime juice
1 garlic clove, minced
pepper (optional)
salt (optional)

Steps:

  • Chop the pineapple into chunks and prepare the tomato, onion, sweet pepper, chilli and avocado (optional ingredient). Place them all into a mixing bowl.
  • Add the remaining ingredients and gently mix to combine.
  • Cover and chill until serving time.
  • Place on top of grilled or barbequed fish or chicken.

1/3 cup 1/4-inch pieces seeded English hothouse cucumber
1/3 cup 1/4-inch pieces red onion
3 tablespoons minced fresh cilantro
2 tablespoons minced fresh mint
2 tablespoons minced seeded jalapeño chili
2 tablespoons fresh lime juice
6 6-ounce sea bass fillets
Olive oil

Steps:

  • Combine first 10 ingredients in medium bowl; toss to blend. Season salsa with salt. Chill to blend flavors, at least 1 hour and up to 4 hours, tossing occasionally.
  • Prepare barbecue (medium-high heat). Brush fish with oil; sprinkle with salt and pepper. Grill until just opaque in center, about 5 minutes per side. Transfer to plates. Top with salsa and serve.

3 cups mixed diced mango and papaya
1 cup diced fresh tomato
1 cup finely diced red bell pepper
1 1/2 cups diced red onion
1/2 jalapeno pepper, seeds removed, finely chopped
2 teaspoons ground cumin
2 tablespoons extra-virgin olive oil
2 1/2 tablespoons red-wine vinegar
6 tablespoons freshly squeezed lime juice (do not use prepared lime juice)
2 tablespoons freshly squeezed lemon juice
1 teaspoon freshly ground black pepper
Tabasco sauce, to taste
1 cup loosely packed fresh cilantro leaves

Steps:

  • Combine all ingredients except cilantro in a large nonreactive bowl.
  • Coarsely chop the cilantro with a sharp knife. Mix into the salsa. Toss thoroughly and let sit for 1 or 2 hours. Serve at room temperature or cold; salsa will keep in the refrigerator for up to a week.
