ITALIAN MIXED SUB (HOT OR COLD)
I used to run a small italian restaurant and this was our most popular sub. Some like it served as a cold sub, and others prefer it baked until the cheese melts and the roll is toasty. Either way, it's delicious.

Steps:
- Slice sub rolls all the way through& sprinkle each inside half with oil& vinegar mixture (or bottled italian dressing).
- Spread a little mayo on top of that& add your lettuce, tomato& onion& roasted peppers on the bottom half.
- Layer your meats on top of each other (fold each slice to fit on the roll) and top with cheese.
- Eat cold or put in 450° oven on a cookie sheet until cheese melts& rolls are lightly browned.

- Soak the onion slices in a large bowl of cold water, 15 minutes.
- Meanwhile, split the bread lengthwise, then pull out some of the bread from the inside. Drizzle 2 tablespoons each vinegar and olive oil on the bottom half. Season with salt and pepper.
- Layer the cheese and meat on the bottom half of the bread. Drain the onion and pat dry. Top the meat with the onion, lettuce, pepperoncini (if using) and tomatoes. Drizzle with 2 tablespoons each vinegar and olive oil and sprinkle with the oregano. Season generously with salt and pepper.
- Drizzle the cut side of the bread top with the remaining 1 tablespoon each vinegar and olive oil, then place on top of the sandwich. Cut into 4 pieces.
HOT ITALIAN GIARDINIERA
This is Italian giardiniera. It is wonderful on Chicago style Italian beef sandwiches, sausage sandwiches, French dips, pastas or even as a pizza topping. You can even snack on it as is if you choose. Once you taste it you will figure out what you prefer to use it on.

- Place into a bowl the green and red peppers, jalapenos, celery, carrots, onion, and cauliflower. Stir in salt, and fill with enough cold water to cover. Place plastic wrap or aluminum foil over the bowl, and refrigerate overnight.

- Preheat oven to 350º. Cut rolls horizontally in half; place roll bottoms in a greased 11x7-in. baking dish. Mix mayonnaise and pesto until combined. Spread over cut sides of rolls. Layer bottoms with mozzarella cheese, ham, salami, pastrami, giardiniera, shredded Parmesan cheese, basil leaves and red onion. - To make the vinaigrette, in a small bowl, whisk together the olive oil, red wine vinegar, crushed red pepper flakes, basil, and oregano. Set aside.
- To make the sub sandwiches, cut buns in half (horizontally), while still leaving the two halves intact. Remove some of the interior bread on the bottom and top half of each sub bun to create a little valley for the sub ingredients.
- Brush the interior of each bun with the vinaigrette (reserve a little for drizzling over the tomatoes).
- On top of each bottom bun, layer on provolone, mortadella, capocolla, salami, lettuce, red onion, banana peppers and tomato. Brush over remaining vinaigrette and sprinkle with a pinch each of salt and black pepper. Place the top buns over top to form the subs. Cut each sub in half and enjoy!
