TROPICAL UPSIDE-DOWN CAKE
Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Generously butter a 13 by 9-inch baking pan.
- Heat 4 tablespoons of the butter in a large skillet over medium heat. Add the mango, pineapple, brown sugar, and rum. Cook, stirring often, until the sugar is melted and bubbling. Cool until tepid.
- Sift together the flour, baking powder, ginger, and salt and set aside. Beat the remaining 8 tablespoons of butter and the sugar in a large bowl with a hand-held electric mixer at high speed until light and fluffy, about 3 minutes. Beat in the eggs, 1 at a time, then the vanilla. On low speed, add the flour in 3 additions, alternating with 2 additions of the milk, and beat until smooth, scraping down the sides of the bowl often with a rubber spatula.
- Arrange the fruit in a single layer in the pan, and pour the syrup over all. Sprinkle with the pecans. Spread the batter evenly over the fruit.
- Bake until a toothpick inserted in the center of the cake comes out clean, about 35 minutes. Cool for 10 minutes on a wire rack. Invert and unmold onto a large serving platter. (If any pieces of fruit stay in the pan, just remove them and arrange them in their place on the cake.) Pour any juices in the pan over the cake. Serve warm or completely cooled, with the ice cream.
HAWAIIAN PINEAPPLE UPSIDE DOWN CAKE
On my way to a Hawaiian-themed party, all I could think of was Pineapple Upside Down Cake. The recipes did not seem Hawaiian enough. The additions of coconut, banana and macadamia nuts brought the tropics to the recipe. I can't tell you how many people raved at the party. The whole cake is gone.

- Preheat an oven to 350 degrees F (175 degrees C).
- Pour the melted butter into a 9x13-inch baking dish.
- Sprinkle the brown sugar evenly over the butter.
- Arrange 8 pineapple rings in two rows in the baking dish.
- Sprinkle the macadamia nuts, half of the flaked coconut, and 2 chopped pineapple slices between the rows of pineapple rings.
- Place a maraschino cherry in each pineapple ring, then scatter the remaining cherries over the coconut mixture. Set baking dish aside.
- Whisk together the pineapple juice, coconut water, vegetable oil, and eggs in a large bowl. Stir in the mashed banana, yellow cake mix, and remaining flaked coconut until well blended.
- Slowly pour the batter into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes, then run a paring knife between the cake and the edge of the pan.
- Cover the cake pan with a large serving plate, and invert it to tip the cake out of the pan and onto the plate with the pineapple slices showing.

- Heat oven to 350°F (325°F for dark or nonstick pan). In 13x9-inch pan, melt butter in oven. Sprinkle brown sugar evenly over butter. Arrange pineapple slices on brown sugar. Place cherry in center of each pineapple slice, and arrange remaining cherries around slices; press gently into brown sugar.
- Add enough water to reserved pineapple juice to measure 1 cup. Make cake batter as directed on box, substituting pineapple juice mixture for the water. Pour batter over pineapple and cherries.

- Heat the oven to 180C/160C fan/gas 4. Butter a 20cm square or 22cm round cake tin. Beat 50g of the butter with the brown sugar, then spread into the base and halfway up the sides of the prepared tin. Cut one of the pineapple rings into quarters, then arrange the whole rings in the tin, putting a cherry in the centre of each. Put a pineapple ring quarter into each corner.
- To make the sponge, tip the butter, sugar, flour, desiccated coconut, ½ tsp fine sea salt, most of the lime zest and the eggs into a large bowl. Beat together using an electric whisk until smooth and creamy. Spoon the batter over the pineapple and level with the back of a spoon. Bake for 35-40 mins. Leave to cool in the tin for 5 mins, then turn out onto a cake board or serving plate.
- Bring the reserved pineapple syrup to the boil in a medium pan, then stir in the coconut rum (if using), remaining butter and the lime juice. Leave to cool slightly. Drizzle over the cake, then scatter over the coconut flakes and remaining lime zest. Serve with whipped cream or coconut yogurt, if you like. Will keep in an airtight container for up to five days.

TROPICAL PINEAPPLE UPSIDE DOWN CAKE

- SPRINGFORM PAN: Grease a 9-inch springform pan generously and set aside.
- TOPPING: In a small saucepan over medium heat, add butter and brown sugar. Stir until the sugar is almost melted. Add rum and continue stirring until completely melted.
- Pour it into the greased pan. Place pineapple slices at the bottom as well as on the side before adding a maraschino cherry in the middle of each ring (add the ones on the sides later); set aside.
- Preheat oven to 350ºF/180ºC
- BATTER: In a bowl, add flour, baking powder, baking soda and ground sea salt. Whisk the ingredients until well blended; set aside.
- In the bowl of a stand mixer, add sugar and butter. With the paddle attachment on, process until creamy. Add one egg at a time, mixing well after each addition. Add rum and vanilla extract; combine until blended.
- Add half dry ingredients, half the buttermilk and half sour cream. Process until just combined on low speed before increasing to speed 3. Repeat with the remaining dry ingredients, buttermilk and sour cream: process the same way.
- Add sweetened shredded coconut, clean the sides of the bowl and process until blended.
- Pour the batter over the fruits and level it out. Place the maraschino cherries on the sides and with an angled spatula, push batter towards the fruits to secure them.
- Transfer to the preheated oven and bake for 45 to 50 minutes or until a cake tester inserted in the center comes out clean with a few crumbs.
- Remove from the heat and let it sit for 1 to 1 ½ hours.
- Using the dull side, run a spreader knife around the edges just to be sure it's not sticking to the sides before inverting the springform onto a serving plate. Unhook the latch and gently remove the springform pan.
