9 cups day-old cubed French bread
1 cup semisweet chocolate chips
1/2 cup dark or milk chocolate chips
1 cup granulated sugar
2/3 cup brown sugar
1/2 cup unsweetened cocoa powder¹
4 large eggs
12 oz can evaporated milk²
1/2 cup half-and-half³
1 tablespoon vanilla extract

Steps:

  • Lightly grease a medium (4-5 quart) crock pot.
  • Add bread to crock pot.
  • Top with chocolate chips.
  • In a large bowl, whisk together sugars, cocoa powder, eggs, milk, half-and-half, and vanilla. It's ok if it's a little lumpy, but you don't want big piecies of cocoa powder.
  • Pour milk mixture over bread, gently pressing bread down as needed.
  • Place a thin cotton towel over the top of the slow cooker.
  • Cover, and cook on low for about 3-3 1/2 hours.

3 tablespoons unsalted butter
4 1/2 ounces semisweet chocolate (no more than 62 percent cacao), finely chopped
1 ounce unsweetened chocolate, finely chopped
3 cups whole milk
1 cup sugar
1/4 cup Dutch-process cocoa powder
3 tablespoons cornstarch
1/8 teaspoon fine sea salt
3 large eggs plus 1 egg yolk
1/4 cup heavy cream
1 tablespoon dark rum
1 teaspoon pure vanilla extract

Steps:

  • Melt the butter in a heatproof bowl over a saucepan of hot (not simmering) water. Add the chocolates and stir until melted and smooth. Remove the bowl from the saucepan.
  • Heat the milk and 1/3 cup of the sugar in a saucepan over medium heat until it is steaming.
  • Whisk the remaining 2/3 cup sugar, the cocoa, cornstarch and salt in a medium bowl. Whisk in the eggs, egg yolk and cream. Gradually whisk in half of the hot milk mixture, then pour into the saucepan with the remaining milk mixture, whisking constantly. Bring to a boil, whisking oftenand scraping the side of the saucepan. Reduce the heat to low and let bubble for 30 seconds.
  • Remove the saucepan from the heat. Strain the pudding through a sieve into a medium bowl. Whisk in the melted chocolate mixture, rum and vanilla. Spoon the pudding into 6 jars or bowls. Cover each with plastic wrap, pressing it directly on the surface and piercing it a few times with the tip of a small knife. (If you like a skin on your pudding, do not cover.) Let the pudding cool at room temperature until tepid, about 1 hour, then refrigerate until chilled, at least 2 hours. (The pudding can be refrigerated for up to 3 days.) Remove the plastic wrap and top with whipped cream and shaved chocolate.

1 cup packed light brown sugar
3 large eggs

1 pound egg bread or challah, cubed
SAUCE:
1/2 cup heavy whipping cream
1 large egg yolk
1/2 cup packed light brown sugar
1/8 teaspoon salt
2 tablespoons butter
1/4 cup chopped pecans, toasted
1/4 cup flaked coconut, toasted
2 to 3 teaspoons brandy, optional
SWEETENED WHIPPED CREAM:
3/4 cup heavy whipping cream
2 tablespoons confectioners' sugar
1 to 2 tablespoons brandy, optional

Steps:

  • Preheat oven to 350°. Grease a 9-in. springform pan with 1 tablespoon butter. Cube remaining butter; place in a small saucepan. Add chocolate chips and brown sugar. Cook and stir over medium heat until sugar is dissolved. Remove from heat., In a large bowl, whisk eggs, milk, vanilla, espresso powder and salt. Gently stir in bread; let stand until bread is softened, about 15 minutes. Fold in chocolate mixture. Transfer to prepared pan. Bake, uncovered, until a knife inserted in center comes out clean, 45-55 minutes. Add confectioners' sugar and, if desired, brandy; beat until soft peaks form., Loosen sides of pan with a knife. Carefully run a knife around edge of springform pan to loosen; remove rim from pan. 1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, chopped, divided
1 cup COOL WHIP Whipped Topping (Do not thaw.)

Steps:

  • Heat oven to 350°F.
  • Place bread in 8-inch square baking dish sprayed with cooking spray.
  • Whisk eggs and milk in medium bowl until blended. Add dry pudding mix; beat 2 min. Pour over bread; sprinkle with 1/2 cup chopped chocolate.
  • Bake 30 min. or until center is almost set. Cool slightly.

6 ounces stale French bread
8 tablespoons melted butter
1 cup coarsley chopped walnuts
8 ounces semisweet chocolate, chopped into 1/2 inch chunks
4 eggs
1 cup sugar
1/2 cup usweetened cocoa, sifted
1 pinch salt
2 cups chocolate milk
1/2 teaspoon vanilla extract

Steps:

  • Tear the bread into chunks approximately 1 inch square.
  • Toss them in a bowl with the melted butter, walnuts, and chocolate chunks.
  • Spread the mixture in a buttered 9 x 13 x 2 baking dish.
  • Beat the eggs slightly.
  • Beat in the sugar, cocoa, salt, chocolate milk, and vanilla.
  • Pour this mixture over the bread.
  • Let it stand for at least 1/2 hour.
  • With a broad spatula, occasionally push the bread down into the liquid as it soaks.

1 cup heavy cream
1 cup milk
48 jarred wild cherries, such as Amarena Fabbri, plus 1/2 cup liquid from the jar
1/2 cup maple syrup
Pinch fine salt
5 large eggs
1 cup dark chocolate (63 percent)
1 baguette, medium diced
1 cup cold heavy cream
2 tablespoons brandy
2 tablespoons granulated sugar

Steps:

  • For the pudding: Preheat the oven to 350 degrees F.
  • In a medium pot add the cream, milk, liquid from the cherries, maple syrup and salt and bring to a boil.
  • In a separate bowl crack and whisk the eggs. In a larger bowl add the dark chocolate.
  • Pour the warm liquid into the dark chocolate and whisk until the chocolate has melted. Slowly whisk in the eggs. Mix in the diced baguette and let it sit for 30 minutes.
  • Place a cherry into each of eight 4-ounce ramekins, then fill the ramekins with the bread pudding mixture.
  • Place ramekins on a baking sheet and bake for 30 minutes.
  • For the brandy whipped cream: Whip the cream, brandy and granulated sugar until it holds stiff peaks. Serve the puddings topped with the cream.

1 cup orange juice, fresh or store-bought

Steps:

  • For the pudding: Preheat the oven to 350 degrees F. Lightly spray a 2-quart baking dish with nonstick cooking spray.
  • Whisk together the eggs, milk, cream, granulated sugar, vanilla and salt in a large bowl. Pour in the bread and chocolate chips. Toss until the bread is coated on all sides and the chocolate is distributed. Pour into the prepared baking dish. Bake until puffed and golden brown, 45 to 50 minutes.
  • For the sauce: Meanwhile, place a small saucepot over medium-high heat. Set aside 1 tablespoon of the orange juice. Pour the remaining orange juice and sugars into the saucepot and whisk until combined. Bring to a simmer and simmer, whisking occasionally, until the sugars dissolve, about 10 minutes.
  • Whisk together the reserved orange juice and cornstarch in a small bowl. Pour into the sauce and whisk until combined. Cook until the sauce becomes syrupy, about 5 minutes. Stir in the orange zest. The sauce will thicken more as it cools. Pour the warm sauce over the pudding and serve.

3 ounces white chocolate, chopped

Steps:

  • In a mixing bowl, whisk together the sugar, cocoa, cornstarch, and salt. In a thin stream, pour in the milk whisking until smooth. In a thin stream, add in the half-and-half and whisk until smooth.
  • Pour the mixture through a fine sieve or chinois into a saucepan. Over medium heat, whisking the mixture constantly, bring to a boil. Boil gently 2 minutes. Turn off the heat and stir in the bittersweet chocolate and vanilla extract. Transfer the custard to a mixing bowl.
  • Fill a large bowl with ice cubes, rest the mixing bowl on top, and add cold water to cover the ice cubes. Let the mixture cool, stirring frequently with a rubber spatula, about 15 minutes.
  • Fold in the white chocolate and pour the mixture into 1-cup ramekins, cups or mugs.
  • Refrigerate until well chilled. Serve cold with dollops of whipped cream.

I had a bunch of chocolate cake doughnuts that were going stale and I needed a good use for them. I decided to try a bread pudding type of recipe, and when I was unable to find a recipe for what I wanted, I whipped this up. It is dense and pudding-like with little sweet pockets of melted milk chocolate. I might have to let some more doughnuts go stale so I can make it again. You might want to add a little salt (1/4 teaspoon), but I liked it without.

Steps:

  • Generously butter a 2 1/2- to 3-quart soufflé dish. Put bread in dish.
  • Heat half-and-half, sugar, and salt in a 2-quart saucepan over moderate heat, stirring, until sugar is dissolved and mixture is hot but not boiling.
