Steps:
- Preheat oven to 400°. Lightly grease a baking sheet or line with parchment paper.
- Sprinkle lime juice on both sides of fish, then season both sides with salt and pepper. Stir together tortilla chips and cayenne on a plate. Beat egg in a bowl. Dip each fillet in egg, then roll in chips. Place each coated fillet on prepared baking sheet.
- Bake for 15-17 minutes, or until fish flakes.
- While fish is baking, make tartar sauce: Mix together mayonnaise, jalapeño, garlic, cilantro, and lime juice. Season to taste with salt. Serve with cooked fish.

- Mix mayo and zest in medium bowl. Place tostada crumbs in pie plate. Dip fish fillets, 1 at a time, in mayo mixture then in tostada crumbs, turning to evenly coat both sides of each fillet with mayo mixture, then crumbs.
- Heat large heavy nonstick skillet sprayed on medium heat. Add fish, in batches; cook 4 to 5 min. on each side or until fish flakes easily with fork. Meanwhile, combine remaining ingredients.
- Serve fish topped with radish salad.

TORTILLA CRUSTED TILAPIA
I'm not fond of fish, but even I like this dish. Tilapia is mild, and the spicy crust is very appealing. I like to make the crumb crust in bulk and freeze in meal sized amounts. Then this becomes a super quick weeknight meal.

- Preheat oven to 375°F Coat a baking sheet with cooking spray.
- Place tortilla pieces, pepper, lime juice, cilantro and spices in blender. Pulse until the mixture is uniform small crumbs. Spread on plate.
- Beat egg in shallow dish.
- Dip each fillet in egg, then in crumbs, patting crumbs to adhere. Place on baking sheet.
- Bake until fish flakes, about 15 minutes depending on thickness of fillets.

- Combine the flour, vegetable oil and salt in a bowl. Pour over 150ml warm water and knead to bring the mixture together. Remove from the bowl and knead on a lightly floured work surface for around 5 mins until you make a soft, smooth ball of dough. Cover with a clean tea towel and rest for at least 15 mins before rolling out.
- Cut the dough into 6 equal pieces (about 75g each). Roll out each ball of dough as thinly as possible on a floured work surface. They should make rounds about 20 cm wide, 2mm thick.
- Heat a large frying pan over a medium-high heat. Cook the tortillas for 1-2 mins on each side until golden brown and toasted. Wrap them in foil and cover in a tea towel to keep warm, while you cook the rest. Keeps for two days well wrapped, or cool, wrap and freeze for up to three months.

- Prepare 3 dishes suitable for breading. Place the flour in the first. In the second, whisk together eggs and water. In the third, mix together crushed tortilla chips, paprika, cayenne, cumin, garlic powder, and onion powder. Season crumbs to taste with salt (this will depend on how salty your chips are). In a bowl, whisk together eggs and 1 tablespoon lime juice.
- In a large skillet over medium high heat, warm 1/4 cup oil until shimmering (enough oil to coat the bottom of the pan). Add 2 breaded fillets to the pan and cook until fish is cooked through and breading is golden, about 4-5 minutes per side. (Cooking time will vary by the thickness of your fillets. The USDA recommends an internal cooking temperature of 145 degrees F for fish, or until opaque.)
- Preheat oven to 400 degrees F. Line a baking sheet with foil and lightly oil it. Place the breaded tilapia in a single layer and spray the tops with vegetable oil. (I use an oil mister.)
- Spray breaded fillets on each side with vegetable oil. Air fry in single-layer batches at 400 degrees F, until the thickest part of the fillets register 145 degrees F and the breading is lightly-browned (about 10-12 minutes total).
