There's an amazing Italian grocery store near me, which has some amazing pasta salads. They are not cheap, but they are delicious. My favorite one is the Gorgonzola and prosciutto pasta salad. This is my clone of it and it tastes exactly like theirs when tasted side by side.

2 ounces prosciutto
1 pound frozen tortellini
½ cup extra-virgin olive oil
¼ cup white wine vinegar
2 large cloves garlic, minced
1 ½ teaspoons dried basil
1 teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon ground black pepper
½ cup finely crumbled Gorgonzola cheese
¼ cup minced green bell pepper
¼ cup minced red bell pepper
¼ cup minced red onion

Steps:

  • Slice prosciutto into strips that are 1 inch long and 1/4 inch wide.
  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, stirring occasionally, until the tortellini float to the top and the filling is hot, about 3 minutes. Drain and cool under cold running water to stop the cooking process.
  • Mix oil, vinegar, garlic, basil, oregano, salt, and pepper together in a jar. Put the lid on the jar and shake into an emulsion.
  • Place tortellini, prosciutto, Gorgonzola cheese, bell peppers, and onion in a large bowl. Pour the vinaigrette over the top and toss lightly with 2 large spoons. Enjoy immediately or allow the flavors to meld for 3 to 4 hours in the refrigerator.

1 (8 ounce) package spinach and cheese tortellini
1 (8 ounce) package cheese tortellini
2 tablespoons olive oil
1 (8 ounce) package snow peas, trimmed
1 (4 ounce) package mushrooms, sliced
2 medium carrots, thinly sliced
2 green onions, cut into 2-inch pieces
1 large clove garlic, minced
½ teaspoon salt
1 cup light cream
1 (4 ounce) container crumbled Gorgonzola cheese, divided
¼ cup butter
freshly ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook both kinds of tortellini in the boiling water until they float, 3 to 5 minutes. Drain, return to the pot, and keep warm.
  • Heat olive oil in a large skillet over high heat. Cook and stir snow peas, mushrooms, carrots, green onions, garlic, and salt until vegetables are tender-crisp, about 3 minutes. Pour vegetable mixture into the pot with the cooked tortellini and toss.
  • Add cream, 1/2 the Gorgonzola cheese, butter, and pepper to the pot with the pasta mixture. Cook over medium heat until heated through and cheese has melted, about 5 minutes. Sprinkle remaining Gorgonzola cheese on top and serve immediately.

Easy Crab Tortellini image

Here's a super easy, super simple method for making stuffed pasta using wonton wrappers. If you'd rather call these crab wontons or crab dumplings (or even cheater tortellini!), go ahead. No matter what you call them, this is definitely something you want in your bag of culinary tricks. They're loaded with crab and the tortellini shape does a great job of catching and holding on to all the delicious sauce.

7 saltine crackers, finely crushed
1 large egg, beaten
2 tablespoons mascarpone cheese
½ teaspoon Dijon mustard
¼ teaspoon Worcestershire sauce
6 ounces lump crabmeat, very well drained, squeezed dry
6 ounces Dungeness crabmeat, very well drained, squeezed dry
¼ teaspoon seafood seasoning (such as Old Bay®)
salt to taste
1 pinch cayenne pepper
1 tablespoon minced jalapeno pepper
28 (3.5 inch square) wonton wrappers, or as needed
1 ½ cups creme fraiche
1 teaspoon ground paprika
2 teaspoons fresh lemon zest
salt to taste
1 tablespoon chopped fresh dill, or more to taste
1 pinch cayenne pepper

Steps:

  • Crush crackers into a bowl. Add egg, mascarpone cheese, Dijon mustard, and Worcestershire sauce; stir until combined. Let sit until crumbs have absorbed some moisture, about 5 minutes.
  • Add crab meat, seafood seasoning, salt, cayenne pepper, and jalapeno to the cracker mixture; stir until just combined. Wrap and chill in the refrigerator until flavors develop, about 1 hour.
  • Place a wonton wrapper on a work surface to resemble a diamond shape. Wet the top 2 edges with just enough water to moisten. Place 1 tablespoon crab filling right in the center and press to spread it out a bit. Pull the bottom wonton corner up and over the filling, line it up with the top corner to form a triangle, and work your way down the sides, pressing and sealing the wonton edges and pushing out any air. Press your finger right in the center of the long side to create a fold (or bend) in the triangle. Moisten the 2 "wings" and fold around the bend to seal. Repeat to form remaining tortellini.
  • Bring a pot of salted water to a boil.
  • While waiting for water to boil, place creme fraiche in a skillet over medium heat. Add paprika, lemon zest, salt, and a splash of the pasta water. Cook and stir until heated through and just starting to simmer, then turn off the heat and reserve.
  • Add tortellini to the boiling water, giving a gentle stir make sure they don't stick to the bottom. Cook for 1 minute; they may or may not float to the surface. Remove tortellini with a slotted spoon and transfer into the reserved sauce.
  • Turn heat to medium-high and cook, gently stirring and basting, until sauce is heated through and just starts to simmer. Don't overcook or the sauce will reduce too much. Turn off the heat and stir in dill. Serve immediately on warm plates and sprinkle with additional dill and cayenne.

1 tablespoon butter
6 mushrooms, sliced
1 tablespoon garlic
4 ounces heavy cream
salt and pepper
8 ounces tortellini noodles, cooked
4 ounces crabmeat
2 tablespoons gorgonzola cheese

Steps:

  • Heat butter in skillet until it starts to bubble. Sauté mushrooms in butter until they start to brown, approximately 2 minutes. Add garlic and stir; before garlic starts to brown, add cream and salt and pepper. Allow cream to start to reduce so that it begins to thicken. Add tortellini and toss together. Add crab and cheese and heat.

8-12 oz lump crabmeat, cooked*
2 Tablespoons butter
1/2 cup crumbled Gorgonzola cheese
1/2 cup half-and-half, or cream
1/2 cup freshly grated Parmesan cheese, plus more if desired
Salt to taste

Steps:

  • Melt the butter in a 1- or 2-quart saucepan over low heat. While it is melting, put the Gorgonzola in a small bowl and mash it with a fork or potato masher, gradually adding the milk. Don't worry about making it smooth, just make sure it is well-combined. When the butter is melted, add the cheese-milk mixture and continue to cook, stirring and mashing occasionally. 2 Mix crabmeat with the sauce in a large, warm bowl; stir in the Parmesan, then taste for salt and add some if necessary. Serve, passing additional Parmesan at the table if you like. Serve immediately. 3 *If freshly cooked lump crabmeat is not available to you, canned crabmeat can be substituted, but it's simply not as good. If you must substitute, remember with canned crabmeat, price is the best indicator of quality. Don't scrimp here.

6 oz Gorgonzola cheese

1 Tbsp chopped fresh parsley

Steps:

  • Pick over the crabmeat to remove any shell fragment if using fresh crab. Set aside 1/3 of crab for garnish. Cook tortellini as instructed on package. Crumble the cheese. Saute the shallots in butter over low heat until softened. Add wine and cream and bring to boil. Add crumbled cheese and the remaining crab. Reduce the sauce over high heat for 1 minute. Add the tortellini and continue cooking over high heat for another 2 minutes. Season with salt and pepper and transfer to dinner plates. Garnish the tortellini with reserved crab and sprinkle with chopped parsley.
