1 (20 ounce) package refrigerated tortellini
2 pints cherry tomatoes
½ cup pesto
toothpicks

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini. Cook uncovered, stirring occasionally, until the tortellini float to the top, 5 to 6 minutes. Drain and rinse with cold water.
  • Place tortellini, cherry tomatoes, and pesto in a large bowl; toss until evenly coated.
  • Skewer one tortellini and one tomato on each toothpick. Arrange on a tray. Keep refrigerated until serving.

12 uncooked refrigerated or dried cheese-filled tomato- or spinach-flavor tortellini
1/4 cup drained roasted red bell peppers (from 7-ounce jar)
1/4 cup grated Parmesan cheese
3 tablespoons Italian dressing
4-ounce piece salami, cut into twelve 1-inch wedges
2-ounce piece mozzarella cheese, cut into twelve 3/4-inch cubes
12 pieces marinated artichoke hearts (from two 6- to 7-ounce jars), drained
12 cherry tomatoes

Steps:

  • Cook and drain tortellini as directed on package; cool.
  • Place bell peppers in blender. Cover and blend until smooth. Add Parmesan cheese and Italian dressing. Cover and blend until smooth. Pour mixture into large plastic or glass bowl. Stir in tortellini, salami, mozzarella cheese, artichoke hearts and tomatoes.
  • Thread tortellini, mozzarella cheese, salami, artichoke hearts and tomatoes alternately on each of twelve 4- to 6-inch skewers. Serve immediately, or cover and refrigerate up to 24 hours.

4 ounces cheese tortellini or tortelloni
1 tablespoon red wine vinegar
2 tablespoons extra-virgin olive oil
1 clove garlic, pressed or smashed
Kosher salt and freshly ground black pepper
1/4 cup grape tomatoes
1/4 cup medium pitted California black olives
1/2 cup halved or quartered small bocconcini mozzarella
Skewers
Marinara sauce or pesto sauce for dipping, optional

Steps:

  • Cook pasta according to package directions. Drain and rinse pasta under cold water to stop cooking.
  • Meanwhile, whisk together the vinegar, olive oil and smashed garlic in a medium bowl. Season with salt and pepper, to taste, and toss with the tomatoes, olives, cheese and cooked pasta. Skewer everything, alternating as desired. Place marinara sauce or pesto in sealed containers. Pack in a lunch sack with an ice pack and send off to school.

2 tablespoons jarred pesto
2 teaspoons red wine vinegar
2 packages spinach tortellini, cooked and cooled
2 pints cherry tomatoes
12 ounces fresh mozzarella, cubed
1/4 cup minced fresh parsley

Steps:

  • Mix together the olive oil, pesto and vinegar in a bowl.
  • On small skewers, thread 1 tortellini, 1 cherry tomato and 1 mozzarella cube per skewer. Lay the skewers on a platter and lightly drizzle the dressing over them with a spoon.
  • Serve immediately or refrigerate. Sprinkle on the minced parsley just before serving.

40 pimiento-stuffed olives
40 large pitted ripe olives
3/4 cup Italian salad dressing
40 thin slices pepperoni
20 thin slices hard salami, halved

Steps:

  • Cook tortellini according to package directions; drain and rinse in cold water. In a large bowl, combine the tortellini, olives and salad dressing. Toss to coat; cover and refrigerate for 4 hours or overnight., Drain mixture, discarding marinade. For each appetizer, thread a stuffed olive, a folded pepperoni slice, a tortellini, a folded salami piece and a ripe olive on a toothpick or short skewer.

This recipe came from Betty Crocker fun summer appetizers. These are a perfect appetizers for anything really. I made them for easter and everyone loved them. You can put them on 6 inch bamboo skewers or rosemary sprigs. I also added mozzerella cheese and green and black olives in the dressing mix so I used a bit more dressing. You can use bottled dressing or make your own marinade of you would like.

1/2 cup reduced-fat Italian salad dressing
12 small whole mushrooms
12 small cherry tomatoes
12 skewers

  • Cook and drain tortellini as directed on package. Cool 15 minutes.
  • Place dressing in shallow dish. Stir in tortellini, mushrooms, tomatoes and whatever else you choose to use. Cover; refrigerate 1 to 2 hours, stirring once to coat.
