- Preheat oven to 350°. Drain artichoke hearts, reserving 1/4 cup of juices. Coarsely chop; combine with chicken, tortellini, mayonnaise, 1 cup cheese and reserved artichoke liquid. Place artichoke mixture in a greased 13x9-in. baking dish; sprinkle with remaining cheese. Bake until bubbly and starting to brown, about 30 minutes. If desired, garnish with basil.

This easy pasta bake requires only four ingredients-and two of them are cheese! As au gratin dishes go, it's one of the easiest and tastiest around.

- Heat oven to 350ºF.
- Cook tortellini as directed on package. Meanwhile, combine mozzarella and Parmesan cheeses; reserve 1/2 cup cheese for later use.
- Drain pasta; place in large bowl. Add pasta sauce and remaining cheese mixture; mix lightly. Spoon into 11x7-inch baking dish sprayed with cooking spray; top with reserved cheese mixture.
- Bake 30 to 35 min. or until pasta mixture is heated through and mozzarella is melted.

Steps:
- In a bowl combine all ingredients, except for the pasta and egg wash.
- Using the fresh pasta recipe, roll out your dough either by hand or by machine. Cut into 3 or 4- inch rounds with a round cookie cutter. Place 1/4 teaspoon into the center of each round. Brush egg wash (on the bottom half of the round and fold over to seal. Fold back around your finger and turn down the edge to form a tortellini.
- In half a gallon of rapidly boiling salted water add the tortellini in batches. Cook for 3 to 5 minutes, or until they float to the surface. Remove to a strainer to drain.
- ;
- By Hand: On a clean surface make a well with the flour. In a measuring cup mix the eggs, water and oil and salt. Pour the wet mixture slowly into the flour and mix with your 2 fingers until all of the wet is incorporated. Do not force the dough to take all of the flour. If you are going to use a pasta machine to roll out the dough you may at this point form the dough into a disk and cover with plastic wrap. Place in the refrigerator for 1 hour to rest. If you going to roll this by hand you should knead the dough on a floured work surface for 8 to 10 minutes. .
- In the bowl of your food processor combine the flour and salt and pulse 2 to 3 times. In a liquid measuring cup whisk the eggs, water and oil. While pulsing the machine pour this mixture in a continuous stream and continue running the machine until the dough begins to pull away from the sides of the bowl. Follow directions above for hand rolling or machine. .
- Yield: 4 to 6 servings .

- Cooking time: 3 to 5 minutes in boiling water .

- Place tomatoes into a strainer over a bowl and sprinkle with ½ teaspoon salt and let sit at room temperature while you prepare the rest of the dish.
- Cook bacon until crisp and drain on paper towels. Cut bacon strips into bite sized pieces and set aside. Reserve 2 tablespoons of bacon fat.
- In a medium pot, melt butter over medium heat and add flour. Cook for four minutes stirring often. While this is cooking, heat cream to hot but not scaled either in a small sauce pan or in the microwave.
- Add the hot cream to the butter and flour mixture one third at a time whisking on each third to form a smooth sauce. Add ½ teaspoon of salt, pepper, nutmeg, ½ cup of Parmesan cheese, 3 ounces of the fontina cheese, fresh basil and minced garlic. Stir to combine, heat to hot and remove from heat. Set aside.
