I found this recipe off of a box of Western Family Macaroni & Cheese. It sounded so good that I had to make it, and when I did, my family loved it. This is also the type of recipe that kids will love and ask for over and over. Personally, I like the ease of how it comes together and also any leftovers the next night are great....

7 1/4 oz box of macaroni & cheese
1 lb ground beef
1/2 c sliced celery
1/4 c chopped onion
2 c whole kernel corn, drained
8 oz can tomato paste
1/2 c water
1 tsp salt
1/8 tsp pepper
1/2 c grated parmesan cheese

Steps:

  • 1. Gather all of your ingredients.
  • 2. Prepare Macaroni and Cheese Dinner as directed on box.
  • 3. Brown meat, celery and onion.
  • 4. Stir in corn, tomato paste, water, salt and pepper.
  • 5. Add macaroni and cheese and mix well.
  • 6. Pour into a two quart casserole and sprinkle with Parmesan Cheese on top. Bake uncovered at 350 degrees for 15 to 20 minutes or until cheese is bubbly. Can also be left in iron skillet and baked. This is how I now do it thanks to Cassie's suggestion!
  • 7. Serve and enjoy!

CLASSIC BAKED MACARONI AND CHEESE

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

Number Of Ingredients 14

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

My version of Macaroni and Cheese is adapted from a very old recipe. This is comfort food at its best and has a great cheesy flavor with a hint of onion and a nice buttered crumb topping. Enjoy! Photos are my own

Number Of Ingredients 10

2 cups cooked small shell pasta
1 can campbell's cheese soup
1/4 onion, chopped fine
1/2 cup milk
3/4 cup fresh grated sharp cheddar cheese
1/2 teaspoon corn starch
1/4 teaspoon nutmeg
salt and white pepper to taste
4 tablespoons kroger plain bread crumbs, or your choice
2 tablespoons butter

Steps:

  • 1. Cook the pasta according to package directions. I recommend small shell pasta because cheese gets inside the shells and tastes good. When the pasta is just tender, drain. Don't overcook.
  • 2. Melt butter in the pan. Add the onion and saute until tender. Reserve a couple teaspoons of the butter from the pan for the crumb topping. Add the milk to the butter, then add cornstarch, nutmeg, salt and pepper and whisk until smooth. Add the cheese soup. Whisk again. Remove from heat.
  • 3. Pour the hot cooked and drained pasta shells into a greased glass baking dish and add the grated sharp cheddar cheese. Stir.
  • 4. Then pour the hot pan mixture over the shells and gently mix until combined.
  • 5. Make the topping: Put the 4 tablespoons bread crumbs in a small bowl and add the reserved 2 teaspoons of butter and mix well. Sprinkle over the macaroni and cheese and bake in a 375 degree oven for 30 minutes or until the topping is brown.

1 (14 ounce) package macaroni and cheese
1 pound extra-lean ground beef
1 (10 ounce) can canned whole kernel corn
1 (6 ounce) can tomato paste
1 (10 ounce) can tomato sauce
1 small onion, chopped
3 tablespoons grated Parmesan cheese

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Prepare the macaroni and cheese according to the directions on the package.
  • Brown the ground beef and onion in a skillet over medium heat until the meat is no longer pink. Drain excess grease.
  • In a 2 quart casserole dish, combine the macaroni and cheese, ground beef, onion, tomato paste, tomato sauce, and corn with its liquid. Mix well.
  • Bake for 20 to 25 minutes in the preheated oven, or until heated through. Top with grated Parmesan cheese, if desired.

There is macaroni and cheese, and then there is special occasion macaroni and cheese like this one. Unlike most recipes, which start with a roux, this one begins with a milk-and-egg base, which gives the dish an incredibly rich, silky taste. It's adapted from Millie Peartree, the owner of Millie Peartree Fish Fry & Soul Food restaurant in the Bronx, who has been making this dish since she was a little girl. The recipe was passed down in her family for generations, but because of the generous amount of cheese used, the dish was only made for events like Christmas and Thanksgiving. Extra-sharp Cheddar adds tartness and a layer of Colby Jack creates a gooey, molten center. If you can't find a Colby Jack blend, shredded mozzarella or a Mexican-style blend will work in its place.

1 pound elbow macaroni
2 cups whole milk
2 large eggs
4 cups shredded extra-sharp Cheddar (about 16 ounces)
1/2 cup unsalted butter (1 stick), melted
2 cups shredded Colby Jack (about 8 ounces)

Steps:

  • Heat oven to 350 degrees. Bring a large pot of generously salted water to a boil. Add macaroni and cook according to package directions until a little under al dente, about 4 minutes. Transfer to a colander and rinse under cold water to stop cooking. Set aside.
  • In a large bowl, whisk milk and eggs. Add cooked macaroni, 2 cups extra-sharp Cheddar, melted butter, 1 1/2 teaspoons salt and 1/2 teaspoon pepper, and stir until well combined.
  • Add half the macaroni mixture to a 9-by-13-inch baking dish in an even layer. Sprinkle 1 1/2 cups Colby Jack evenly on top. Spread the remaining macaroni mixture on top in an even layer. Cover with aluminum foil, transfer to the middle rack of the oven and bake for 30 minutes.
  • Remove from oven. Carefully remove and discard the aluminum foil. Top the macaroni mixture with the remaining 2 cups Cheddar and 1/2 cup Colby Jack. Broil on top rack until cheese is browned in spots, 3 to 5 minutes. (The broiled cheese can go from golden to burnt fairly quickly, so keep a close eye on it.)
  • Remove from oven and let cool until the macaroni and cheese is fully set, 10 to 15 minutes. (The mixture may first appear jiggly, but it will firm up as it cools.) Serve warm.

VERY bachelor and college-student friendly!:) I used to absolutley LOVE this dish when I was younger (before I decided to forgo the red-meat thing), but my family still enjoys it often.(I'm thinking of trying it with chicken?!?!)
