This light and fresh supper will hit the spot on a hot summer night-which also happens to be when the best tomatoes are in season. This easy recipe calls for just five ingredients (plus salt and pepper) and doesn't require you to heat up the kitchen, thanks to a rotisserie chicken. Choose large, meaty beefsteak tomatoes for this dish; they can hold enough chicken salad to make a satisfying meal. It's okay if they aren't perfectly round (many beefsteaks and heirloom varieties have unusual shapes) as long as they are large and flat-bottomed. Serve the stuffed tomatoes with crusty bread and mixed greens for a refreshingly simple meal.

6 beefsteak tomatoes, (1/2 to 3/4 lb. each)
4 cups chopped rotisserie chicken
1 1/2 cups chopped tricolor bell pepper mix (from 1 [8-oz.] container)
3/4 cup mayonnaise
2 tablespoons fresh lemon juice (from 1 lemon)
1 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Remove and discard tops of tomatoes; then core and seed them.
  • Stir together next 6 ingredients in a bowl until combined. Spoon about 1/2 cup mixture into each cored tomato. (Cover and refrigerate leftover chicken salad up to 5 days.)

6 large tomatoes
2 cups cooked and cubed chicken
1/2 cup minced red bell pepper
1/2 cup drained corn
1 1/2 tablespoon minced red onion
1/4 cup plus 2 tablespoons olive oil
1/4 cup fresh lemon juice
1 tablespoon minced fresh parsley
1 tablespoon dijon mustard
1 tablespoon mayonnaise
1 teaspoon ground black pepper
1/2 teaspoon salt
or spinach leaves green leaf lettuce

Steps:

  • Cut 1/2 inch off top of each tomato. Scoop out pulp from tomatoes. Turn tomatoes upside down on paper towels to drain.
  • In a medium bowl, combine chicken, bell pepper, corn and onion.
  • In a small bowl, whisk together olive oil and next 6 ingredients. Pour over chicken, tossing gently to coat.
  • Line tomatoes with leaf lettuce or spinach leaves. Spoon chicken salad evenly in the tomatoes. Refrigerate or serve immediately.

4 medium tomatoes
2-3/4 cups cubed rotisserie chicken
1/2 cup shredded carrot
1/4 cup chopped green onions
1/3 cup mayonnaise
1/3 cup ranch salad dressing
1/4 cup chopped walnuts

Steps:

  • Cut a thin slice off the top of each tomato. Scoop out pulp, leaving a 1/2-in. shell. Invert tomatoes onto paper towels to drain. , In a small bowl, combine the chicken, carrot and onions. Combine mayonnaise and ranch dressing; stir into chicken mixture. Spoon into tomatoes. Sprinkle with walnuts.

2 (8-ounce) boneless, skinless chicken breasts
Water
16 cherry tomatoes
2 Granny Smith apples
1 teaspoon lemon juice, to keep apples from turning brown
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1/2 teaspoon ground cinnamon
3 tablespoons mayonnaise
2 teaspoons chopped fresh parsley leaves
16 very small leaves rosemary, for garnish

Steps:

  • Poach chicken in water and set aside to cool. Carefully slice off a small amount of the top of tomatoes (be careful not to remove too much) and scoop out seeds. (A 1/4 teaspoon measuring spoon works well for this procedure.) Peel apples, remove core and chop fine, and coat with lemon juice. Chop cooled chicken fine, season with salt and pepper and cinnamon, and stir in mayonnaise and chopped parsley, mixing well. Spoon chicken salad into tomatoes and garnish with the rosemary leaves.

3/4 cup wheat bulgur, available in rice section of your market
1 cup boiling water
2 ripe lemons, juiced
1 cup parsley leaves, 1 bunch, chopped
1/2 cup mint leaves, 1/2 bunch, chopped
4 scallions, thinly sliced
1 plum tomato, seeded and diced
2 tablespoons extra-virgin olive oil, 2 turns of the bowl in a slow stream
Salt and freshly ground black pepper
4 large vine ripe tomatoes or beefsteak tomatoes

Steps:

  • In a bowl, cover bulgar with boiling water and stir. Cover the bowl place it in the refrigerator or counter top. Let the bulgar stand 20 minutes to soften. Add lemon juice, parsley, mint, scallions, plum tomato to the bulgar and toss to combine. Dress the salad with 2 tablespoons extra-virgin olive oil, salt and pepper, to your taste.
  • To serve, cut tomatoes into quarters, but do not allow the knife to go all the way through the tomato. Section the tomatoes, but leave the skin in tact on the bottom. Open the tomato up to resemble an open flower. Season the tomatos with salt and pepper and pile a generous amount of tabbouleh salad on top of the tomato, allowing the salad to spill down and over the wedges of tomato on to the plate.

Baked Tomatoes Stuffed With Salmon, Garlic & Capers image

I was looking for different recipes to use all the tomatoes this year from my garden and found this one. It's great but they are not good reheated.

1 tablespoon capers, preferably packed in salt
1 lb salmon
3 1/2 tablespoons extra virgin olive oil
1 tablespoon chopped flat-leaf Italian parsley
1 teaspoon very finely chopped garlic or 1 teaspoon pressed garlic
2 tablespoons unflavored fine dry breadcrumbs
salt
black pepper, ground fresh
2 large firm ripe tomatoes, weighing approximately 3/4 pound each

Steps:

  • Drain the capers if packed in vinegar; soak, rinse, and drain if packed in salt.
  • Chop them fine.
  • Turn the oven on to 400.
  • Remove the salmon's skin, any loose membranes, and carefully pick out all bones.
  • Cut the fish into very small diced pieces and put in a bowl together with 2 1/2 tablespoons of olive oil, the chopped parsley, garlic, capers, 1 tablespoon of bread crumbs, salt and several grindings of black pepper.
  • Toss thoroughly.
  • Wash the tomatoes, cut them horizontally in half, and scoop out all the seeds and the centers to make a cup-like hollow.
  • Pat the inside of the tomatoes with a paper towel to soak up excess juice, then stuff them with the salmon mixture, pressing it down lightly as you do so.
  • There should be enough to form a mound.
  • Sprinkle the tops with the remaining bread crumbs and drizzle with remaining olive oil, holding back a few drops of the olive oil to grease the bottom of a baking pan.
  • Place the tomatoes on the baking pan and bake in the upper level of the preheated oven for 30-35 minutes or until the salmon stuffing has formed a light golden crust.
  • Serve not piping hot, but lukewarm.
  • They are also good later, at room temperature.

This has to be the most requested recipe in my way-too-vast collection. It comes from Chiffonade Chef on the FC site, and she submitted it to Gourmet magazine some years ago. It was accepted and printed almost immediately. It's so easy, and so tasty, you will see why.

1/3 cup barbecue sauce (preferably Kansas City style-Sweet)
1/3 cup mayonnaise
1 canned chipotle chile in adobo (note, that is one chile, not one can of chiles)
2 lbs leftover bbq chicken or 2 lbs plain grilled chicken
1 small red onion
1 red bell pepper
1/2 cup fresh cilantro leaves

Steps:

  • In a large bowl, whisk together BBQ sauce and mayo.
  • Finely chop chipotle and whisk into dressing.
  • Discard bones from chicken and cut meat into 1/2 inch pieces.
  • Finely chop enough onion to measure 1/3 cup.
  • Finely chop bell pepper and cilantro and add to dressing with chicken and onion.
  • Combine well.
  • Season salad with salt& pepper.
  • Serve in lettuce cups with a nice crusty baguette.
