TOMATO AND ZUCCHINI MELANGE



Tomato and Zucchini Melange image

A nice side dish with practically no fat or calories that will go with any meal except a tomato-based one. If you like, you can add diced bell peppers to this dish too. Serve hot in a small dish.

2 plum tomatoes, halved and cut into 1/4 inch slices
1 large zucchini, sliced
3 tablespoons salsa
3 tablespoons water
½ teaspoon dried oregano
¼ teaspoon dried basil
salt and pepper to taste

Steps:

  • In a small saucepan, mix together tomatoes, zucchini, salsa, water, oregano, basil, salt, and pepper. Mix in bell peppers if desired. Bring to a boil over medium heat, then reduce to a simmer. Simmer 3 to 4 minutes, stirring frequently.

This is Day 15: Lunch, on the 21 Day Wonder Diet. You can make the filling the night before, and assemble the sandwich in the morning. The baby spinach will stop the bread going soggy. This lunch is to be followed by an afternoon snack of 1 small apple.

185 g tuna in water, drained and flaked
200 g celery, chopped finely
2 tablespoons low-fat ricotta cheese
1 tablespoon fresh dill, coarsely chopped
2 teaspoons baby capers, rinsed and drained
4 slices rye bread
20 g baby spinach leaves

Steps:

  • Combine tuna, celery, onion, dill and capers in medium bowl.
  • Divide half the spinach between two bread slices; top with tuna mixture, then remaining spinach and bread.

This is Day 20: Breakfast, on the 21 Day Wonder Diet. This recipe makes 6 muffins. You will use the leftovers as a snack tomorrow! The muffins also freeze really well, and can be defrosted/heated in the microwave. This breakfast is to be followed by a mid-morning snack of 1 small pear.

cooking spray
1/2 cup bran and cranberry muesli, Bran & Cranberry Muesli (21 Day Wonder Diet: Day 4)
1 teaspoon vegetable oil
1/2 cup skim-milk natural yogurt
1 egg
2/3 cup self-rising flour
2 teaspoons orange rind, finely grated
1/4 teaspoon mixed spice
1 tablespoon demerara sugar
1 tablespoon low-fat ricotta

Steps:

  • Preheat oven to 180°C Spray 6 muffin pan holes with cooking oil, or line with paper cases.
  • Combine muesli, oil, yogurt, egg, flour, rind and spice in medium bowl. Mix with fork.
  • Divide mixture among pan holes; sprinkle with sugar. Bake about 25 minutes.
  • Serve 2 muffins each with cheese.

125 g cherry tomatoes
1 egg
3 egg whites
1/3 cup low fat cottage cheese
1 garlic clove, crushed
1 small zucchini, grated coarsely
2 tablespoons coarsely chopped fresh oregano leaves
30 g baby spinach leaves

Steps:

  • Preheat oven to 200'C/180'c fan-forced. Line an 8cm x 21cm loaf pan with a strip of baking paper.
  • Place tomatoes in pan; roast for 10 minutes.
  • Meanwhile, combine egg, egg whites, cheese and garlic in a medium jug.
  • Remove pan from oven; reduce temperature to 160'C/140'C fan-forced.
  • Sprinkle tomatoes with zucchini and oregano; pour egg mixture over the top. Bake for 25 minutes, or until set.
  • Serve slice with spinach leaves.
