OLD-FASHIONED TOMATO GRAVY
My mother-in-law gave me this tomato gravy recipe. It's her very favorite breakfast. We-my husband, our two sons and I-also enjoy it for a light supper. Especially on a cold day, it's great with warm peach cobbler or bread pudding. -Laurie Fisher, Greeley, Colorado

Steps:
- In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan. Add onion to drippings; cook and stir over medium-high heat until tender, 3-5 minutes. Stir in flour, salt and pepper until blended; cook and stir over low heat until mixture is golden brown (do not burn). Gradually whisk in tomato juice. Stir in tomatoes. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally. Stir in bacon. Serve over biscuits.

- Combine water, olive oil, chives, thyme, rosemary, basil, parsley, oregano, tomato paste, cornstarch, vegetable base, garlic, salt, and pepper in a blender. Blend until smooth.
- Pour mixture into a saucepan and bring to a rapid boil for 1 minute.

EASY TOMATO GRAVY
Steps:
- Heat tomatoes (in iron skillet where you've cooked breakfast meat) over medium heat, scraping the bottom of the pan.
- Stir flour into stock and whisk until there are no lumps.
- Stir flour/stock mixture into hot tomatoes, whisking as you stir.
- Bring to a boil and stir until thickened.
- Reduce heat to simmer.
- Stir in salt and pepper.
- Simmer for at least 5-10 minutes.
- Tomato Gravy is best served over 3 Ingredient Biscuits.

ITALIAN TOMATO GRAVY
Steps:
- Heat olive oil in a large saucepan over low heat. Saute the garlic, red pepper flakes, and herbs for 2 minutes until the herbs are fragrant and garlic is golden (but not overly brown.) Raise the heat to medium, add onion and carrot; cook for 5 minutes until they breakdown and are soft. Deglaze with red wine and reduce to evaporate the alcohol. Hand crush the canned tomatoes and add to the pot, along with its liquid. Add a pinch of sugar to cut down on the acidity from the tomatoes; season with salt and pepper. Let simmer for 30 minutes, uncovered.
TOMATO HERB GRAVY
Thanksgiving gravy is traditionally made from roast turkey drippings. Use this recipe when barbecuing a turkey because there are no drippings.

- In a medium saucepan set over low heat, warm chicken stock. Meanwhile, place butter in a small saucepan over medium heat. Add shallots, and saute until translucent, about 3 minutes. Add flour, and stir constantly with a wooden spoon, scraping cooked-on bits from bottom of pan, until mixture becomes light brown but does not burn.
- Slowly add warm chicken stock to the saucepan, and stir constantly until mixture thickens, 8 to 10 minutes. Add tomatoes and tomato juice, sage, marjoram, salt, and pepper. Reduce to a gentle simmer, and cook until thickened, about 25 minutes more. Serve immediately.
VEGETARIAN GRAVY
Make this vegetarian gravy ahead of time and keep in the freezer to pair with veggie sausages, or meat. Great for a tasty, fuss-free supper

- Fry the veg and herbs in the butter for 10-12 mins until the vegetables start to brown. Scatter over the sugar and continue to cook until sticky and caramelised.
- Stir in the flour until sandy, then add the Marmite, if using, tomato purée and vinegar. Pour over the stock, then simmer everything together until you have a thickened sauce.
- Sieve, then add soy sauce to season and colour. Use straightaway or cool and freeze.

- Cook the bacon in a large, deep skillet over medium-high heat until evenly browned, about 10 minutes. Reserving the drippings in the pan, remove the bacon to a paper towel-lined plate to drain.
- Stir the butter and flour into the bacon drippings. Scrape the browned bits of food off of the bottom of the pan with a wooden spoon; cook and stir together until beginning to thicken, about 3 minutes.
