DEEP DARK CHOCOLATE FUDGE COOKIES
Chocolate! Chocolate! Chocolate! These are full of chocolate and very decadent. Not for the diet concious but if you love chocolate you will definetly love these cookies!

Steps:
- Preheat oven to 325 degrees.
- In a saucepan melt together the semi-sweet and unsweetened baking chocolates over low heat.
- In a bowl sift together flour, cocoa, baking soda and salt.
- In a separate bowl cream together butter and sugar for 1 minute or until smooth.
- Add eggs, one at a time, until smooth, beating well after each addition.
- Add vanilla and melted chocolate and mix until smooth.
- Carefully add dry ingredients to butter/sugar mixture and mix until well blended.
- Carefully fold in chocolate chips until blended.
- Drop by 2 tbsps (each cookie consists of 2 tbsps dough) onto ungreased nonstick cookie sheet.
- Bake at 325 degrees for 18-22 minutes.

BEST DAMN CHOCOLATE FUDGE COOKIES
These cookies are extremely chocolaty, fudgy, ooey gooey on the inside and crispy on the outside!

Steps:
- In a medium sized bowl, mix flour, cocoa powder and salt. Whisk it all together and set aside.
- In a microwave safe bowl, add butter and 1/2 of the chocolate chips or chunks. Microwave in 30 second intervals until everything is melted.
- In a large bowl, add eggs, white sugar, brown sugar and vanilla extract. Mix with a hand mixer or stand mixer until fully incorporated. Then add chocolate mixture and continue to mix together.
- Add flour mixture and continue to mix for 3 minutes until everything is well combined. Gently fold in remaining chunks/chips. Place bowl with batter in refrigerator for at least 30 minutes to chill and thicken (important).
- Preheat oven to 350° and line a cookie sheet with parchment paper.
- Scoop out batter and roll into balls (wet hands first!) about 1.5″ in diameter. Place on parchment at least 3 inches apart. With hands still wet, press batter down to about 1/4″ thick. Add additional chips or chunks to tops of cookies.
- Bake in preheated oven for 12 minutes. Remove from oven and let cool completely before removing from pan.
FOOLPROOF DARK CHOCOLATE FUDGE
I make this at Christmas, but why not try it any time of year. Summer is not the best time for fudge, especially if it is hot, but this one seems to turn out whenever...enjoy!

- Over low heat, melt the chips in the sweetened condensed milk.
- Remove from the heat and stir in the nuts and vanilla.
- Spread evenly into an aluminum foil lined 8x8 or 9x9 pan.
- Chill and pop out of pan.
- Peel off foil and cut into 1-inch squares.
