Note that this is the classic recipe, invented before chocolate chips were available, and so it uses a cut chocolate bar instead.

1/2 cup brown sugar
1/2 cup white sugar
1/2 cup butter or other shortening
1 egg
1-1/2 cups sifted flour
1/2 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons hot water
1/2 teaspoon vanilla
7 ounce bar semisweet chocolate
1/2 cup chopped walnuts

Steps:

  • Important: Cut each small square of semisweet chocolate into four pieces.
  • Cream butter or other shortening and add sugars and beaten egg.
  • Dissolve soda in the hot water and mix alternately with the flour sifted with the salt.
  • Lastly, add the chopped nuts and the pieces of semisweet chocolate.
  • Flavor with the vanilla and drop by half teaspoons on a greased cookie sheet.
  • Bake 10 to 12 minutes in a 375 (F) degree Fahrenheit oven.

This is from the re-print of the Toll House 1948 cookbook, originally called Chocolate Crunch Cookies. Ruth Graves Wakefield had some wonderful recipes. This is the latest in my search for her original recipe that was the first chocolate chip cookie.

1 cup butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs, beaten
1 teaspoon baking soda
1 teaspoon hot water
2 1/4 cups flour
1 teaspoon salt
1 cup chopped nuts
12 ounces semisweet chocolate morsels
1 teaspoon vanilla

Steps:

  • Cream butter.
  • Add sugars.
  • Add eggs.
  • Sift flour and salt.
  • Dissolve soda in water and add alternately with sifted flour mixture to butter and sugars.
  • Add nuts and chocolate morsels.
  • Stir in vanilla.
  • Drop by half-teaspoonfuls onto lightly greased cookie sheet.
  • Bake 10-12 minutes at 375°F.

Steps:

  • Preheat oven to 375 degrees F.
  • Combine flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
  • Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

In the 1930s, Ruth Wakefield, the inventor of the chocolate chip cookie, ran the Toll House Inn, a popular restaurant in eastern Massachusetts, with her husband. Using an ice pick, Wakefield broke a semisweet chocolate bar into little bits, mixed them into brown-sugar dough, and the chocolate chip cookie was born. In 1939, she sold Nestlé the rights to reproduce her recipe on its packages (reportedly for only $1) and was hired to write recipes for the company, which supposedly supplied her with free chocolate for life. This recipe is very close to Mrs. Wakefield's original (hers called for a teaspoon of hot water and 1/2-teaspoon-sized cookies), and the one you'll still find on the back of every yellow bag of Nestlé chocolate chips.

1 c butter
3/4 c brown sugar
3/4 c granulated sugar
2 large eggs
1 tsp baking soda in hot water
2 1/4 c sifted flour
1 tsp salt
1 c chopped nuts
2 pkg economy size bars ( 7 oz. ea. ) nestle's semi-sweet chocolate
1 tsp vanilla extract

Steps:

  • 1. Cream butter
  • 2. Add brown sugar, granulated sugar, beaten eggs, and dissolved baking soda mixing alternately with flour and salt.
  • 3. Lastly add chopped nuts and Semi-Sweet Chocolate bars which have been cut in pieces the size of a pea.
  • 4. Flavor with tsp. vanilla extract.
  • 5. Drop by half teaspoons on a greased cookie sheet.
  • 6. Bake 10 to 12 minutes in 375 degree oven.

  • Slice and Bake Cookie Variation
  • Prepare dough as above. Divide in half; wrap in waxed paper. Refrigerate for 1 hour or until firm. Shape each half into 15-inch log; wrap in wax paper. Refrigerate for 30 minutes.
  • Preheat oven to 375° F. Cut into 1/2-inch-thick slices; place on ungreased baking sheets. Bake for 8 to 10 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes about 5 dozen cookies.

  • Dough may be stored in refrigerator for up to 1 week or in freezer for up to 8 weeks.
